Usher in an abundant and charming Year of the Rat at Jade Restaurant at The Fullerton Hotel with exquisite dishes that honour tradition while embracing the contemporary. Chinese Executive Chef Leong has created an ensemble of prosperous feasts from 06 January to 08 February 2020, paying tribute to the first animal of the Chinese zodiac.

Gold Rush Salmon Yu Sheng

This year Chef Leong has come up with the Special Edition Gold Rush Salmon Yu Sheng ($388++). The yu sheng is arranged in a striking image of a rat treasuring a traditional gold coin, painstakingly crafted from white, green and pink radish strips. What surprises me is the cranberry cheese which complements the champagne jelly and the tangy-sweet honey pineapple dressing excellently. Three days advance order is required for this special edition gold rush salmon yu sheng.

Mini Pot of Abundance

Instead of a huge pot of pen cai, this is served in an individual pot covered in parchment paper to keep the essence locked it while cooking. In the Mini Pot of Abundance ($58++ per pax), diners will get to indulge in premium ingredients such as Braised Abalone, Fish Maw, Sea Cucumber, Chinese Cabbage, Flower Mushrooms, Roasted Garlic, Stewed Pork Trotter, Deep-fried Pork Ball and Yam.

Full of Luck Deep-fried Seabass

Art on the plate is the Full of Luck Deep-fried Seabass ($280++). The fish is sliced in crisscrossed section, then deep-fried in hot oil to an attractive golden crisp. Bring this dish together is the sweet peach sauce, which adds an auspicious touch that signifies longevity and good health. This needs to be pre-order a day in advance.

Wok-fried Boston Lobster with Leek and Preserved Meat

A delightful combination is the Wok-fried Boston Lobster with Leek and Preserved Meat ($88++ per 700g). Boston Lobster is usually served with noodles or eaten with baked cheese. Embracing the Lunar New Year celebration, Chef Leong has wok-fried the Boston lobster together with leek and preserved meat; traditional ingredients seen during Chinese New Year. By doing so, the preserved meat gives the succulent lobster meat an extra layer of aroma, elevating the enjoyment.

Hot Stone Silver Needles Noodles with Truffle Meat Sauce

The Hot Stone Silver Needles Noodles with Truffle Meat Sauce ($38++ per portion) is an elevated execution of the Zichar Claypot Mee Tai Mak dish. The deluxe version uses both fresh truffle and truffle oil together with a flavourful pork braise. You may wonder the choice of silver needles for the noodle? This is because the rice flour noodle is known colloquially as 'rat tails' from its look and shape.

Hot Sweet Soup with Snow Lotus, Honey Dates, Pear and Tang Yuan

Wrapping up the meal is the Hot Sweet Soup with Snow Lotus, Honey Dates, Pear and Tang Yuan ($18 per portion). This traditional hot dessert soup brings together nutrient and health rich ingredients, simmered together to soothe the stomach after a rich meal.

Available at Min Jiang Goodwood Park Hotel for dine-in customers is the Prosperity Fa Cai Yu Sheng ($168++). The yusheng comes with a beautiful painting of eight pigs enjoying a stroll, illustrated by Master Chef Chan Hwan Kee. The Yusheng comprises of raw salmon slices, abalones, bak kwa, pickled radish, medley of crisp vegetables, pomelo, sesame seeds and strips of fried sweet potatoes. This is all hold together by the homemade dressing concoction consists of calamansi juice, plum sauce, lemongrass and strawberry jam.

Over at Min Jiang One-North, tossed to a fruitful and refreshing year with the Fruitful Abundance Yu Sheng with Whole Abalone in Raspberry and Sour Plum Sauce ($118++/$168++). Julienned peaches and  dragon fruit, thinly sliced honeydew, mangoes and kiwi together with medley of vegetables and baby abalones forms the yusheng. It looks like a sun on the plate.

