UMAI Artisanal Udon Bar @ Guoco Midtown - Exploring Japan’s Udon Traditions In One Spot

Umai Artisanal Udon Bar has been one of my go-to places for satisfying my udon cravings. The udon speciality restaurant offers four types of udon, each showcasing the unique textures and characteristics of various prefectures across Japan. The lineup includes Hoto, Sanuki, Himokawa, and Hippari, allowing diners to experience how dramatically udon can differ across regions.

Himokawa Udon with Niku Shabu 4.5/5

I have long wanted to try the Himokawa Udon, known for its exceptionally wide, ribbon-like noodles that resemble long, fluttering sheets. We went for the Himokawa Udon with Niku Shabu, served cold with a rakkayaki peanut dipping sauce. Dipping the delicate, silky noodles into the creamy, nutty sauce accentuates the udon’s smooth texture, allowing it to absorb flavours beautifully. The accompanying tender shabu-shabu slices add a savoury depth, complementing each slurp. We ordered the set, which comes with assorted tempura coated in a thin, crisp batter. It is light yet satisfying.

Smokey Kurobuta 4.2/5

For the Sanuki udon, we tried the Smokey Kurobuta, a dry-style preparation infused with the aroma of smoked Kurobuta pork. Sanuki Udon, the most famous style from Kagawa Prefecture, is known for its firm, bouncy chew and clean, square-cut strands, and it holds up well to the smokier, more robust flavours of this dish. The combination is simple yet enjoyable, highlighting the strength of quality noodles paired with premium pork.

Spicy Carbonara 4.2/5

A more flavour-forward option is the Spicy Carbonara, which we paired with the Sanuki udon for maximum chewiness. Creamy with a fiery kick, this dish quickly becomes addictive. Adding to its indulgence is a whole slab of black pork samgyeopsal, making it a substantial and complete meal. Jeju black pork is prized for its richer flavour, firmer texture, and juicier fat compared to regular pork, all of which shine through in this hearty plate of noodles.

Yakibuta Tonkatsu 4.2/5

For something more comforting and hearty, we had the Yakibuta Tonkatsu, paired with Hippari Udon, a style originating from Yamagata Prefecture. This bowl comes loaded with a slab of black pork samgyeopsal, stir-fried pork, vegetables, and noodles simmered in a savoury tori-buta soup. The result is a robust, homely bowl that leans into rich pork flavours with a comforting broth, making it an ideal choice for those who want something warm and filling.

With its diverse selection of udon styles and satisfying range of flavours, Umai Artisanal Udon Bar stands out as a spot where diners can explore Japan’s regional noodle traditions without leaving Singapore. Whether you enjoy something light and delicate or rich and indulgent, there is always an udon bowl here that hits the spot.

Udon Shin @ Takashimaya - Tokyo’s Udon Specialist Opens First Overseas Outpost in Singapore

Fans of udon will be pleased to welcome Udon Shin, a renowned udon specialist from Tokyo boasting 14 years of experience. Its new outlet at Takashimaya marks the brand’s first international debut, bringing its beloved handmade noodles out of Japan for the very first time.

Since 2011, Udon Shin has drawn long queues at its Shibuya store, thanks to its fresh, chewy udon made entirely in-house. The brand stands by its “Four Fresh” philosophy - freshly kneaded, freshly cut, freshly boiled, and freshly fried.

Every bowl features noodles crafted daily for that signature firm, stretchy bite, while all tempura items are fried to order.

The Singapore menu offers a wide selection, from simple hot or cold udon to tempura sets, unique flavour combinations, and even customisable build-your-own bowls.

A few interesting creations that caught our attention include the Butter Shoyu Tamago Udon ($12), Tempura Cheese Butter Udon ($26) and Yuzu Wagyu Kake Udon ($42).

The space is casual and cosy, complete with an open kitchen where diners can watch the entire udon-making process from dough to bowl.

Carbonara Udon 4.2/5

The Carbonara Udon ($24) is Udon Shin’s viral signature, and though we were initially unsure about how the combination would turn out, it worked surprisingly well. The base is udon cooked in dashi, topped with a rich mix of parmesan cheese, butter, spring onions, pepper and a raw egg.

Once stirred together, each chewy strand becomes coated with a creamy, buttery sauce that stays savoury without being too heavy. The indulgent thick bacon tempura was another standout, being crisp and non-greasy.

Premium Tempura Kake Udon 4.2/5

Next was the Premium Tempura Kake Udon ($34), featuring hot udon soup paired with an assortment of tempura: two shrimps, four types of vegetables, fish and squid.

The udon once again delivered the perfect chew, while the broth offered deep umami, though it may definitely lean more salty for some. Among the tempura pieces, the tender salmon and large juicy prawns were my favourites.

Tempura Zaru Udon 4.2/5

Cold udon lovers should try the Tempura Zaru Udon ($28), which comes with two shrimps and four vegetable tempura pieces. Served on a bamboo tray with chilled dashi dipping sauce, the udon felt extra bouncy and refreshing when eaten cold. The tempura was fried just right once again.

