Tien Court Restaurant @ Copthorne King's Hotel - New Chef New Menu With Weekly Dish Promotion Up To 50% Off

Probably not known to many, Tien Court Restaurant is located within Copthorne King's Hotel on Havelock Road. Recently, Master Chef Lui Wing Keung joined the restaurant and embraced a grand menu revamp. On top of that, the restaurant is championing sustainability to repurpose imperfect foods that would otherwise be discarded.

Deep Fried Glutinous Rice with Minced Chicken 4.2/5

The Deep Fried Glutinous Rice with Minced Chicken is delicately crafted in the shape of an adorable chick, playfully nestled in a bed of hay and crackered eggshells. It is too cute to be eaten. The first bite is crispy, followed by the chewy texture and the mouth-watering filling of savoury minced chicken.

Teochew Steamed Crystal Dumpling 4/5

Tien Court Restaurant has a delectable spread of dim sum items on the menu. A crowd favourite is the Teochew Steamed Crystal Dumpling with Dried Shrimp, Preserved Radish and Jicama. While I enjoyed the thin and translucent dumpling skin's chewy texture, the stuffing was too coarsely cut to complement it.

Frozen Marinated Cherry Tomato with Plum & Homemade Beancurd Roll 4.2/5

The Homemade Beancurd Roll is an off-menu special. Besides the soft interior, it has savouriness and crunchiness due to the mixture of tofu, prawn paste, carrot and water chestnuts. On the side is Frozen Marinated Cherry tomato with Plum, giving it a refreshing touch. Noteworthy is the used of ugly vegetable that is deemed unfit for supermarket punnet.

Double-boiled Fish Maw Nourishing Soup 3.8/5

The Double-boiled Fish Maw Soup is both nourishing and comforting. Diners can find soft tendon, fish maw and dried scallops in the rich and creamy and milky broth. As it uses chicken collagen, the flavour is not as intense as pork collagen. Diners can also add a dash of black vinegar to balance the richness.

The Teochew-Style Oyster Omelette is topped with Deep-Fried Oyster Fritter with Garlic and Chilli Powder. It is a two in one dish. First is the plump and juicy oyster fritters on top, with a crispy and fluffy omelette on the bottom. It is best enjoyed with the piquant homemade chilli sauce.

The Signature Braised White Teat Sea Cucumber is soft and bouncy on the inside and crispy on the outside. The complementing moreish abalone sauce raises the taste profile, which deep-frying provides extra textural enjoyment.

The Stir-Fried Pork Shoulder with Chef's Special Sauce has a delightful bite for its leaner cut. Marinated in honey and black vinegar, it gives the pork a lovely sweet-sour profile. Frankly, I didn't have the addition of Japanese matcha powder served any possible.

Wrapping up our dinner at Tien Court, we had the Signature Teochew Crispy Noodle paired with a refreshing strawberry vinegar sauce that sits light on the palate. However, my favourite is the Homemade Tau Suan with freshly grated orange peel, gingko and fried dough fritter with a sweet, citrusy fragrance.

Park Royal Clarke Quay ushers in the Year of the Ox with a selection of bountiful feasts curated by the hotel's Banquet Chef James Wong, a veteran culinary specialist with four decades of experience in Asian and Cantonese cuisines. A staple for every Chinese New Year is the Lo Hei. This year Park Hotel Clarke Quay features the refreshing Prosperity Tuna Yu Sheng Platter. Instead of raw fish, it is substitute with tataki style tuna slices paired with a medley of white and green radish and carrot, purple cabbage, pickled vegetables, torch ginger flower, chiffonade of kaffir lime leaves.

I am quite familiar with the Superior Braised Fish Maw with Crabmeat and Homemade Stuffed Crab Claw. It is one of the chef's signature dish which I have tried before though he changes the accompanying ingredients. This year he replaces the shark fin with braised fish maw and crabmeat accompanied with plump crab claws made with prawn paste and crabmeat.

Steamed to perfection is the Steamed Red Garoupa with Yellow Bean Paste. The yellow bean paste enlivens the celebrative dish a new change from the usual Cantonese or Teochew style.

Fragrant Crispy Duck 4/5

The Fragrant Crispy Duck is inspired by the Cantonese 'Heung Song' duck. Chef James first marinated the duck with spices such as cinnamon stick, star anise, Sichuan peppercorn, ginger juice, and hua diao wine, then steamed till soft and tender. For the finishing touch, the duck is coated in a batter and deep-fried. The crispy and tender duck is complemented with sides of tangy achar and duck jus.

