Tanglin Cookhouse @ Tanglin Mall - Ka-Soh’s Signature Fish Soup Returns in a Heritage Collaboration

TanglinCookHouseKahSo8

Singapore’s food culture is built on generations of hawkers who have spent decades perfecting dishes that eventually become part of our collective culinary memory. Tanglin Cookhouse pays tribute to these heritage names with its new Tanglin Heritage Series, a special initiative celebrating some of Singapore’s beloved hawker icons.

Until the end of September 2026, diners can revisit two of its most familiar creations at Tanglin Cookhouse’s Tanglin Mall and PLQ outlets — the Ka-Soh Signature Fish Noodle Soup and Ka-Soh Prawn Paste Chicken Mid Wings. The collaboration also introduces new dishes inspired by both brands, alongside Tanglin Cookhouse’s existing offerings.

TanglinCookHouseKahSo6

For the first chapter of the series, Tanglin Cookhouse turns its attention to Ka-Soh, the Cantonese-style fish noodle soup institution that has been part of Singapore’s food landscape since 1939.

Ka-Soh’s story stretches back to its beginnings at Great World Amusement Park, then to a humble roadside pushcart in the 1950s, and finally to its last dine-in restaurant at Greenwood Avenue, which closed its doors last September. Despite the closure, generations of diners still remember Ka-Soh’s signature flavours.

TanglinCookHouseKahSo21
Ka-Soh Signature Fish Noodle Soup 4.2/5

The highlight is undoubtedly the Ka-Soh Signature Fish Noodle Soup ($18), a premium take on the classic that stays faithful to the original’s spirit while adding a few refinements. Instead of snakehead fish traditionally used by Ka-Soh, Tanglin Cookhouse uses firm, pristine slices of grouper, which have a slightly more delicate texture while holding up nicely in the hot broth. The fish is paired with thick, silky bee hoon noodles and baby chye sim, adding a subtle sweetness and refreshing crunch to each spoonful. The soup’s natural milky appearance comes from the fish bones. There is no milk involved. The broth gets its creamy, opaque texture from fish bones that are boiled over high heat for hours, creating a rich emulsion naturally packed with collagen and minerals. Chicken bones, fresh Bentong ginger and white peppercorns are then added to build greater depth, while a touch of Shaoxing wine is introduced just before serving. The result is a broth that is rich and savoury without being excessively heavy. A pronounced fish-bone sweetness underlies it, complemented by the warmth of ginger and white pepper. The bee hoon soaks up the broth nicely, making each mouthful comforting and satisfying.

TanglinCookHouseKahSo2
Ka-Soh Prawn Paste Chicken Mid Wings 4/5

The Ka-Soh Prawn Paste Chicken Mid Wings ($15 for 8 pieces) are another must-order. These har cheong gai are marinated generously in fermented shrimp paste, giving the chicken that unmistakable pungent, savoury aroma even before it reaches the table. The marinade works its way into the chicken, resulting in thoroughly seasoned meat rather than relying on the crispy coating for flavour. Deep-fried until golden brown, the wings have a satisfyingly crunchy exterior while the meat underneath remains juicy and tender. The fermented shrimp paste brings plenty of umami and saltiness, making these dangerously easy to eat. They come with Ka-Soh’s Signature Chilli Sauce, which brings a tangy, citrusy kick that helps cut through the richness of the fried chicken. With crisp batter, succulent meat, fermented shrimp fragrance, and bright chilli sauce, this is the kind of side dish that disappears quickly from the table.

TanglinCookHouseKahSo28

TanglinCookHouseKahSo33
Indian Butter Chicken 3.5/5

Beyond the Ka-Soh creations, Tanglin Cookhouse also offers a selection of dishes that work well for a leisurely meal. The Indian Butter Chicken ($28) is served with Turmeric Pilaf Rice studded with cranberries and grilled naan bread. Tender pieces of chicken simmer in a velvety tomato-based makhani sauce that is rich, creamy, and intensely buttery. The sauce combines familiar tomato sweetness with gentle spice, coating the chicken generously without overpowering its tenderness. The grilled naan provides a chewy, slightly charred vehicle for scooping up the sauce, while the aromatic turmeric pilaf adds another layer of fragrance. Sweet cranberries scattered through the rice are a nice touch, bringing occasional bursts of sweetness that help balance the richness of the butter chicken.

