Moon Moon Food (雙月食品社) @ Ngee Ann City - Taiwan’s Michelin-approved Restaurant Opens Its First International Outlet in Singapore

I first learned about Moon Moon Food (雙月食品社) through a friend's gift of their Spicy Sesame Noodles, purchased during her trip to Taiwan. I fell in love with the nutty and slightly spicy noodle sauce and was so excited to hear that they were opening their first international outlet in Ngee Ann City!

The Michelin Bib Gourmand recognised restaurant specialises in homely Taiwanese dishes, especially health soups, inspired by the founder's mother's cooking. Located on level 5, its spacious and inviting interior sets the tone for an enjoyable meal.

Shredded Stem Lettuce with Yuzu Vinaigrette 3.8/5

The meal began with the Shredded Stem Lettuce with Yuzu Vinaigrette ($7.80), a tangy, crunchy appetiser with bursts of savoury roe.

For a sweeter option, the Chinese Yam with Osmanthus Plum Sauce ($7.80) offered a mildly fragrant touch.

Taiwanese Snacks 4/5

Exclusive to the Singapore outlet, the Taiwanese Snacks include delights like Salty Crispy Poppers ($10.80), Fried Tempura Bliss ($11.80), and Crispy Prawn Cake with Yuzu Mayo ($14.80). While all were enjoyable, we liked the chicken poppers most for more substantial bites. Do note that the snacks are sold individually, while the portions we had pictured above were a tasting platter of different items.

Diners can create a Braised Platter of three items at the braised items section for $10.80, excluding specific premium options.

We opted for the Braised Egg (+$1.20), Bai Ye Tofu, and Chicken Mid-joint Wing (+$5.80). Each item was well-balanced, offering hearty flavours without overwhelming saltiness. Other options include Bai Ye Tofu, Chicken Gizzard, Pork Ear, Pig Skin, Pork Heart and more.

Peeled Chilli Pepper Chicken Soup 4.5/5

Their health soups were indeed a highlight. Our first choice was one of the restaurant's best sellers among its seven flavours, the Peeled Chilli Pepper Chicken Soup ($18.80). I adored this soup for how clean-tasting it was, with a light sweetness from the generous amount of cabbage used and a perfect touch of spice from the peeled chilli peppers.

Sea Bass Soup with Clam 4/5

The Sea Bass Soup with Clam ($25.80) was also delightful. It featured a tender sea bass fillet and briny clams, though it was slightly less flavourful than the chilli pepper soup. As a soup lover, I wish the bowls came with more soup.

Spicy Sesame Noodle 4.5/5

Next came the dish I most anticipated: the Spicy Sesame Noodle ($13.80). Its thicker and chewier noodles coated in the rich, nutty, slightly spicy sesame sauce surpassed its retail version. Other noodle options include the Shallot Oil Noodle ($12.80), Black Truffle Noodle ($13.80), and Shredded Chicken Vermicelli Soup ($10.80). Retail packs for some of these noodles are conveniently available for purchase at the restaurant.

Glutinous Rice with Mushroom and Pork 4/5

Apart from noodles, rice lovers can look out for their rice-based offerings. The Glutinous Rice with Mushroom and Pork ($8.80) delivered comforting and homely flavours.

We ended with the Taro Toast with Ice Cream ($8.80), a delightful surprise. The toast was fried to a crisp and filled with smooth taro paste, a lovely finish to the meal.

Currently, the restaurant only accepts walk-ins.

Yue Bai (月白) @ Duxton Road - Refined Fujian Heritage Dishes Paired with Portuguese Wines

Yue Bai on Duxton Road has launched a new Summer Menu crafted by Singaporean Chef - Owner Lee Hong Wei for the summer season. Celebrating his Fujian heritage, Yue Bai's new seasonal menu offers a touch of modernity to Fujian dishes from various cities. In addition to the Summer Menu, Yue Bai also introduces its extensive selection of Portuguese wines for wine pairing, the largest collection in a Chinese restaurant in Singapore. These wines, known for their varied and lively notes, complement the refined flavours of Hokkien cuisine without overpowering them.

