Sláinte @ Paragon Shopping Centre - Café By Day, Whiskey Bar By Night

Located in Paragon Shopping Centre, Sláinte offers a distinctive experience that seamlessly transitions from a cosy café by day to an elegant whiskey bar by night. The menu presents brunch favourites in the morning and charcoal-grilled specialities by evening, with an impressive selection of auction-sourced whiskies that elevate the night experience.

Boxty 3.5/5

One unique dish from the breakfast menu was the Boxty ($19.90) — an Irish potato pancake paired with crispy bacon, scrambled eggs, and crème fraîche. The chunky bacon was savoury, smoky, and nicely charred, complementing the buttery richness of the potato pancake and the eggs. While deliciously buttery, the pancake could benefit from a crispier exterior, as some portions felt a bit soggy. The crème fraîche was more of a sweetened yoghurt, which didn't quite complement the dish as a crème fraîche should.

Ayam Bakar 4.5/5

Sláinte's main courses are charbroiled over applewood, imparting a distinct smokiness. The Ayam Bakar ($24.80) is a must-try — spatchcock chicken marinated overnight. The chicken was juicy and tender throughout, with even the breast meat retaining succulence. Served with a brown sauce and house-made chilli, the dish was flavourful enough to enjoy on its own.

Pulpo a la Plancha 3/5

Another grilled speciality we tried was the Pulpo a la Plancha ($34.80) — a slow-charcoal-grilled octopus leg accompanied by fried onions, mashed potatoes, and grilled vegetables. While the dish was enjoyable overall, some parts of the octopus were slightly off in texture, leaving room for improvement.

Wood Fired Marshmallow 4/5

For dessert, the Wood Fired Marshmallow ($19.80) offered a hands-on treat. After roasting the marshmallow over the fire, we dipped it into salted chocolate ganache and then into crushed pistachios, a fun and satisfying end to the meal. The extensive drinks menu showcases rare auction-sourced whiskies alongside a broad wine selection.

Avery Shake

For non-alcoholic options, the milkshakes are a must-try; the Avery Shake was particularly rich, featuring avocado, berries, and milk. Their coffees, brewed from Allpress Espresso beans, are equally noteworthy.

This expansive haven features a well-operational bar, a meticulously curated wine cabinet, a cutting-edge sound system, a communal dining table, and sumptuous loungers, creating an intimate space for up to 14 diners. Introducing a novel concept, The Spread ($329++ per pax) is an exclusive menu meticulously crafted solely for this distinguished venue.

Our dinner began with a trio of exquisite snacks. With their briny essence, the Rock Oysters were paired with a smokey chipotle chutney, yuzu juice, and moilee espuma, creating a sea-inspired overture. The Burrata Tokri Chaat, nestled in a delicate tart shell, featured layers of soft cheese, sun-dried tomatoes, chimichurri, and caviar, a harmonious medley of flavours. Completing the trio, the Prawn Balchao Monaka, a Goan-inspired delight, balanced the sweetness of prawns with a spicy and sour paste.

Japanese Hamachi, Pickled Daikon "Pani Puri" 4.2/5

Next, we savoured the Japanese Hamachi with Pickled Daikon for the small plates, offering a Pani Puri-inspired twist. The Hamachi, known for its fresh and clean taste, was a canvas for the diverse array of flavours that followed. Each bite revealed a nuanced symphony – the buttery richness of the fish, the tangy notes from the pickled daikon, and the zesty finish that lingered, inviting another bite.

Anticipation hung in the air as the Whole French Turbot made its grand entrance, shrouded in the alluring aroma of spiced dust. The olfactory prelude promised a sensory extravaganza, yet the tasting experience fell short of the aromatic build-up. Although the fish exhibited exemplary texture — firm and moist — the expected infusion of spiced nuances remained elusive. Regrettably, the flavours of the fish appeared somewhat muted, lacking the aromatic depth anticipated from the tantalising spiced dust.

Stealing the limelight, the star was undeniably the Comte Kulchette, adorned with the richness of Black Perigord Truffles. The flatbread, baked to perfection in the tandoor, cradled a harmonious medley of flavours. Stuffed with comte cheese, truffle puree, stracciatella, mushroom confit, and a generous shaving of Black Perigord truffles, it delivered an exquisite interplay of textures and flavours that was nothing short of extraordinary — a symphony for the taste buds, creating an indulgence that transcended the ordinary.

The dinner at Revolver culminated in an extraordinary encore — the Saffron Cheesecake. The cheesecake redefined indulgence, boasting a molten, lusciously cheesy body that was nothing short of divine. The enchanting infusion of saffron added a regal touch, elevating the dessert to unprecedented heights. The cheesecake's crowning glory, a delightful biscuity base, provided the perfect foundation for the best cheesecake ever eaten.

Sea Buckthorn Marshmallow 3/5

The soft and pillowy Sea Buckthorn Marshmallow, a canvas of sweetness, was transformed into a sublime dessert by adding sea buckthorn. It imparted a delightful tartness, orchestrating a harmonious dance with the inherent sweetness of the marshmallow.

Hokey Poki @ FOMO Singapore - Build Your Own Japanese Bowls and Sushi Tacos

Hokey Poki is a new Japanese fusion stall offering Japanese bowls and sushi tacos at FOMO Singapore. For the Japanese bowls, guests have the choice of building their own bowl with choice of mains, base (rice, salad, quinoa or soba) and optional add ons. As for the sushi tacos, this is a fusion take of the Mexican tacos with Japanese ingredients.

Hokey Bowl - Salmon Poke 4.2/5

My first choice of the Hokey Bowl is the Salmon Poke ($10.90). I opted for the purple rice which is hidden beneath the pile of seasoned salmon cubes, jellyfish and mango cubes. I like the addition of the mango cubes, which gives it a refreshing finish as well as a textural enjoyment. Other mains on the hokey bowl menu includes Wasabi Mayo Chicken, Laksa Mentai Soft Shell Crab, Cheesy Chicken, Aburi Chirashi, Sambal Shishamo, Aburi Salmon Mentai, Cheesy Soft Shell Crab and Cheesy Prawns. For vegetarians, you can go for the Tofu Delight and Vegetarian Tempura.

The Sushi Taco ($5.90 for 1pc, $7.90 for 2pc) is an unique and interesting creation. We tried the Cheesy Prawn Taco and Aburi Salmon Mentai Taco. Replacing the tortilla shell is the seaweed cracker sandwiched with Japanese ingredients. The combination and pairing of the ingredients are well thought of. They are really fun and flavourful to eat.

Beside the two tacos I tried, there are other interesting taco creations such as Shishamo, Cheesy Soft Shell Crab, Lemongrass Mentai Soft Shell Crab, Lemongrass Mentai Chicken and Cheesy Chicken. On top of the Japanese inspired tacos, there are also Laksa Mentai Prawn, Otah and Sambal Soft Shell Crab influenced by our local cuisine.

S'mores Taco 2.8/5

There is even a dessert taco - S'mores Taco. The marshmallow is torched until melt, then it is sandwiched in between the seaweed cracker. Unfortunately I find the combination rather weird. It is also quite difficult and messy to eat.

Hokey Poki serves delightful build your own Japanese bowls below $12 which is reasonable priced. Not to forget the healthy choice of salad, quinoa and purple rice. On top of that, the sushi tacos are yummy and unique too.