Braised Sea Cucumber, Fish Maw, Baby Abalone with Broccoli 4.2/5

Somewhat like a mini Pen Cai is the Braised Sea Cucumber, Fish Maw, Baby Abalone with Broccoli. Though these are individual delicacies, the delicious sauce binds them together excellently.

The Salted Egg Yolk Golden Tiger Prawn are tossed in a coat of auspicious golden sauce of salted egg yolk with butter, garlic, and curry leaves. It is so delicious that I ate it together with the deep-fried crispy shell.

Steamed Fragrance Rice in Lotus Leaf with Duck Meat and Chinese Sausage 3.5/5

I understand the chef wants to give diners a healthier choice; hence he chooses to steam the rice instead of stir-frying it. However, I find the Steamed Fragrance Rice in Lotus Leaf with Duck Meat and Chinese Sausage lacked the stir-fried aroma. I guess I still prefer it being stir-fried.

Crispy Durian 4/5

Last but not least, we end our dinner with Crispy Durian. Encased in the crispy batter is the pungent durian which comes in lava form. It is as if I am having a molten chocolate cake.

Celebrating the holidays in style, Wolfgang’s Steakhouse Singapore has unveiled a new NYC-Inspired Christmas Set Menu and Christmas Brunch, which showcases a variety of typical brunch favourites and festive additions.

Available from 24 to 27 December, the Christmas Set Menu (S$188 per pax, min 2 pax) includes a light starter of Beverly Hills Chopped Salad and Crab Cake, followed by USDA Prime Porterhouse Steak, accompanied by succulent Honey Baked Ham, Pumpkin Mashed Potato, Brussel Sprouts with Bacon, and Vichy-Style Carrots. Homemade Carrot Cake completes the feast.

We tried the Beverly Hills Chopped Salad and Crab Cake, which is part of the Christmas Set Menu. The crab cake is loaded with fresh crab meat and cooked to fork-tender perfection. Served with a side of chopped salad to boot.

Before proceeding to the brunch menu, you can bring up the festive spirit with their special festive toasts such as the Sleigh Bells ($28). The beautifully decorated drink comprises a sweet combination of tequila, Cointreau, cranberry and lime. Catering to those hoping to stay sober over the season, the team have also created two special mocktails, the Jolly Zest ($18) and the Gingerbread Eggnog ($18).

From the Christmas Brunch Menu, we had the Steak and Eggs ($45) consisting of 100% USDA Prime Black Angus Striploin, cherry tomatoes and creamy scrambled eggs. The juicy and succulent piece of steak is excellent on its own, even without any complementing sauce.

Not to be missed is the Wolfgang's Eggs Benedict ($30) - an elevated version of your usual eggs benedict which features 100% USDA Prime Black Angus Petite Filet Mignon on fluffy English muffins, and poached eggs with creamy hollandaise atop. As one of the most prized cuts of meat, the Filet Mignon is juicy and has a more tender and buttery texture as compared to the rest of the cuts. It paired perfectly with the creamy flowy eggs.

Apart from the steaks, Wolfgang Steakhouse does great pasta too. We had the Angel Hair Pasta ($28) with scallop, salmon roes and caviar.

Ginza Shinto @ Mohamed Sultan Road - A New Contemporary Japanese Sushi & Omakase Establishment by Chef Ron Newton Leo

Ginza Shinto is a newly opened contemporary Japanese Sushi and Omakase restaurant, nestled in one of the shophouses on Mohamed Sultan Road. Helmed by Chef Ron who has over 30 years of sushi counter experience under his belt, he sources produce from Toyosu Fish Market in Tokyo to the markets in Hokkaido and Osaka depending on the season’s best. As such, the omakase menus change biweekly according to the seasonality of ingredients.

Sweet Cherry Tomatoes from Japan with crisp Ice Plant 3.5/5

Our dinner started off with Sweet Cherry Tomatoes from Japan accompanied by crisp ice plant with truffle oil. The ice plant gets its moniker from its cool frosted look, with crystalline beads covering its stems and leaves. Crisp and crunchy, it went really well with the juicy and sweet Cherry Tomato. With such fresh and delicate flavours, just a sprinkle of salt may do more justice to the ingredients than drizzling them with sesame sauce and truffle oil.

Amaebi topped with Uni, fresh Ikura and Caviar 4.2/5

2nd course was Amaebi topped with Uni, fresh Ikura and Caviar. The creamy uni was like a salted butter that melted over the sweet and almost crunchy amaebi, which was further flavoured with a burst of savouriness from fresh Ikura and Caviar. The herbaceous oba leaf not only added a dimension of aroma but also helped to balance out the brininess of the ingredients.