TanglinCookHouseKahSo14

TanglinCookHouseKahSo24
Claypot Seafood Soup with Yam Rice 4/5

A new addition created for the collaboration is the Claypot Seafood Soup with Yam Rice ($38 for 2). Served bubbling hot in a claypot, the soup brings together tiger prawns, plump scallops, slices of fresh grouper, Chinese cabbage and tau pok stuffed with house-made prawn paste. There is something particularly comforting about seafood soup served straight from a steaming claypot. The broth carries a natural sweetness from the seafood, while the cabbage contributes additional depth as it cooks in the soup. The stuffed tau pok is a highlight for prawn paste lovers, with the porous tofu puff soaking up the flavourful broth. The mix of seafood and vegetables makes this a hearty communal dish, perfect for sharing.

Two bowls of fragrant yam rice are served alongside, topped with crispy pork lard. The yam lends a subtle earthiness to the rice, while the pork lard adds savoury richness and a crunchy texture that makes it tempting to eat on its own.

TanglinCookHouseKahSo52
Heritage Gula Melaka Sago Pudding 3/5

For dessert, the Heritage Gula Melaka Sago Pudding ($15) brings things back to a more nostalgic style of Singaporean dessert. Soft, translucent sago pearls are paired with creamy coconut and fragrant gula melaka, creating a simple combination that relies on the familiar interplay of rich coconut and caramel-like palm sugar. It is not an overly complicated dessert, but that is part of its appeal. The flavours are familiar, comforting and reminiscent of the traditional desserts many of us grew up eating.

TanglinCookHouseKahSo45
Warm Yam “Orh Nee” 3/5

The Warm Yam “Orh Nee” ($17) comes with gingko nuts, steamed pumpkin and coconut cream. The yam paste has the smooth, starchy texture expected from orh nee, while the gingko nuts and pumpkin add contrasting textures and sweetness. The coconut cream adds richness to the dessert, although I still prefer fresh coconut milk for orh nee. Fresh coconut milk tends to offer a more fragrant, rounded coconut flavour that complements the yam without feeling quite as heavy as coconut cream.

The Ka-Soh Signature Fish Noodle Soup and Prawn Paste Chicken Mid Wings will be available at Tanglin Cookhouse’s Tanglin Mall and PLQ outlets until 30 September 2026. Diners can also purchase packs of Ka-Soh’s Signature Frozen Fish Soup to recreate a little of that heritage at home. For those who grew up with Ka-Soh, this collaboration offers a chance to revisit familiar flavours. For those who never had the chance to dine at the original Greenwood Avenue outlet, it is an opportunity to discover a small but significant chapter of Singapore’s culinary history before this limited-time tribute ends.

Man Fu Yuan @ Frasers House - Refined Midday Indulgence with New Executive Lunch Sets

ManFuYuanLunchMay2026-6

Located within Frasers House, Man Fu Yuan presents a refreshed Executive Lunch Menu that continues to showcase its refined Cantonese culinary philosophy. Designed for both business diners and those seeking a leisurely midday indulgence, the new offering introduces two thoughtfully curated 4-course sets — Willow ($52) and Camellia ($58), with a minimum of two diners required. Diners can further enhance their experience with optional starters such as the Dim Sum Platter (+$12) or Roast Platter (+$18).

We had the opportunity to sample the Camellia set, along with both add-on starters, offering a comprehensive look at the restaurant’s refined Cantonese repertoire.

ManFuYuanLunchMay2026-2
Man Fu Yuan Dim Sum Platter 4.2/5

The Man Fu Yuan Dim Sum Platter makes for a delightful prelude. The trio showcases a balance of textures and flavours — from the juicy Pork and Prawn Siew Mai topped with tobiko for a subtle briny pop, to the Crystal Dumpling infused with Black Truffle, lending an earthy elegance. The Deep-fried Seafood Lychee Ball adds a contrasting crunch, with a lightly crisp exterior giving way to a succulent, mildly sweet filling.

ManFuYuanLunchMay2026-8
Man Fu Yuan Roast Platter 4.2/5

Equally compelling is the Man Fu Yuan Roast Platter. The Honey-glazed Iberico Pork Collar stands out with its tender bite and caramelised glaze, delivering a satisfying interplay of sweetness and savoury depth. Meanwhile, the Braised Cantonese Soy Chicken, enhanced with black truffle, offers a refined take on a classic, its silky skin and well-seasoned meat reflecting careful execution.

