The brunch menu at Three Buns, available every weekend from 10am to 4pm, is a delightful fusion of classic brunch favourites and innovative twists. We tried the Blueberry Basics ($15), which features a generous stack of buttermilk pancakes, each layer light and fluffy, topped with a luscious wild blueberry compote and drizzled with organic grade A maple syrup. The pièce de résistance is the pairing with salted vanilla ice cream, a creamy and slightly savoury contrast that elevates this brunch dish to a level of pure indulgence.

Shrooms with a View 4.2/5

The Shrooms with a View ($18) centres around scrambled free-range eggs prepared to a silky and tofu-like texture, providing a unique and velvety mouthfeel. The eggs are expertly paired with sautéed diced garlic mushrooms, olive oil and zesty tomato salsa to brighten the dish with fresh and tangy notes. All this deliciousness is served atop crispy and chewy toasted sourdough, which provides a delightful contrast in textures.

The Chick It Out ($20) features similar creamy scrambled free-range eggs with a unique tofu-like texture. The star of the dish is the twice-cooked sakura boneless chicken thigh that is perfectly tender and juicy. The guacamole, olive oil, and tomato salsa add a creamy, rich, and zesty note, while the crispy toasted sourdough provides a hearty base.

Jason Four Cheese 4.5/5

The Jason Four Cheese ($27) is an indulgent masterpiece for burger enthusiasts. This signature burger boasts a decadent combination of flavours and textures, starting with a double beef patty made from 100g Tasmanian Vintage Beef Patties. What sets it apart is the special blend of four premium cheeses: VSOP Aged Gouda, Cave Aged Cheddar, Brie, and Mozzarella. The blend is expertly cooked down with Brewlander IPA to enhance the cheese infusion, creating a rich and intense cheese sauce that envelops the beef patties. The burger is further layered with double ketchup and three-island mayo, providing tangy and creamy elements that balance the richness of the cheese. All of these mouthwatering components are nestled inside a toasted demi brioche bun. The Jason Four Cheese burger is a flavour explosion that is both rich and intensely flavourful, making it a must-try for those seeking a truly indulgent and satisfying burger experience at Three Buns.

The Naughty Fries Jnr. ($10) is a delightful twist on loaded fries. They are generously coated with spiced béarnaise sauce and hot beef chilli, creating a contrast of creaminess and spiciness. The crispy fried shallots (bawang goreng) and Parmesan Reggiano cheese add crunch and richness, while the sesame seeds provide a nutty aroma. These fries have a curved potato chip-like shape perfect for scooping up the generous toppings. This dish is a flavour-packed and satisfying snack, ideal for those craving a combination of textures and bold flavours.

This dish was a harmonious interplay of flavours – the inherent sweetness of the bamboo clam beautifully danced with the robust pungency of minced garlic. The tender clam meat and the accompanying vermicelli soaked up the dish's essence, making every slurp a symphony of delectable flavours.

The iconic national dish, Singapore Style Chilli Crab cooked in a moreish sauce that has the right balance of sweet, spicy and tangy note. Using Sri Lankan mud crabs, the meat is sweet and meaty. Best to order some fried mantou to wipe up those delicious chilli crab sauce.

The parade of seafood delights continued with the Australian Lobster with Minced Garlic. Although sweet and tender, the lobster meat presented a distinctively firm and chewy texture, setting it apart from the Boston Lobster. The addition of minced garlic offered an aromatic punch, expertly complementing the lobster's natural sweetness.

Kubo Woodfired Kitchen @ The Pier at Robertson - Contemporary Restaurant Offering Woodfired Filipino cuisine

Drawing inspiration from Filipino cuisine, Kubo Woodfired Kitchen at The Pier at Robertson is a contemporary restaurant that redefines familiar and little-known dishes from the northern to the southern regions of the Philippines. Named after the thatched huts commonly seen in the Philippine countryside, diners get to witness and enjoy the full view of Kubo's custom-designed and built open kitchen with a wood-burning oven, cookstove, grill and smoker. Helmed by Chef Kurt Sombero, Chef Kurt welds his Filipino heritage and culinary techniques to create a menu that aims to make Filipino cuisine more accessible.