Flame-seared Hotate wrapped with Nori, and Botan-ebi 4.8/5

The next course was Flame-seared Hotate wrapped with Nori and Botan-ebi. The plumb and sweet Botan-ebi left a lasting impression on my taste buds that night. Its counterpart hotate echoed a similar satisfying crunch.

Kanpachi, Toro and Dashi-rolled Hirame 4.2/5

For Sashimi course, we had Kanpachi, Toro and Dashi-rolled Hirame with fresh Hanaho. The toro here was one of the finest I had tried. But other than the fresh ingredients, what I appreciate is that Chef Ron actually took the effort to teach his diners how to appreciate Hanaho. I always find it a pity to see people chucking it, and oba leaves aside as simply garnishes.

Miyazaki A5 Wagyu 4.5/5

Next up we had Miyazaki A5 Wagyu with a raw quail egg yolk and homemade beef sauce (consume by mixing the egg yolk in the beef sauce before dipping the beef in). Mine had been seared to perfection, rendering just enough fats to release its flavours.

Kanpachi Aburi with Bonito Flakes 4.2/5

The Sushi course reflected Chef Ron's creative take in contemporary Japanese dining. Kanpachi Aburi with Bonito Flakes was flavourful on its own without any dipping sauce, thanks to the savoury Bonito Flakes that was made in house. This extra touch also added an interesting dimension to the bite.

Aburi Amaebi with Foie Gras 4.5/5

Next sushi was my favourite of the evening - Aburi Amaebi with Foie Gras, sprinkled with grated yuzu zest. Torching the foie gras which melted over the amaebi, what surprised me was the hint of pepperiness exuding from the foie gras spread, which sang in harmony to the sweetness of the amaebi. The Aaburi amaebi had taken on a firmer texture, which made the sushi even more luscious and mouth-filling along with the fats lent from the foie gras.

“Forget Me Not” 3.8/5

“Forget Me Not” Nigiri Sushi is one of the restaurant's signatures. Focusing on textural contrast, in between the sushi rice and the top layer of fatty negitoro and creamy uni, Chef Ron inserted a layer of mini roasted, crisp rice puffs. That not only gives that desirable crunch, but they also release a nutty aroma to the sushi. However, I find the ingredients rather separated as the ingredients were gone much faster than the sushi rice itself.

Mini Ikura Uni Don 3.8/5

We also had a Mini Ikura Uni Don. What stood out other than the fine ingredients is the rice underneath, which has mini rice puffs mixed into it to provide that nutty flavour and textural contrast. However, with Ikura as the main ingredient, it got quite saltish towards the end. In conjunction with the grand opening, there is a Lunch Special, featuring a more luxurious version - $35 Negitoro Ikura Uni Don (U.P. $55). Each rice bowl will be served with a side of chawanmushi and miso soup. The Grand Opening Special is only available for dine-in during lunch from 12 October 2020 onward, while stocks last.

Botanebi Miso Soup 3/5

Dinner ended with a bowl of Botanebi Miso Soup with seaweed, tofu & egg. It was quite saltish, but the addition of fluffy egg helped to ease that out a little.

There are three omakase menu selections for dinner with a 5-course ‘Gin’ Menu at $150, 8-course ‘Ginza’ Menu at $220 and 9-course ‘Shinto’ Menu at $300. Otherwise, you can also go for Chef’s luxe tasting menu for lunch with the 7-course Mini Kaiseki menu ($65) that comprises of an appetiser, sashimi, yakimono, mushimono, sushi, soup and dessert.

Located at The Pier at Robertson is a new Chinese Restaurant, Tang Lung (唐龍) that offers Chinese Cuisine from various regions with a modern twist. It is an exciting dining option for the area as there isn't really any Chinese cuisine selection at Robertson Quay. Its opening complements their sister restaurant Le Fusion a few doors away.

For dim sum lovers, you will be delighted to know that Tang Lung is offering All-You-Can-Eat Dim Sum Buffet every Sundays from 3 to 5pm, priced at $26.80 per adult and $16.80 per child aged 6 to 12 years old.  For the month of October, one diner gets to dine free for every two paying adults for the Free Flow Dim Sum Buffet.  Each diner is entitled to a bowl of freshly made to order Chinese la mian noodles and can order unlimited dim sum.

Customers can look forward to dim sum creations such as Truffle Mushroom Crystal Dumpling ($8.90 for 4pc), Pork Siew Mai with Salted Egg Yolk ($7.90 for 4pc), and Pineapple Char Siew Tart ($6.90 for 3pc).