ManFuYuanLunchMay2026-13
Braised Seafood Soup with Conpoy in Superior Stock 4.2/5

The meal begins in earnest with the Braised Seafood Soup with Conpoy in Superior Stock. A hallmark of Cantonese culinary philosophy, the soup exemplifies restraint and precision. The broth, painstakingly simmered with Jinhua ham, chicken, and pork, reveals a layered umami richness while remaining remarkably clean on the palate. Its lightly thickened consistency lends body without heaviness, making it both comforting and invigorating — a fitting opener that gently awakens the senses. It serves as an elegant, restorative opening to the lunch progression. The dish is fragrant and warm, designed to awaken the palate without overwhelming it, perfectly preparing the diner for the subsequent courses.

ManFuYuanLunchMay2026-15
Steamed Grouper Fillet with Leek, Spring Onion and Premium Soya Sauce 4.2/5

Taking centre stage is the Steamed Grouper Fillet with Leek, Spring Onion and Premium Soya Sauce. This dish highlights the kitchen’s respect for quality ingredients, allowing the grouper’s natural sweetness and delicate flakiness to shine. The aromatics — leeks and spring onions — are enlivened with a final drizzle of hot oil, releasing their fragrance and adding a subtle sharpness. The superior soya sauce, nuanced and balanced, ties the elements together without overpowering the fish’s inherent flavours.

ManFuYuanLunchMay2026-20
Braised Ee Fu Noodle with Shredded Duck 3.5/5

For a more comforting note, the Braised Ee Fu Noodle with Shredded Duck rounds off the savoury courses. The noodles, with their signature sponge-like texture, absorb the savoury braising sauce well, resulting in a rich, flavourful dish. While hearty and satisfying, the profile leans towards the familiar, offering a more rustic contrast to the earlier refined courses.

ManFuYuanLunchMay2026-22
Chilled Eight Flower Tea with Longan, Ginkgo Nut, Red Date 4/5

Dessert arrives as the Chilled Eight Flower Tea with Longan, Ginkgo Nut, and Red Date — a light, nourishing conclusion. The floral infusion is subtle yet fragrant, complemented by the natural sweetness of longan and red dates. The inclusion of ginkgo nuts adds textural interest, while the chilled serving refreshes the palate. It is a thoughtful ending that aligns with traditional Chinese dining principles of balance and restoration.

Overall, the refreshed Executive Lunch Menu at Man Fu Yuan delivers a well-paced and satisfying dining experience, balancing refinement with approachability. With its accessible pricing and polished execution, it presents an excellent option for those seeking a quality Cantonese lunch in a sophisticated setting.

Steamed Crystal Dumplings w Morel Mushrooms 1

Steamed Crystal Dumplings w Morel Mushrooms 2
Steamed Crystal Dumplings w Morel Mushrooms 4/5

The Steamed Crystal Dumplings with Morel Mushrooms ($11.80) stood out for their delicate execution. The skin has a thin, almost mochi-like texture, giving it a slight chew while still feeling light. The filling is fresh and flavourful without being overpowering, allowing the earthy notes of the morel mushrooms to come through nicely.

Baked BBQ Honey Pork Pastry 1

Baked BBQ Honey Pork Pastry 2
Baked BBQ Honey Pork Pastry 4/5

A dim sum classic, the Baked BBQ Honey Pork Pastry ($9.80) delivers with its buttery, flaky crust. What I appreciated most was that the char siew filling wasn’t overly sweet, striking a nice balance that makes it easy to enjoy without feeling cloying.

Steamed Soup Dumplings w Crab Roe 2
Steamed Soup Dumplings with Crab Roe 4/5

The Steamed Soup Dumplings with Crab Roe ($12.80) may come across slightly premium, but the quality justifies it. Each dumpling is juicy, packed with umami and surprisingly not greasy. The vinegar served alongside is also worth mentioning! It’s not your typical sharp vinegar, but slightly sweet and ginger-infused, pairing beautifully with the dumplings and elevating the overall experience.

Braised Seafood Thick Soup in Stone Pot 1
Braised Seafood Thick Soup in Stone Pot 4.5/5

The Braised Seafood Thick Soup in Stone Pot ($38) is generous and indulgent, loaded with premium ingredients such as sea cucumber, fish maw, dried scallops, and even bird’s nest. It’s rich, collagen-packed and served piping hot in a stone pot, making it both comforting and luxurious. This is a classic Cantonese soup done well.

