Riding on the success of Sol & Luna at CapitaSpring, 1-Group opens Sol & Ora on the rooftop of The Outpost Hotel on Sentosa, bringing the allure of the Mediterranean Sea and its unique coastal culture to the shore of Singapore. It is an all-day, all-occasion gastronomic destination set on the coast.

Greek 'Saganaki' Cheese 4.2/5

The cheese may look like a slice of pizza, but it's Greek 'Saganaki' Cheese ($23). The Kefalotyri cheese is pan-fried and drizzled with honey. Squeeze the accompanying lemon slice to zest up the enjoyment.

A tapas originating from Barcelona, the La Bomba ($18) comes in a ball-shaped Spanish-style breaded potato with minced chicken seasoned with Baharat, paired with housemade mayonnaise and spicy tomato puree.

Cavatelli Pasta 4.2/5

Cavatelli Pasta ($28) is also known as little hollows due to the hollow shape of the pasta shells. It is a popular pasta throughout Southern Italy. I like the shape of the past, acting as a reservoir for the delicious sauce for maximum enjoyment. It is cooked with caramelised red onions, squid, crab, Amalfi lemon zest, chopped spinach, and chopped anchovies to complement the delightful pasta's texture.

If you are okay with mushy texture, you will enjoy the Imam Bayildi ($18). The eggplant flesh is removed and cooked with tomato, coriander seeds, and cinnamon before refilling it back into the cavity. It is then oven bath in wine, tomatoes, and bay leaves before scorching over wood fire. It is then topped with crumbled Persian feta cheese and rocket leaves.

Seared Red Norwegian Salmon 4/5

Moving to the mains, we started with the Seared Red Norwegian Salmon ($32). The salmon is perfectly cooked to a moist, slight pink in the middle and crispy on the skin. It is paired with grilled fennel and Trapanese pesto and finished with lemon zest and shavings of bottarga.

Wood-fired Wagyu Bavette 4.2/5

Beef lovers will enjoy the Wood-fired Wagyu Bavette ($44). The Australian wagyu flank infused with smokiness is tender and juicy, paired with truffle sauce. It is served with marinated and semi-dried cherry tomatoes on the vine to cut the richness.

Sardinian Porcetto 4.2/5

Great for sharing is the Sardinian Porcetto ($78). The Spanish suckling pig is brined and steamed for 24 hours and then air-dried overnight. The result is flavourful succulent meat with crackling skin. It is served together with apple and pear sauce, accompanied by charred lemon and burnt Romaine lettuce.

For dessert, we had the Spanish Churros ($16), fried upon order and then dusted with cinnamon sugar and toasted pecan nuts. It is best enjoyed together with the chocolate dip.

Greek Bougatsa 4/5

As for the Greek Bougatsa ($14), the filo pastry is filled with custard cream, baked and then dusted with icing sugar and served with fresh strawberries and blueberries.

Jelebu Dry Laksa @ Vivocity - Popular Home-Based Dry Laksa Opens Physical Outlet

We first heard of Chef Renee's Jelebu Dry Laksa during the Circuit Breaker period for their popular home-based dry laksa that came with various toppings. After a pop-up collaboration last year, Tipsy Collective and Jelebu have joined hands to open their first physical space in Vivocity! Their menu has expanded further than laksa, with several dishes inspired by Chef Renee's family recipes.

Scallop & Otah Pillow 3.5/5

In the Scallop & Otah Pillow ($18/3pc), you have avruga caviar, torched Hokkaido scallop and otah mousse sitting on a crunchy nori cracker. The otah mousse was rich and spiced well, but we wished it didn't mask the scallops' sweetness as much.

Larb Moo on Perilla Leaf 4/5

The Larb Moo on Perilla Leaf ($18/3 Pieces) was the crowd's favourite. It's best eaten like a taco. The perilla leaf forms the base, with Thai-spiced minced pork, shallot, pickled cherries and crispy pork crackling on top. I usually find the taste of perilla leaves slightly overpowering, but here, you get a lovely minty freshness that complements the flavourful minced pork. It doesn't look like it, but this mouthful also packed a solid kick of heat.