Appetisers 4.5/5

We began with some appetisers. Tinted in pink, the Roselle Flower-Infused Chinese Yam ($12) was a light and nourishing bite, crunchy with an elevated sweetness. Crisp-Fried Burdock with Sesame Seeds and Spice Powder ($14) was moreish, and the Crisp-Fried Beancurd Skin with Minced Chicken and Water Chestnut ($14), seasoned with Five Spice, boasted a juicy and mouthwatering texture. Made from organic purple rice, the Deep-Fried Organic Purple Rice Cake ($16) carried a nuttier flavour, enriched with XO Sauce, Rice Puff, and Spring Onions. The Lion Mane Mushroom Nuggets with Salted Egg, Curry Leaf, and Bird's Eye Chilli ($18) was a table favourite. The minced and pressed mushrooms created meat-free nuggets with a surprisingly juicy and non-greasy texture. The salted egg and milk powder formed a perfect powdery light coating.

Double-Boiled Night Blooming Cereus 4.5/5

Next, we enjoyed a nourishing Double-Boiled Night Blooming Cereus, Dried Fig, and Duck Breast Soup ($18). The clear broth, featuring Ba Wang Hua (dehydrated Night-Blooming Cereus flower), known for its detoxifying properties, offered a herbaceous taste and sweetness with a comforting deep flavour.

Tong Ann Braised Pork Belly 4/5

The mains showcased timeless Fujian classics, which are relatively labour-intensive and traditionally reserved for special occasions. The Tong Ann Braised Pork Belly ($38) featured a thick cut of pork belly slow-cooked with Dried Oyster, Dried Shrimp, and Chestnut. While the dark and umami sauce was delightful, some parts of the meat were somewhat dry, which was a pity.

Stir-Fried Sweet Potato Cake 4.8/5

One of the highlights was the Stir-Fried Sweet Potato Cake ($32) with Shiitake, Sakura Prawns, and XO Sauce. The dish's smoky and umami flavour made it a crowd-pleaser, and the chewy texture of the sweet potato cake was impressive. Apparently, it hasn't been easy for Chef Lee to create such a texture as the characteristics of our local flours differ from those of China. Chef Lee's effort paid off, making this a must-try!

Hokkien Braised Noodles 4/5

Hokkien Braised Noodles ($35), a native's favourite, is elevated with a Seafood Medley. Braised in an oyster-based stock, the noodles were served with scallops, prawns, and lettuce, topped with minced mushrooms, pork, and fried garlic. The noodles' texture was enjoyable, and their light flavour profile complemented the more robustly flavoured dishes.

Braised Yam, Alkaline Rice Cake 4.5/5

The Braised Yam, Alkaline Rice Cake ($18) is traditionally reserved for Chinese New Year. Chef Lee replaced rice with yam using his grandmother's recipe because of its higher collagen content. The rice cake was tender with a slight hint of alkaline taste, paired perfectly with the tender pieces of yam doused with a highly flavoured sauce.

Braised Chinese Mustard Green 4/5

Braised Chinese Mustard Green, Minced Pork, and Sun-Dried Chinese Mustard ($24) was a simple, homely dish. The lightly poached Chinese mustard was topped with an appetising mixture of minced pork and mei cai.

Jasmine Milk Pudding 5/5

Dessert was impeccable. The wobbly Jasmine Milk Pudding ($12) was aromatic with jasmine floral notes and finished with Xiang Pian Tea to balance the sweetness. We ended the evening with an amazing dessert wine from Portugal, adding a perfect finale to the meal.

After a hiatus, I recently dined at Jia Wei Chinese Restaurant (嘉味) at Grand Mercure Singapore Roxy, and I was delighted to discover that the restaurant's culinary standards remain consistent. Jia Wei offers a unique blend of homely, traditional dishes infused with a modern touch while staying true to its classic roots.

Crispy Local Soft Shell Crab, Ice Plant Ume infused Tomato, Yuzu Dressing 4.2/5

I had previously enjoyed the Crispy Local Soft Shell Crab with Ice Plant ($23), and I was pleased to find that it still featured the refreshing salad dressed in vibrant yuzu dressing. The use of ice plant, not commonly found in Chinese cuisine, provided a delightful combination of crispiness from the soft shell crab with the crunch and refreshment of the ice plant.