We started with some Snacks - Cassava Chips with Miso Dip, Honeycomb Tripe and Inasal Mid-Wing ($12). The first two are all about the crunch and creamy dips. Served with savoury hummus, the honeycomb tripe subverts our expectations of a typical tripe dish. Its crunch factor is unbeatable. My favourite is the Inasal Mid-Wing. Tender meat laced with a layer of smokiness from the wood fire, such simplicity embodies the beauty of woodfire cooking.

Grilled Prawns 3.8/5

Next up were dishes from Appertiser, among which Grilled Prawns ($24) have received much-raved reviews since the restaurant opened last year. Served with a punchy coconut sambal, bird's eye chilli and kaffir lime, the prawn boasted a mouthwatering meaty and creamy texture.

Pork Longganissa 3.8/5

Pork Longganissa is new to the menu, a refined version of an all-day Filipino breakfast classic with flavours reminiscent of chorizo. In Kubo, Pork Longganissa is made as a hamonado (pineapple sauce) naked-pork patty marinated in soy before topping with ikura and cured egg and served with toasted bread underneath. Unfortunately, while I appreciate the thoughts that went behind this dish, its saltiness is a bit overwhelming.

Sisig ($25) was a memorable dish. Originally served with rice, it is served taco style with flat bread here. There is so much to love about the rustic taste of the soft and fluffy flat bread done over the woodfire. The sizzling minced pork mixture naturally had bits of crunch from some charred bits, making it even more morbid.

Smoked Beef Tongue may look intimidating, but it tastes similar to beef brisket. It is also one of the highly recommended dishes at Kubo. Its tenderness with nicely seared exterior makes it a rare treat.

For mains, we had the restaurant's Signature House Aged Duck ($42) served fried and grilled, together with a new side Turmeric Banana Leaf Rice. The fried duck leg is very similar to a Duck confit, beautifully brown with fork-tender meat. The grilled portion had a much firmer texture and showcased an impressive layer of crispy golden-brown skin laced with a yummy layer of fats underneath. The accompanying sauce could do with some zest or acidity to cut the richness of this dish. The fluffy rice was homely and comforting and complemented the meat well.

For desserts, we had Halo Halo, which features the Philippines' very own Ube Sorbets (ice cream), alongside creamy coconut and torched meringue. While I enjoyed the textural play lent by the various toppings, its sweetness was too much for me. Leche Flan Bon Bon had an interesting smoked blueberry, but the flan seemed lost amongst the ingredients.

There are a couple of non-alcoholic drinks to try, such as Samalamig (coolers) like the Mango Float ($10) done in the Kubo way with roasted biscuits, mangos, smoked coconut cream and topped with a torched meringue and mango creme. Otherwise, Smoked Black Tea with Pandan Foam is an interesting option that taste akin to our local grass jelly drink.

Saketoshi is a newly opened modern izakaya located at UE Square Shopping Mall, offering exquisite sake and classic Japanese bar bites. It also has an alfresco dining area for guests that prefer to enjoy their sake outdoor with the night's cool breeze. On top of that, the sake bar allows customers to pay their bills with cryptocurrency.

We started with some Agemono to go with our drinks. The Amaebi Karaage ($15) is extremely addictively, sweet and crispy. The Ika Geso Karaage ($15) is also ideal for pairing with a couple of drinks. The portions for both bar snacks were huge too.

Elevate the experience at Saketoshi with the Uni Seaweed Tempura ($24 for 2pc), comprising fresh sea urchin perched atop a bed of seaweed tempura and juicy slices of otoro and garnished with a dollop of truffle caviar.

Scallop lovers will have a choice between the Scallop Ikura ($24) and Scallop Foie Gras ($48). The Scallop Ikura is deep-fried in a thin crusty coat, plump and juicy, topped with popping ikura. However, I thought it was slightly on the salty end.

As for the Scallop Foie Gras, while I enjoyed the beautifully pan-seared foie gras and scallop, the combination didn't come together as a dish. Instead, they are individually delicious on their own, paired excellently with the mentaiko sauce.

One of the crowd's favourites is the A4 Wagyu Steak ($48) that is given a quick kiss on the grilled for the appreciation of the beautiful full flavoured tender beef. Customers can also have it with salt on the side to enhance the taste profile.

Suppose you are still hungry and need something more filling. In that case, you can try the Aburi Engawa Donburi ($28), which features a flame-seared halibut fin atop Japanese pickles, ikura, pickled ginger and an onsen egg. The mild sweetness of the halibut is complemented by the crunchiness from the pickles, ginger and ikura for that extra textural enjoyment.