Grilled Tiger Prawn Jelebu Dry Laksa 3.8/5

You can't miss out on trying the signature Grilled Tiger Prawn Jelebu Dry Laksa ($18). Unlike the usual thick bee hoon, Jelebu uses thin rice noodles simmered in a house-made laksa broth with an add-on of their secret rempah recipe.

The spice level here is moderate, and the flavours were surprisingly less rich than we expected. I prefer one that's stronger and richer in crustacean sweetness. The tiger prawns were torched to a smoky fragrance, but we were slightly disappointed with the mushy texture. However, we did enjoy the crunchy shrimp for added texture.

Duck Confit with Teochew Braised Risotto 4/5

The Duck Confit with Teochew Braised Risotto ($26) is inspired by Chef Renee's grandma's braised duck, featuring modern touches like an onsen egg and a bed of risotto while not forgetting the traditional elements like beancurd and a tangy chilli on the side. It's not like your typical risotto, as it boasts a softer and wetter texture, with distinct five-spice flavours that reminded us of kway chap and Teochew braised duck porridge. The duck confit was super tender and fell off the bone with ease.

Assam Barramundi Fillet 4/5

If you're looking for a sharing dish that pairs well with rice, the Assam Barramundi Fillet ($32) is a good option. The tangy assam curry sauce is fragrant with generous use of julienned ginger flowers and is paired with tomatoes, brinjal and lady fingers. The chunky fillet came tender with crisped skin, while the extra crunchy tau pok topping worked great for texture and soaking up the curry.

Kaya Goreng 3/5

For dessert, the Kaya Goreng ($12) features coconut ice cream, chocolate soil, salted peanuts and mini cones filled with kaya coconut mousse. The recommended way to have this is to scoop up some ice cream and have it topped on the cone. However, most of us found it sweeter than we would have liked and would prefer a better balance.

Crystal Jade Pavilion @ Vivocity - The Group's Third Fine-Dining Brand Opens At Vivocity

Occupying the former premises of Crystal Jade Dining IN, the restaurant has reopened as Crystal Jade Pavilion, the restaurant group's third fine-dining brand. It is located on level one at Vivocity, facing the picturesque backdrop of the waterway and Sentosa island.

Chilled Tomatoes, Chilled Homemade Tofu with Scallop, Deep-fried Mushrooms and Corn 4.2/5

We started with a couple of appetisers such as the Chilled Fresh Lily Bulb and Cordyceps Flower with King Oyster Mushroom ($13.80), Chilled Tomatoes with Roselle Plum ($10), Chilled Homemade Tofu with Scallop, Bonito Flakes and Perilla Leaf ($18.80) and Deep-fried Mushrooms and Corn with Salted Egg Yolk ($12.80). I can't put my finger on my favourite, because all of them are deliciously good.

Poached Scotland Bamboo Surf Clam in Prawn Broth 4.8/5

The Poached Scotland Bamboo Surf Clam in Prawn Broth ($26.80 per pax) is a unique soup offering if you are not looking for something different. The robust prawn broth is poured tableside into the bowl with fresh bamboo clam pieces, which are instantly cooked. Diners can choose to add condiments like julienne ginger, black fungus, coriander and deep-fried dough fritters to enjoy the soup.

Pan-fried Sliced Duck and Foie Gras with Crepe 4/5

The Pan-fried Sliced Duck and Foie Gras with Crepe ($18.80 per pax) is eaten like your Peking Duck. However, the version here has more textures, coming from the meaty slice of crispy-skin roast duck, pan-fried foie gras and crispy fried beancurd skin. To eat, wrap them up in a homemade crepe with julienne tomatoes, leeks, cucumber and refreshing butterhead lettuce.

Pan-fried Threadfin with Supreme Soya Sauce 4/5

Live seafood is available at Crystal Jade Pavilion too. A recommendation is their Pan-fried Threadfin with Supreme Soya Sauce ($58.80 for 600-700g). The firm and moist fish is deep-fried and then simmered in a superior soya sauce. However, diners must be careful as it has a lot of bones.

Great with a bowl of rice is the Fresh Chinese Yam with Sea Cucumber in Fragrant Spicy Sauce in Claypot ($42.80). It is a treasure pot of crunchy Chinese yam and spongy Australia sea cucumber in a tongue-tingling gravy.