The Ah Ma Prawn Hae Chor ($22) was deep-fried to a golden brown. Unlike the usual Hae Chor, which tends to be meaty, this version had a delightful crunchy bite enriched by the sweetness of prawns.

Having tried the Kale Soup on a previous visit, I opted for the Braised Beetroot Soup ($14) this time. The sight of the colourful soup was already appetising, and the addition of sweet corn balanced the earthy profile, resulting in a delicious finish. The beancurd added an extra layer of texture contrast.

The Wok Fried A4 Wagyu Striploin ($68) was thickly cut into cubes, showcasing impressive marbling. It was cooked to perfection—tender and juicy, complemented by asparagus to cut through the richness of the beef.

For a taste of nostalgia, the Jia Wei Ocean Gems Vermicelli ($28) was served in an opeh leaf, a tradition that's somewhat uncommon nowadays. The opeh leaf infused the dish with a subtle aroma. Despite its pale appearance, the dish was bursting with robust flavour from a variety of seafood.

A must-try dessert is the Chilled Homemade Coconut Pudding with Vanilla Ice Cream ($16). The coconut pudding is crafted from fresh coconut water, resulting in an extremely light, smooth, and refreshing treat. Served with vanilla ice cream and lychee pops, it's a delightful conclusion to the meal.

Occupying the former premises of Crystal Jade Dining IN, the restaurant has reopened as Crystal Jade Pavilion, the restaurant group's third fine-dining brand. It is located on level one at Vivocity, facing the picturesque backdrop of the waterway and Sentosa island.

We started with a couple of appetisers such as the Chilled Fresh Lily Bulb and Cordyceps Flower with King Oyster Mushroom ($13.80), Chilled Tomatoes with Roselle Plum ($10), Chilled Homemade Tofu with Scallop, Bonito Flakes and Perilla Leaf ($18.80) and Deep-fried Mushrooms and Corn with Salted Egg Yolk ($12.80). I can't put my finger on my favourite, because all of them are deliciously good.

Poached Scotland Bamboo Surf Clam in Prawn Broth 4.8/5

The Poached Scotland Bamboo Surf Clam in Prawn Broth ($26.80 per pax) is a unique soup offering if you are not looking for something different. The robust prawn broth is poured tableside into the bowl with fresh bamboo clam pieces, which are instantly cooked. Diners can choose to add condiments like julienne ginger, black fungus, coriander and deep-fried dough fritters to enjoy the soup.

Pan-fried Sliced Duck and Foie Gras with Crepe 4/5

The Pan-fried Sliced Duck and Foie Gras with Crepe ($18.80 per pax) is eaten like your Peking Duck. However, the version here has more textures, coming from the meaty slice of crispy-skin roast duck, pan-fried foie gras and crispy fried beancurd skin. To eat, wrap them up in a homemade crepe with julienne tomatoes, leeks, cucumber and refreshing butterhead lettuce.

Pan-fried Threadfin with Supreme Soya Sauce 4/5

Live seafood is available at Crystal Jade Pavilion too. A recommendation is their Pan-fried Threadfin with Supreme Soya Sauce ($58.80 for 600-700g). The firm and moist fish is deep-fried and then simmered in a superior soya sauce. However, diners must be careful as it has a lot of bones.

Great with a bowl of rice is the Fresh Chinese Yam with Sea Cucumber in Fragrant Spicy Sauce in Claypot ($42.80). It is a treasure pot of crunchy Chinese yam and spongy Australia sea cucumber in a tongue-tingling gravy.

The winsome Braised Duo Vermicelli with Pearl Abalone & Pork Belly in Abalone Sauce ($33.80) is a must-try. It combines fried beehoon and tang hoon coated in a braising liquid enriched with pork belly and abalone sauce.

Brimming with quality ingredients such as peach gum, white fungus, ginkgo, dried longans, and lotus seeds is the Cheng Tng Sweet Soup with Six Treasures and Golden Luo Han Guo in Whole Fresh Coconut ($13.80 per pax). A light and refreshing dessert for a sweet finish.
