Tanglin Cookhouse @ Tanglin Mall - Ka-Soh’s Signature Fish Soup Returns in a Heritage Collaboration

Singapore’s food culture is built on generations of hawkers who have spent decades perfecting dishes that eventually become part of our collective culinary memory. Tanglin Cookhouse pays tribute to these heritage names with its new Tanglin Heritage Series, a special initiative celebrating some of Singapore’s beloved hawker icons.

Until the end of September 2026, diners can revisit two of its most familiar creations at Tanglin Cookhouse’s Tanglin Mall and PLQ outlets — the Ka-Soh Signature Fish Noodle Soup and Ka-Soh Prawn Paste Chicken Mid Wings. The collaboration also introduces new dishes inspired by both brands, alongside Tanglin Cookhouse’s existing offerings.

For the first chapter of the series, Tanglin Cookhouse turns its attention to Ka-Soh, the Cantonese-style fish noodle soup institution that has been part of Singapore’s food landscape since 1939.

Ka-Soh’s story stretches back to its beginnings at Great World Amusement Park, then to a humble roadside pushcart in the 1950s, and finally to its last dine-in restaurant at Greenwood Avenue, which closed its doors last September. Despite the closure, generations of diners still remember Ka-Soh’s signature flavours.

Ka-Soh Signature Fish Noodle Soup 4.2/5

The highlight is undoubtedly the Ka-Soh Signature Fish Noodle Soup ($18), a premium take on the classic that stays faithful to the original’s spirit while adding a few refinements. Instead of snakehead fish traditionally used by Ka-Soh, Tanglin Cookhouse uses firm, pristine slices of grouper, which have a slightly more delicate texture while holding up nicely in the hot broth. The fish is paired with thick, silky bee hoon noodles and baby chye sim, adding a subtle sweetness and refreshing crunch to each spoonful. The soup’s natural milky appearance comes from the fish bones. There is no milk involved. The broth gets its creamy, opaque texture from fish bones that are boiled over high heat for hours, creating a rich emulsion naturally packed with collagen and minerals. Chicken bones, fresh Bentong ginger and white peppercorns are then added to build greater depth, while a touch of Shaoxing wine is introduced just before serving. The result is a broth that is rich and savoury without being excessively heavy. A pronounced fish-bone sweetness underlies it, complemented by the warmth of ginger and white pepper. The bee hoon soaks up the broth nicely, making each mouthful comforting and satisfying.

Ka-Soh Prawn Paste Chicken Mid Wings 4/5

The Ka-Soh Prawn Paste Chicken Mid Wings ($15 for 8 pieces) are another must-order. These har cheong gai are marinated generously in fermented shrimp paste, giving the chicken that unmistakable pungent, savoury aroma even before it reaches the table. The marinade works its way into the chicken, resulting in thoroughly seasoned meat rather than relying on the crispy coating for flavour. Deep-fried until golden brown, the wings have a satisfyingly crunchy exterior while the meat underneath remains juicy and tender. The fermented shrimp paste brings plenty of umami and saltiness, making these dangerously easy to eat. They come with Ka-Soh’s Signature Chilli Sauce, which brings a tangy, citrusy kick that helps cut through the richness of the fried chicken. With crisp batter, succulent meat, fermented shrimp fragrance, and bright chilli sauce, this is the kind of side dish that disappears quickly from the table.

Indian Butter Chicken 3.5/5

Beyond the Ka-Soh creations, Tanglin Cookhouse also offers a selection of dishes that work well for a leisurely meal. The Indian Butter Chicken ($28) is served with Turmeric Pilaf Rice studded with cranberries and grilled naan bread. Tender pieces of chicken simmer in a velvety tomato-based makhani sauce that is rich, creamy, and intensely buttery. The sauce combines familiar tomato sweetness with gentle spice, coating the chicken generously without overpowering its tenderness. The grilled naan provides a chewy, slightly charred vehicle for scooping up the sauce, while the aromatic turmeric pilaf adds another layer of fragrance. Sweet cranberries scattered through the rice are a nice touch, bringing occasional bursts of sweetness that help balance the richness of the butter chicken.