Truffle is added to the mushroom crystal dumpling for an elevated earthy aroma on top of its textural enjoyment. A surprise burst of salted egg yolk is nestled within the pork siew mai. A re-interpretation of the polo baos into a pineapple char siew tart. All these creations, give the same old dim sum staples, a new lease form of enjoyment.

Deep-Fried Soon Hock in Superior Soya Sauce 4/5

Besides the creative dim sums, you can also find classic dishes such as the Deep Fried Soon Hock in Superior Soya Sauce. Deep-fried to crackling crispiness, while preserving the freshness of the meat within, rounded off with Tang Lung's special superior soya sauce.

Steamed Flower Crab in Shaoxing Wine 4.5/5

A star dish at Tang Lung is the Steamed Flower Crab in Shaoxing Wine. Two flower crabs lie on a bed of vermicelli noodles, soaking up the delicious sauce. The sweetness of the flower crab is further enhanced with the addition of fermented rice, spiced Shaoxing wine and chicken oil.

Steamed Glutinous Rice with Crab Roe 4.5/5

Be prepared to wait for at least half an hour for the Steamed Glutinous Rice with Crab Roe. You will not regret it. The glutinous rice is mixed with shiitake mushrooms, shredded dried scallops, and yellow crab roe, steamed together with the crabs inside a cheesecloth, imparting an umami taste to the rice.

Braised Sea Cucumber with Mushroom in Chinese Herbs

A highlight at Tang Lung is the nourishing Braised Sea Cucumber with Mushroom in Chinese Herbs ($68). It is cooked with ingredients that have medicinal properties such as Chinese angelica root, black sea cucumber and Chinese yam root. The best part is actually the tasty broth that is the essence of the pot of treasure. It is best to drench the broth onto a bowl of steamed rice and have it together with the rest of the dishes.

Gabbar Bistro & Bar @ Clarke Quay - Spinning To A Mix Of Bollywood Music And Scrumptious North Indian Cuisine

Gabbar Bistro & Bar is a fairly new modern Indian bistro bar located at Clarke Quay. Its live Bollywood music performances often draws huge turnouts, where diners get to experience an international DJ spinning the latest Bollywood and Punjabi mixes over an extensive selection of drinks which includes wines, cocktails and Single Malts. However, customers return to Gabbar time and time again not just for its music, but to satisfy their cravings for a scrumptious North Indian cuisine.

Lamp Chops (tasting portion) 4/5 

The Lamb Chops here wins the hearts of the Indian diasporas and locals alike. Its mouthwatering aroma delivered my expectations. Marinated for 12 hours with hung curb and spices, the meat was succulent, tender, and flavourful with just the right amount of spices. For a drink and a quick bite, this serves equally good as a bar bite too.

Surkh Laal Chicken, Tikka Fish Amritsari and Hariyali Chicken (tasting portion) 4/5

From the tandoor, we tried Surkh Laal Chicken, Hariyali Chicken and Tikka Fish Amritsari. The reddish Surkh Laal chicken was punchy with spices with a tinge of heat. The Hariyali Chicken didn't lose out either with its well-seasoned, creamy spinach marination. I have had quite a few unpleasantly dry and bland Fish Tikka before, but the version here was moist and flaky.

Dal Makhani (tasting portion) 3.5/5

Dal Makhani is a comfort food, and also quite nutrient-dense with beans and black lentils. I would have liked it even more if it is slightly more tomatoey to have some tartness to balance the richness of it.

Assorted Naans (tasting portion) 4/5

Options aplenty for naans. We tried Roti, Tumeric, Olive and Cheese, Garlic, Butter and a Lachha Parantha. Each of them was soft and fluffy, but if you can only choose one, go for the Olive and Cheese naan for that full-bodied flavour.

Chicken Biryani 3.8/5

Chicken Biryani is a great option for a quick lunch. It seems like a basic dish, yet there is complexity in the use of spices and the way the rice is being cooked and put together with the meat. Mine was packed full of flavours but not too overwhelming with aromatics and spices. Hidden underneath the pile of fluffy basmati rice is load of tender chicken cubes.

Paan Ice Cream 4.8/5

If you visit Gabbar, do go for its Paan Ice Cream. Made with betel leaves, the sweetness and milkiness were at the right amount to mellow down the sharp herbaceous flavours of the betel leaves. The spiced and nutty topping intrigued my taste buds in every bite. It was such a unique and delicious ice cream, I strongly encourage you to give it a try.