On a lighter note, we had the Poached Choy Sum, Black Fungus & Cordyceps Flower in Chinese Ginger Wine ($24.80). The jade green veggies are steeped in a ginger wine broth.

The winsome Braised Duo Vermicelli with Pearl Abalone & Pork Belly in Abalone Sauce ($33.80) is a must-try. It combines fried beehoon and tang hoon coated in a braising liquid enriched with pork belly and abalone sauce.

Cheng Tng Sweet Soup 4.2/5

Brimming with quality ingredients such as peach gum, white fungus, ginkgo, dried longans, and lotus seeds is the Cheng Tng Sweet Soup with Six Treasures and Golden Luo Han Guo in Whole Fresh Coconut ($13.80 per pax). A light and refreshing dessert for a sweet finish.

Kwee Zeen @ Sofitel Singapore Sentosa Resort - Limited-Time Hawker Buffet On Magnifique Hawker Nights

Sofitel Singapore Sentosa Resort & Spa has collaborated with some of the best and well-loved local hawkers and brands to create a one-stop destination for the best local food across Singapore. In celebration of National Day, the Hawker buffet ($74++/pax) runs from 5 to 9 August 2022, featuring free-flow food from 15 hawkers, including:

While the Taste of Singapore will end on 9 August 2022, the stalls included in the hotel's Magnifique Hawker Nights Buffet line-up are still operating every Friday and Saturday from 12 August.

Each hawker stall has its own booth, and dishes are assembled on-site by the hotel's chefs with ingredients catered from respective hawker stalls. The booths span from the indoors to the outdoor area of Kwee Zeen restaurant.

We kickstart the buffet with a piping hot bowl of goodness from Legendary Bak kut Teh. The pork ribs are soft and fork tender, stewed in a robust broth of fragrant herbs and spices.

Next, we moved on to the Traditional Hainanese Curry Rice from Hong Seng Curry Rice. Messy but delicious, we piled the plate with the quintessential Pork Chop, Boneless Curry Chicken, Pork Belly and Cabbage before topping off everything with thick and luscious curry sauce.

One of my favourites is the laksa from Janggut Laksa. The trademark of the Original Katong Laksa was that the noodles were cut short and eaten with a spoon for the sake of convenience. As for the laksa broth, it was comforting, flavourful and light, even though it is not too spicy.

The Lor Mee from Ah Ma Lor Mee was also satisfying, with a flavourful and viscous gravy packed with a good amount of lor bak, white fish flakes, egg and fried meatball.

We had a bowl of dry meepok noodles from Li Xin Teochew Fishball Noodles. It is a comforting bowl of noodles with a springy texture. You can opt for the soup version as well.

The Nasi Lemak from Lee Wee & Brothers had all the quintessential ingredients fried chicken wings, otah, roasted peanuts, cucumber slices, ikan bilis and sambal chilli.

For beverages, we had the soya bean milk from Rochor Original Beancurd. It was cold, refreshing, and as good as I remembered it to be. While you are there, grab some of their traditional beancurd as well.

The buffet also includes other local delights such as the satay and chilli crab with mantou.

Dive into favourites such as the Sambal Squid, Braised Pork Knuckle, and Chef Nelson's rendition of the tender beef cheek rendang.

There is also small seafood on ice selection, including prawns, clams, black, gong gong, mussels, scallops, and yabby.

End your meal on a sweet note with a wide array of traditional Nyonya kuehs and desserts, such as the Kueh Lapis, Rainbow kueh and ondeh ondeh.

Not to be missed is the chendol from Old Amoy Chendol, which comes with shaved ice, red beans, pandan jelly, coconut milk and gula melaka. As it was a DIY station, we topped off our bowl with extra coconut milk, which has a strong taste but is not too overpowering, and gula melaka, which was fragrant and rich.

While $74++ may be pretty steep price to pay for free-flow hawker food, it is a great solution to sample the best of Singapore's hawker culture in one place without having the hassle of travelling to the outlets one by one. Moreover, with the hotel's aim to give featured hawkers a "platform to earn a sustained income with a long-term partnership", which allowed the hawker buffet to run from 12 August to the end of the year, we absolutely love the cause and support for our local hawker heroes!