Claypot Seafood Soup with Yam Rice 4/5

A new addition created for the collaboration is the Claypot Seafood Soup with Yam Rice ($38 for 2). Served bubbling hot in a claypot, the soup brings together tiger prawns, plump scallops, slices of fresh grouper, Chinese cabbage and tau pok stuffed with house-made prawn paste. There is something particularly comforting about seafood soup served straight from a steaming claypot. The broth carries a natural sweetness from the seafood, while the cabbage contributes additional depth as it cooks in the soup. The stuffed tau pok is a highlight for prawn paste lovers, with the porous tofu puff soaking up the flavourful broth. The mix of seafood and vegetables makes this a hearty communal dish, perfect for sharing.

Two bowls of fragrant yam rice are served alongside, topped with crispy pork lard. The yam lends a subtle earthiness to the rice, while the pork lard adds savoury richness and a crunchy texture that makes it tempting to eat on its own.

Heritage Gula Melaka Sago Pudding 3/5

For dessert, the Heritage Gula Melaka Sago Pudding ($15) brings things back to a more nostalgic style of Singaporean dessert. Soft, translucent sago pearls are paired with creamy coconut and fragrant gula melaka, creating a simple combination that relies on the familiar interplay of rich coconut and caramel-like palm sugar. It is not an overly complicated dessert, but that is part of its appeal. The flavours are familiar, comforting and reminiscent of the traditional desserts many of us grew up eating.

Warm Yam “Orh Nee” 3/5

The Warm Yam “Orh Nee” ($17) comes with gingko nuts, steamed pumpkin and coconut cream. The yam paste has the smooth, starchy texture expected from orh nee, while the gingko nuts and pumpkin add contrasting textures and sweetness. The coconut cream adds richness to the dessert, although I still prefer fresh coconut milk for orh nee. Fresh coconut milk tends to offer a more fragrant, rounded coconut flavour that complements the yam without feeling quite as heavy as coconut cream.

The Ka-Soh Signature Fish Noodle Soup and Prawn Paste Chicken Mid Wings will be available at Tanglin Cookhouse’s Tanglin Mall and PLQ outlets until 30 September 2026. Diners can also purchase packs of Ka-Soh’s Signature Frozen Fish Soup to recreate a little of that heritage at home. For those who grew up with Ka-Soh, this collaboration offers a chance to revisit familiar flavours. For those who never had the chance to dine at the original Greenwood Avenue outlet, it is an opportunity to discover a small but significant chapter of Singapore’s culinary history before this limited-time tribute ends.

Hup Lok (合楽) @ Havelock Road - From Wholesale to Table, Premium Seafood Without the Markup

Hup Lok (合楽) is one of those under-the-radar gems that rewards those willing to venture off the main dining strips to Havelock Road. Helmed by a third-generation seafood wholesaler, the restaurant leverages its direct-sourcing advantage to offer premium, export-grade seafood at surprisingly accessible prices. By cutting out the middleman, diners can enjoy quality ingredients that would typically command a much higher price elsewhere. The setting is modest and unpretentious, allowing the focus to remain firmly on the food — honest, hearty dishes that celebrate the natural flavours of the sea.

Alaskan King Crab Bee Hoon 4/5

We started with the Alaskan King Crab Bee Hoon ($38.80), a dish that immediately showcases the restaurant's value proposition. Featuring half an Alaskan king crab, it is hard not to be impressed by the generous portion at this price point. The dish arrives with a golden, crustacean-rich broth infused with the aroma of Chinese wine, lending both depth and fragrance. A mix of bee hoon and tang hoon provides textural contrast, soaking up the crab's sweet essence while retaining a pleasant bite. Luxurious yet comforting, this dish feels indulgent without the usual restaurant markup.