Saketoshi is unlike typical modern izakaya. Established by a group of crypto-investors, you can pay for your meals with cryptocurrencies at Saketoshi. In fact, its name is a witty play on the pseudonym for the elusive Bitcoin creator Satoshi Nakamoto.

This Christmas, Publico Ristorante at InterContinental Robertson Quay will be setting magical merriments in motion to bring the festive spirit back. Publico has put together a medley of delights and lavish feasts to celebrate the festive seasons from 1 December to 31 December 2021.

Kick-starting the dinner, I have the Publico Mulled Wine ($25), a celebrative drink usually served during winter around Christmas. Usually, it is served hot or warm, but what I had is chilled, lighter and more refreshing.

After the drink, I moved on to the Granchio Fritto ($22). The deep-fried soft shell crab with tomato aioli and tangy salsa verde rest on a bed of radicchio caesar salad. I enjoyed how the tanginess cut through the deep-fried softshell crab, giving it a freshening mouth bite.

Customers can go for the wood-fired Pizza Boscaiola ($30) for something more traditional. The pizza is layered with thinly sliced house-made Porchetta and further topped with porcini mushroom mozzarella, grated parmesan and red wine glaze.

OAt every Christmas feast, it is a staple to have festive roasts. The same is at Publico too. Diners can look forward to the Manzo Arrosto ($48). The charcoal-grilled angus beef tenderloin is complemented with a harmonious mix of crispy purple potato, sweet bell pepper tartare, balsamic mustard seeds, spicy horseradish salsa and red wine jus.

Wrapping up the dinner is the Publico Tiramisu ($15) which comes in a pot of sweetness. It is not too rich, and I like how the sponge fingers are moist with espresso.

Sabai Sabai Thai Private Kitchen @ Valley Point @ Fei Siong Group's First Thai Restaurant Concept

Fei Siong Group, known for offering affordable local and Malaysian hawker fare, is sailing into uncharted water with the group's first Thai restaurant concept, Sabai Sabai Thai Private Kitchen. The "hidden restaurant" is tucked within Valley Point inside the premises of Nam Kee Pau, giving patrons a cosy dining experience akin to dining right in a chef's home kitchen.

We started with two seasonal items on the menu - the Grilled Pork Skewers ($7.80 for 3pc) and Pomelo Salad ($11.80). I enjoyed the marination of the grilled pork skewers giving it a delish sweetness on top of the tender texture with a hint of smokiness. The pomelo salad is a refreshing and fruity starter to whet the appetite.

The boneless chicken leg wrapped in Thai pandan leaves is marinated in herbs and pure pandan juice. The Pandan Chicken ($11.80) is then steamed and deep-fried, giving it a crusty exterior while sealing within all the juices and flavour.

Tom Yum Thick Seafood Soup 4.2/5

My entry-level for a good Thai restaurant is their tom yum soup. The spiciness must not be watered down to cater for the local palate. Glad that the Tom Yum Thick Seafood Soup ($11.80) did not disappoint. It has all the characteristic tangy and spicy flavours of a good bowl of vibrant tom yum soup, teeming with fresh squid, slices of snakehead fish, a jumbo tiger prawn, straw mushrooms and cherry tomatoes.

Another Thai classic is the Phad Thai Prawn ($15.80). The kitchen uses rice noodles specially imported from Thailand. It is plumper and chewier compared to the local variety, offering a more satisfying bite. Their version is also wetter, which is quite different from my places.

Another seasonal dish is the Thai Flower ($9.80). It is my first time trying the ingredients with delightful crunchiness and sweetness, paired with silky tofu.

The Steamed Sotong ($19.80) is cooked perfectly to a beautiful tender and bouncy texture complemented by the punchy yet delicately balanced blend of lime juice, lemongrass, chilli padi, green chilli and garlic.

Claypot Jumbo Prawn & Crispy Pork Belly Vermicelli 4.2/5

The glass noodles for the Claypot Jumbo Prawn & Crispy Pork Belly Vermicelli ($26.80/ $44.80) are also specially imported from Thailand. The chewy rice noodles are flambeed in a wok and then transferred to a heated claypot to soak in the homemade peppercorn sauce. It is finally crowned with tiger prawn and coriander.

Wrapping up our dinner, we have Red Ruby for dessert. Interestingly, it even comes with chendol in a sweet coconut milk soup.