Crab Roe w Pan-Fried Hor Fun 8

Crab Roe w Pan-Fried Hor Fun 1

Crab Roe w Pan-Fried Hor Fun 6

Crab Roe w Pan-Fried Hor Fun 2
Crab Roe with Pan-Fried Hor Fun 4.5/5

Crab roe dishes seem to be having a moment, and Kai Garden’s version with Pan-Fried Hor Fun ($48) is a solid one. The rice noodles have a nice wok hei, complemented by the savoury depth of cai poh and fish sauce before being topped with a luscious crab roe sauce. I particularly liked that it’s served over a flame, keeping the sauce warm, as it can develop a slightly fishy note once cooled. Portion-wise, it’s generous and easily shareable among 3–4 diners.

Black Truffle Roasted Chicken 3

Black Truffle Roasted Chicken 2
Black Truffle Roasted Chicken 5/5

The Black Truffle Roasted Chicken ($32/half) was a pleasant surprise and a clear standout. The skin is crispy, the meat tender and juicy, and the truffle aroma is subtle. The truffle profile is not overpowering, with a slight hint of Chinese herbal notes that adds depth. A well-balanced dish that feels indulgent without being heavy.

Restaurant 2

Restaurant 1

Kai Garden’s 10th anniversary menu brings together the restaurant’s strengths, refined Cantonese classics with a touch of modern luxury through ingredients like crab roe and black truffle. While the dishes lean towards a more polished, fine-dining profile, the 50% off promotion on selected dishes makes this an especially worthwhile time to visit and try some of their highlights. If you’re planning a meal here, I’d recommend going with a group so you can try a wider variety, especially the soup, hor fun and roasted chicken.

Milkfish @ Millenia Walk - Scrumptious Grilled Whole Milkfish Belly And Wholesome Seafood Soup

IMG_3974

Milkfish at Millenia Walk is the brand's second outlet, serving up slow-cooked seafood soup brewed in collaboration with Áo Broth. The soup has no MSG, dairy and preservatives. While its dairy-free yet milky broth is the main offering of Milkfish, what you shouldn't be missing out on is its Grilled Whole Milkfish Belly.

IMG_3984
Grilled Whole Milkfish Belly 4.2/5

Milkfish is adored by many for its generous belly fat, especially so in Taiwan and the Philippines. Over at Milkfish, its Grilled Whole Milkfish Belly ($19 a la carte/$23.80 set) gets you an unctuous piece of grilled milkfish belly imported from Taiwan, served deboned. You may be more familiar with grilled salmon belly, and this is equally delicious with a dash of lemon juice and the sweet-savoury dipping sauce. Ideally, for my plate of milkfish, I would prefer it to be charred further to render the fats slightly more. A bowl of hearty Multigrain Rice will be an apt complement to its fatty goodness.

IMG_3965
Signature Soup 4/5

The milkfish also forms the base of its signature soup with pork bones and fresh clams, attaining a milky emulsion and sweet taste. It eliminates the need to add any milk. The Signature Soup ($12.80) features sliced red snapper fish, chosen for its relatively sweeter taste and firmer texture than the usual Batang fish, a whole prawn and clams alongside tofu, vegetables and a housemade minced pork patty. You can also upgrade the red snapper to grouper for a more premium selection. Though it wasn't as rich as expected, the depth of flavour was undoubtedly there, and I love the elusive aroma of the Hua Diao Wine, which elevated the enjoyment of the soup.

IMG_3970
Brown Rice Vermicelli

I had mine with Brown Rice Vermicelli, which brought out the sweetness of the soup. The entire bowl was pretty wholesome, just that the portion of the soup was a tad too small an amount for the lot.

IMG_3957
Premium Soup Set 3/5

The Premium Soup Set ($32.80) uses the same soup base with additional seafood items, including half lobster, whole abalone and scallop. With such a price point, I expected the lobster's quality could be better. If you are in the mood for paofan, there's also an option for crispy rice on the menu.

IMG_3956
Chilled Tofu with Century Egg 3.8/5

IMG_3972
Oriental Salad in Special Vinegar Dressing 3.8/5

The Small Plates ($3 each) and Sharing Plates offered are worth a go, such as the Marinated Chilled Tomatoes, Oriental Salad in Special Vinegar Dressing, and the Chilled Tofu with Century Egg. A set meal includes two sides and a drink.

IMG_3975
Deep Fried Prawn Rolls 4/5

For Sharing Plate, we tried the housemade Deep Fried Prawn Rolls ($6 for 4pc), which are very good with well-seasoned and juicy filling.