Ikki Izakaya @ The Metropolis - Japanese Comfort Food with a Local Twist

Tucked away at The Metropolis in Buona Vista, Ikki Izakaya is a modern Japanese-style izakaya that impresses with its expansive space, high ceilings, and laid-back yet contemporary atmosphere. Despite being around for eight years, it still feels like a hidden gem — offering a solid lineup of Japanese comfort food alongside an impressive selection of alcoholic beverages. Whether you're looking to wind down after work or catch up with friends over bites and booze, Ikki delivers an easygoing, fuss-free dining experience.

Spicy Maguro Poppers 4/5

We started the meal with the Spicy Maguro Poppers ($9.80) — a fun and flavourful bite served in crunchy pie tee cups. Inside, you'll find cubes of tuna sashimi marinated in gochujang, sitting on a creamy avocado base and topped with tobiko for that extra savoury burst. It's spicy, creamy, crunchy — all in one mouthful — and a great way to whet the appetite.

We also tried the Tofu Crisps ($9), a simple yet addictive snack that substitutes fries or chips with thin, crispy tofu skin. While not particularly bold in flavour, it's a satisfying vegetarian-friendly option that goes perfectly with a cold pint.

One of the standouts for the evening was the Ikki Maki ($17.70), a rich and indulgent sushi roll that hits all the right notes. Cream cheese, avocado, and mentaiko sauce form the core of the roll, wrapped and topped with aburi salmon, mini fish roe, and a dusting of seaweed powder. Each bite is creamy, smoky, and umami-packed — a roll that's clearly earned its signature status on the menu.

IKKI's Kick Ass Har Cheong Gai Curry Udon 3.5/5

Adding a local twist to Japanese fare, the IKKI's Kick Ass Har Cheong Gai Curry Udon ($16.50) offers a unique blend of flavours. The creamy Japanese curry base is comforting and fragrant, served with a crispy chicken cutlet marinated in traditional prawn paste. While the concept is fun, the execution was slightly off during our visit — the seasoning leaned too salty, which overwhelmed the dish's otherwise enjoyable components.

SPAM Kimchi Fried Rice 4/5

For something more comforting and hearty, the SPAM Kimchi Fried Rice ($12.80) hits the mark. The fried rice is smoky and robust, filled with the punchy flavour of well-fermented kimchi and balanced out by soft, sweet tamagoyaki and pan-fried spam slices. It's the kind of dish you'd want after a long night out.

Ikki's Tsukune Platter 3.5/5

We ended with Ikki's Tsukune Platter ($16.80), featuring five yakitori-style chicken meatballs glazed in a different sauce: Mentaiko, Gochujang Miso, Okonomiyaki, Cheese, and Original. The platter makes for a great sharing dish, offering variety in flavour, though some combinations stood out more than others. Still, it's a fun and interactive way to sample different seasonings, especially with drinks.

Overall, Ikki Izakaya feels like a well-kept secret. It blends local influences with Japanese izakaya vibes in a relaxed and spacious setting. Whether you're in it for the drinks, the creative fusion dishes, or just a chill place to hang out, Ikki Izakaya checks all the right boxes.

A true showstopper, the Double-boiled Buddha Jumps Over the Wall was an absolute delight. Made with premium ingredients such as abalone and matsutake mushrooms, the soup was rich, nourishing, and deeply flavourful. The dish showcases the essence of luxurious Chinese cuisine.

For another indulgent treat, the Braised South African Whole Abalone with Truffles and Crispy Sea Cucumber delivered in both flavour and texture. The succulent abalone was beautifully braised in a luscious sauce, while the crispy sea cucumber — coated in a delicate batter — added an exciting contrast of textures.

One of the most talked-about dishes of the night was the Baked Lobster with Butter and Signature Homemade XO Chilli Sauce. The rich, umami-packed XO sauce elevated the sweet, juicy lobster meat, which had everyone at the table raving. The butter infusion added a layer of indulgence, making this dish a definite highlight of the meal.

A unique and unexpected addition to the menu was the Stewed Inaniwa Udon — a departure from the usual rice or noodle dishes found in Chinese restaurants. The silky, delicate udon absorbed the essence of the fish maw, scallops, and barbecued duck, creating a luxurious and well-balanced dish. Though the udon stood well on its own, the addition of premium ingredients elevated the overall experience.

We also had the Gold Ingot Cake coated with Finely Ground Nuts and Shredded Yam. Though simple in appearance, the nian gao was exceptionally delicious, with the nutty crunch and yam shreds adding layers of texture and flavour, making it surprisingly enjoyable.

Hai Tien Lo’s Chinese New Year menu is an extravagant and well-crafted feast, perfect for celebrating with family and loved ones. Standout dishes include the Double-boiled Buddha Jumps Over the Wall, Baked Lobster with XO Sauce, and Braised South African Abalone. With its meticulous execution and premium ingredients, the restaurant continues to be a top-tier choice for a luxurious Lunar New Year celebration.