Claypot Hokkien Mee 4/5

The Claypot Hokkien Mee ($18.80) is another crowd-pleaser, served bubbling hot in a claypot. Loaded with a medley of ingredients, including large prawns, pork belly, squid, lardons, and a lacy omelette, it leans towards a wetter, gooier style. While the prawn stock could be more robust for greater depth, the highlight undoubtedly lies in the four Ecuadorian "kami no ebi" prawns, prized for their size and natural sweetness. The accompanying sambal chilli could do with more punch, but considering the quality and quantity of ingredients, it remains a satisfying bowl of noodles.

Teochew Braised Whole Duck Liver 4/5

A standout for those who appreciate offal is the Teochew Braised Whole Duck Liver ($38), available via pre-order. Thick slices of duck liver are braised in a savoury, slightly herbal broth that gently permeates the rich flesh. Unlike pan-seared foie gras, this preparation is lighter on the palate, with a clean, balanced flavour profile that makes it more approachable. The texture is luxuriously silky and buttery, melting effortlessly in the mouth while retaining an earthy depth.

Grandpa's Promfret Soup (外公鱼汤) 4.2/5

Rounding off the meal is the Grandpa's Pomfret Soup ($13.80), a dish rooted in heritage and nostalgia. The broth is light yet deeply comforting, lifted by salted plums and tomatoes that add a gentle tang. Generously filled with fresh pomfret slices, it embodies the warmth of a traditional Teochew home-cooked soup, simple yet full of soul.

Hup Lok may not boast flashy interiors or a prime location, but what it offers is something far more compelling — exceptional value, quality seafood, and cooking that respects the integrity of its ingredients. It is little wonder that the restaurant has been quietly gaining traction through word of mouth. For those in the know, this is a spot worth bookmarking for a satisfying seafood feast without breaking the bank.

Fans of authentic Hong Kong cha chaan teng fare have reason to celebrate. Tsui Wah has officially opened its fifth outlet in Singapore at the revamped The Cathay. As part of this exciting launch, diners can look forward to a refreshed and exclusive menu, stylish interiors that blend nostalgic charm with modern flair, and even a new bottled drinks collection for on-the-go indulgence.

We began our meal with two new additions to the beverage menu: Handmade Bitter Gourd Lemon Tea ($5.30) and Bottled Signature Yuen Yang ($4.80). The former is an intriguing drink believed to have detoxifying properties. It is surprisingly palatable with only a light bitter aftertaste unless you bite into the gourd bits. The bottled Yuen Yang offers a smooth tea-coffee blend and is part of Tsui Wah's new takeaway drink series, available exclusively at The Cathay. Other bottled flavours include Coffee and Citrus Honey.

This new main won us over. The Scallion Oil Chicken Steak ($14.80) is topped with fragrant scallion oil and three perfectly runny eggs on a bed of fluffy steamed rice. It is generous, satisfying, and very value for money. This dish is also available with pork chop instead of chicken. It is part of the exclusive offerings at The Cathay outlet.

No visit to Tsui Wah feels complete without this classic. At $4.20, the Crispy Bun with Condensed Milk is simple comfort food done right! It's crispy, buttery, and lightly sweet. Just be sure to eat it while it's hot, or the bun gets a bit tough when cold.

A cha chaan teng essential, this Hong Kong-style Egg Tart ($2.20) arrived piping hot. The egg custard was fragrant, but the crust was denser than we preferred. It is a warm and satisfying bite.

My personal favourite from this tasting was definitely the Salted Egg Lava French Toast ($8.80). The sweet-savoury filling was rich and buttery, oozing out as you cut into the toast. It has crisp edges and a soft centre, and the salted egg wasn't overpowering. There's also a Curry Chicken French Toast variant we'll return to try next!

Whether you're a regular or visiting for the first time, the new Tsui Wah at The Cathay offers a refreshed and inviting space, plus exclusive dishes that make it well worth a trip down. We left full and satisfied, and are already planning our return visit.

For dessert, we ended our meal with the Glutinous Rice Cake with Brown Sugar ($8.80 for 5pc). These crispy, golden rice cakes feature a chewy, mochi-like texture inside, with a caramelized brown sugar coating that adds just the right amount of sweetness. Simple yet incredibly addictive!