Double-boiled Whole Chicken stuffed with Bird's Nest and Duck Foie Gras Dumplings

Available for takeaway at Min Jiang One-North and good for six pax is the Double-boiled Whole Chicken stuffed with Bird's Nest and Duck Foie Gras Dumplings ($308.15). The nourishing broth comes with deboned chicken stuffed with bird's nest that has been steamed for a good 45 minutes. It even comes with duck foie gras dumplings. This is a flavour packed soup that is fit for royal.

In the treasure pot, one can find Australian 10-head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, black moss and Tianjin cabbage. Not forgetting the patties that are made from a mix of minced pork and shredded lotus roots.

The majestic Drum of Fortune ($108, 1.3kg) is another ideal gift for Chinese New Year. The drum is a chocolate marble cake coated with fondant, and topped with eight lucky Mandarin oranges made with dark chocolate and mini chocolate ingots.

Back by popular demand are The Huat! Tart ($48, 500g) and Pineapple Ingot Tarts ($40.80 per box of 10 pc). The Huat! Tart is an oversized 6.5 inch pineapple tart, filled with homemade pineapple jam. My favourite is the Pineapple Ingot Tarts for its buttery pastry complemented by the sourish sweet pineapple jam.

Prosperity Salmon and Abalone Yu Sheng 4.2/5

The Prosperity Salmon and Abalone Yu Sheng ($168++ Large) features a beautiful Chinese painting illustrated by Chef Chan Hwan Kee himself. A medley of crisp vegetables such as wild arugula, yellow frsee, red sorrel, red mustard greens, carrot, baby radish and white radish, pomelo, sesame seeds, pine nuts and crispy strips of fried sweet potato and yam, together with raw salmon slices and abalones crowned with red tobiko completes the yu sheng. This is all hold together by the piquant homemade dressing, consisting of a mix of lime juice, lemongrass and plum sauce. This is only available for dine-in at Min Jiang, Goodwood Park Hotel.

Fruits of Fortune Yu Sheng 3.5/5

At Min Jiang One-North, taking centrestage is the Fruits of Fortune Yu Sheng ($68++ Small/ $138++ Large), a flower with petals that are made of julienned fruits. There is even cute nuggets of ingot-shaped osmanthus jelly studded with blueberries. The yu sheng is paired with Japanese sesame and plum sauce to go with the accompanying greens and fruits, tossing to a "fruitful" year ahead.

Braised Pig's Trotter with Sea Treasures in Claypot 4.5/5

A luxurious dish on the menu is the Braised Pig's Trotter with Sea Treasures in Claypot ($298++). The pig trotter is braised for 4 hours. It is further baked for another 45 minutes with Australian 6-head abalones, dried scallops, black mushrooms and black moss. Over at Min Jiang One-North, there is the Braised Pork Spare Ribs and Pork Belly with Sea Treasures ($288++) which comes with two different cuts of the pork - spare ribs and pork belly. The pork belly is painstaking slow cooked and steamed for a good 7 hours in total to achieve the desired tenderness. In the pot, you can also discover gourmet delicacy such as 10-head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, black moss and Tianjin cabbage. The dish is also available for takeaway at Min Jiang One-North at $308.15 nett for 6 persons.

Tree of Blossoming Treasure

The Tree of Blossoming Treasure ($98 nett, 1kg) is inspired by the beauty of the bonsai tree. Sighting the base is an oversized ingot, made with vanilla pound cake. A curvy branch grown out of the base that cradle mini ingots, made of fondant icing and chocolate respectively.

Pineapple Ingot Tarts

For the first time, the hotel introduces the Pineapple Ingot Tarts ($38/box) that are bite-sized delights filled with Chef's proprietary pineapple jam. Each box comes with 10 of these buttery gems with sweet and tangy pineapple jam.

What's the silliest thing you've done with your siblings during Lunar New Year?

What does Lunar New Year mean to you? Is it a time for feasting, house visiting, getting red packets or just a holiday? For me it is about "Bonding" - spending time and sharing the fun and laughter with your families, friends and loved ones. Most of us are usually too busy with our individual commitments or may have been living/working abroad. Lunar New Year is the time for us to catch up with one another, to reminisce and strengthen the bonds with one another. This is the time to gather and re-ignite that emotional attachment with your families, friends and loved ones.