We started with the Applewood Smoked Negitoro Kway Pie Tee with Tobiko ($18.90). The Kway Pie Tee shell was perfectly crisp, offering a satisfying crunch that paired well with the luscious filling. However, the amount of sauce in the Negitoro filling was slightly cloying.

Both the Cauliflower Poppers ($9.90) and Spicy Smashed Potatoes ($6.90) shared a strikingly similar flavour profile with the Kway Pie Tee, likely due to the creamy, mayo-based dressings — mentai mayo for the former and a chilli mayo sauce for the latter. As with the Kway Pie Tee, a lighter hand with the sauce would have improved the dishes. The potatoes were tasty with just the furikake.

The Hotate Ceviche ($19.90) stood out with its refinement in both presentation and taste. Thinly sliced scallops were elevated by a scallion ponzu sauce that brought a delicate, balanced acidity and savouriness to the dish.

For mains, the Unagi Chazuke ($19.90) was delightful. We first steeped jasmine tea leaves with hot dashi, creating a fragrant jasmine-infused broth that was then poured over grilled eel and Japanese rice. After the rich flavours of the appetizers, this felt wholesome and nourishing. The subtle jasmine aroma lifted the dish, and the rice was firm and pearly, perfectly carrying the dashi.

In contrast, the Carbonara Udon ($16.90) leaned heavily toward indulgence. The cheese mayo sauce was rich and creamy, but thankfully, the al dente udon provided a pleasant chew and held the sauce well. Due to its richness, it's a dish best shared.

A Beautiful Day Café & Tea Room also offers an impressive tea selection, including CoffTEA (a tea-coffee hybrid akin to Yuan Yang), Teatails, and Camellia Premium Rock Tea Series. We tried the Kiwi Tie Guan Yin Tea, a refreshing blend of fruit juice and tea that paired well with the bold flavours of the dishes. We tried the Hokkaido Scallop Aburi and the inventive Ikura Negitoro Pie Tee to kick off our meal. We found the Pie Tee especially delightful, priced at $17 for two pieces each. The crispy shell filled with fresh minced tuna was visually appealing and offered a satisfying crunch and burst of flavour.

Moving on to the next course, the Charred Brussels Sprouts ($9.50) arrived, infused with kombu butter. While the charred flavour added depth, it slightly overpowered the kombu, making it more of an accompaniment to drinks. The Foie Gras Chawanmushi ($18.50) was the highlight. This velvety custard, dotted with ingredients like crab meat and camembert, was topped with a sesame-crusted piece of foie gras. It is on the expensive end but definitely an indulgent experience.

Next up were two fried dishes: the Gold Dust Charcoal Chicken ($14) and Tempura Cauliflower ($9.50). The chicken was crispy outside and juicy inside, paired with a tangy tartar-like sauce, though a more robust marinade could have elevated it further. The cauliflower was a fun twist on a classic, topped with furikake for added flavour. We would have loved a dipping sauce and a bit more crunch on the cauliflower, as the ones we had were a tad soft.

The Dashimaki Tamago with Mentaiko combined fluffy Japanese egg with creamy mentaiko. The salty mentaiko and tobiko topping made for a bold contrast, though a touch more sweetness in the tamago would have created a better balance.

We had high hopes for the Charred Ebi with Burnt Butter ($29), but the two prawns felt a bit steep in price for the portion size. The baguette pieces that accompanied it were intended for dipping but could have been softer. Adding extra bread for $1.50 may be helpful for those looking for a heartier bite.

From the grill, we got a selection of skewers, including Tori Momo (Chicken Thigh) ($4.50), Miso Glazed Butabara (Pork Belly) ($5), Asparagus ($4), and Smoked Duck with Salsa ($6). While each skewer was well-marinated and tender, we found ourselves wishing for more of that quintessential smoky char. The Yuzu Glazed Char-Grilled Pork Jowl stood out for its fatty, tender texture, but the flavours didn’t quite hit the mark - the marinade leaned slightly sweet, and the tartness of the yuzu didn’t come through as much as expected.

We tried two types of udon for our final dishes: the Mini Cold Udon with Seasonal Truffle ($11.50, $22 for full portion) and Smoked Duck Carbonara Udon ($13). With its bold truffle aroma, the cold udon was a refreshing palate cleanser after the richer dishes and came in a convenient mini size. The carbonara udon, on the other hand, had a lighter cream sauce that, while less heavy, lacked a distinctive carbonara richness. The cheese slices didn't add much to the presentation, giving the dish a less refined feel.

Nomiya offers izakaya sets for 2-6 people starting from $139, making it a great spot for small gatherings. Their extensive selection of Japanese drinks adds to the lively and trendy atmosphere, with upbeat music (which can be a bit loud) and attentive service. With limited seating, including outdoor tables and bar seats, Nomiya is a vibrant destination for a night out in Chinatown.