With its modern take on Cantonese classics, Hey Kee (嘻記) continues to impress with its refined flavours and innovative techniques. 5 ON 25 (五悦亭) @ Andaz Singapore - Refined Cantonese Dining Experience with Panoramic City Skyline View

The newly renovated 5 ON 25 at Andaz Singapore reopened in June. It offers a fresh array of inventive dishes that pay homage to traditional Cantonese cuisine with a modern twist. Perched on the 25th floor of the hotel, the restaurant boasts a comprehensive menu and a breathtaking panoramic view of the city skyline, making it a feast for both the eyes and the palate.

The culinary team is led by esteemed Chinese Head Chef Lim Hong Lih, who brings years of experience in Cantonese fine dining to the table. We had the pleasure of sampling several dishes, including both new creations and popular signatures. Most of the dishes pictured below were portions adjusted to tasting sizes.

Cantonese Style Roasted Cage-Free Cherry Valley Duck with Table Side Maotai Flambé 4.5/5

Our meal began with the 5 ON 25 Cantonese Style Roasted Cage-Free Cherry Valley Duck with Table Side Maotai Flambé ($88 for Half). Watching the chef meticulously slice the duck skin was a delightful prelude to the dish itself. For those who prefer without, the duck is also available without the Maotai Flambé at $49 for a half portion.

Served with freshly steamed skin wrappers, the duck comes with an array of condiments: sweet sauce, sugar, spring onions, cucumber strips, sweet melon strips, and hawthorn strips. While the skin wrapper was slightly thicker than I typically prefer, the crispiness of the duck skin was on point, enhanced by the smokiness from the Maotai flambé. The hawthorn strips, which I feared might be too sweet, turned out to be a harmonious complement.

Fried Australian Jumbo Quail Legs, Salt & Pepper 4.2/5

Next, the Fried Australian Jumbo Quail Legs, Salt & Pepper ($28) were served. Although a touch salty, the fried quail legs exuded a fragrant, garlicky aroma.

Accompanying the quail was the Crispy Shiitake Mushrooms with Osmanthus Honey Sauce ($15). These mushrooms had a satisfying crunch and were glazed with a sweet, floral osmanthus honey sauce.

Double-Boiled Grouper Soup 4.8/5

I absolutely loved the Double-Boiled Grouper Soup ($48). This creamy broth, infused with delicate fish maw and wolfberries, had a distinct peppery heat and was so rich in collagen that it left a luxurious, sticky mouthfeel. I can't imagine how this could be improved.

Braised Stuffed Sea Cucumber 4.5/5

The Braised Stuffed Sea Cucumber ($48) was another highlight. The sea cucumber, stuffed with a flavourful mixture of pork and shrimp, was served on a bed of sliced mushrooms and bathed in a rich Yunnan mushroom sauce. The sauce was particularly noteworthy, with its delicious numbing hints of peppercorns and an alluring smokiness.

Beetroot Fried Rice 4.8/5

5 ON 25's Beetroot Fried Rice ($38) is another dish you must try. The dish features a delightful play of textures with crunchy fried rice bits, preserved vegetables, green beans and Vietnamese tiger prawns. It was fried so fragrant and finished with slices of Hokkaido scallops placed on top. Even though my dining companion and I were pretty full at this point of the meal, we wiped the pot clean quickly.

We ended our meal with a selection of desserts. The Lotus Paste Sesame Pastry ($8 for 3 Pieces) featured sweet lotus paste encased in a buttery, flaky pastry.

Chilled Toasted Sesame Pudding and Apricot Egg Tart 3.8/5

A dessert platter followed, featuring two sets of sweets. The first was a Chilled Toasted Sesame Pudding and Apricot Tart ($15). We preferred the sesame pudding for its fragrant, nutty flavour and smooth, balanced texture. The second dessert was the decadent Grand Cru Chocolate Ice Cream ($20), infused with Wu Liang Ye Liquor, a good option for alcohol-based desserts.