In our family, during Lunar New Year, this form of bonding is always fun and at times comes with many silly moments. For example, my siblings and I love pineapple tarts and we will be fighting to see who can eat the most. During our younger days, we would even imitate lion dancing in the house. Now we are too old for it but that does not stop us from joining in the fun with our nieces sometimes.

New on the menu is the Prosperity Amberjack Lo Hei ($168 for large portion) that comes with a drawing of an elegant rooster standing majestically against a bamboo forest. Most restaurants nowadays preferred to use abalone, crabmeat or smoke for their Yu Sheng. Hence the delicate amberjack is welcoming sight.

Festive Appetiser Takeaway Platter 4/5

For those that is planning to celebrate the occasion at home, Min Jiang has also put together a Festive Appetiser Takeaway Platter ($155.55 nett) which comprises of five delicious bites of deep fried chicken with sesame chilli sauce, deep fried prawns coated with salted egg yolk, deep fried ngoh hiang, sauteed kurobuta pork loin with coffee sauce and marinated jellyfish.

Boiled for hours, the soup has extracted the essence of the quality ingredients like braised Australian 10-head abalones, fish maw, spring chicken and Tianjin cabbage. A good celebratory dish is the Braised Pork Belly with Sea Treasures in Claypot ($268 dine-in) which is available for both dine-in and takeaway. The pork belly which has been painstakingly prepared for almost 4 hours, poached and steamed, in order to achieve that mouth-wateringly tender piece of meat. This is further complemented with premium ingredients such as Australian 10-head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, black moss, gluten puffs and Tianjin cabbage.

We also sampled some of these year's Lunar New Year goodies. One of them is the enlarge version of the quintessential bite-sized pineapple tart. Named as The Huat! Tart ($40.65 nett), this is a whole pineapple tart measuring 6.5 inch!

The Auspicious Golden Pineapple ($94.15) is a majestic work of art. The 9-inch tall five layer vanilla pound cake sandwiched with butter cream symbolises an abundance of wealth.

Wrapping up the dinner, we have 3 different types of nian gao creation. There is the popular Durian Nian Gao Roll, Deep Fried Yuan Yang Sesame Nian Gao and Ondeh Ondeh Inspired Nian Gao. My all time favourite is the Durian Nian Gao which is comes with layers of luscious D24 durian paste and gula melaka infused nian gao sprinkled with coconut flakes.

Seasonal Tastes @ The Westin Singapore - A Taste of Taiwan

Mentioned Taiwan cuisine the first thought would be their popular street food. Bringing the night market snack such as the Oyster Vermicelli and Oyster Egg Omelette to the buffet table, means I need not buy an air ticket to fly to Taiwan to enjoy these well loved snack.

Braised Beef Noodle Soup 4.2/5

The highlight of the Tasty Taiwan has to be the Braised Beef Noodle Soup. The broth was rich and flavourful with a hint of spiciness. The chewy and stringy noodle, soft beef and most important the salted vegetable made this a delicious bowl of noodle.

Vegetable, Pork Strip, Crispy Fried Egg Soup 4/5

An interesting dish is the Vegetable, Pork Strip, Crispy Fried Egg Soup. This is a dish that I have not seen before. The thicken soup is hearty and comforting. The starchy soup reminds me of the Taiwanese Geng, soup thicken with starch. A popular street food in Taiwan.

There are many other Taiwanese cooked dishes among the buffet spread such as the Five Spices Cold Pork Sausage, Taiwanese Run Spring Roll, Popcorn Chicken, Four Assorted String with Herbs. Fried Bee Hoon etc.

Dragon Phoenix Leg 4/5

A classic Taiwan dish is the Dragon Phoenix Leg or simply Crispy Stuffed Pork Drumstick. Back then chicken was considered expensive, hence the local created the dish using minced pork in lieu of chicken thigh.
