Located in the heart of Clarke Quay, IL Clay Supper Club & Pizzeria is a stylish addition to the vibrant dining scene. This Neapolitan-style pizzeria and bar concept is helmed by renowned Naples-born chef Ciro Sorrentino, whose pizzeria Magherí in Italy earned a spot in the 50 Top Pizzeria Eccellente Italia in both 2022 and 2023. His restaurant in Ho Chi Minh City was also recognised in the 50 Top Pizza Asia-Pacific 2024 award. The supper club aims to bring the authentic flavours and ambience of a traditional Neapolitan pizzeria to Singapore, promising an exceptional dining experience.

What sets Neapolitan pizzas apart is their very thin base and a light, airy crust that puffs up around the edges. Neapolitan pizzas focus on the simplicity and freshness of the toppings, typically using San Marzano tomatoes and either Fior di latte or mozzarella di Bufala. The Regina Magherí ($32) is a testament to this tradition, featuring San Marzano tomato sauce, fresh buffalo cheese, pesto sauce, oregano, tomatoes pacchetelle, basil, and extra virgin olive oil. The combination of fresh, high-quality ingredients makes this pizza a must-try.

Another standout is the 6 Cheese and Honey Pizza ($55), which includes mascarpone cheese, fior di latte, smoked provolone cheese, pecorino cheese, gorgonzola mousse, and parmesan chips, drizzled with truffle acacia honey. This pizza offers a luxurious, creamy, and sweet experience. While the taste is exceptional, the price might be steep for some.

The Wagyu Beef Cube Skewer ($39), served with parsley salad, tuna sauce, and capers, was our first small plate. Though the beef cubes were slightly dry, the accompanying sauce was outstanding, making us wish for some bread to mop it up.

Next, we enjoyed the Burrata Tomato Agrodolce ($22), featuring a delicious ball of burrata paired with marinated peeled cherry tomatoes and gremolata oil. The creamy burrata and sweet tomatoes were a delightful combination, whetting our appetites for more.

Among the large plates we shared was the Sicilian Grilled Squid ($32), stuffed with saffron risotto and served with a chorizo peperonata sauce. While the bright chorizo sauce was delightful, the stuffed risotto's mushy texture was less enjoyable.

The other large plate, Antarctic Cod Fish ($46), was pan-seared and accompanied by apple onion relish, charcoal-smoked cauliflower purée, and pistachio crush. The simple execution highlighted the fish's freshness and buttery texture, cooked to perfection.

We had the Gelato Cremoso ($16), a unique champagne vanilla gelato with mascarpone cheese, honeycomb, and cookie crumbs for dessert. This refreshing and well-balanced dessert provided the perfect sweet ending to our meal.

Whether you're in the mood for excellent pizzas or seeking a new date night spot with a touch of glamour, IL Clay Supper Club is a great option. Personally, I would visit the place primarily for their pizzas and might skip the other items. Please note that pizzas are available for indoor dining only, daily from 12 PM to 6 PM, with the last order at 5 PM.

We kickstarted our dinner with the Kuju Kushima Oyster Mornay ($14 for 2pc), a delightful starter featuring plump and juicy oysters paired with wilted spinach and enveloped in a coat of reduced cream and grana padano. The dish elevated the briny oysters to new heights of richness and flavour.

Next up, the Chilled Crusted Bone Marrow ($24) impressed with its flavour profile, enhanced by the calabrese chilli and parmesan crust, which provided an added texture contrast. Served with grilled sourdough, it offered a satisfyingly indulgent experience.

3 Days Dry Aged Ribeye 4.5/5

Moving on to the star of the show, the 3 Days Dry Aged Ribeye ($82, 300g) sourced from Rioplatense, Argentina, stole the spotlight. Cooked to perfection at medium rare, the tender and flavourful meat showcased the intensification of flavours from the dry ageing process, retaining all its juiciness and richness. While accompanying sauces were available, I found sheer delight in savouring the steak with just a simple sprinkle of salt to appreciate its natural essence.

Full Blood Wagyu Flat Iron 4.5/5

The 2GR Black Label Full Blood Wagyu Flat Iron ($75, 220g) sourced from Queensland, Australia, was equally impressive. Despite being a flat iron cut, its high marbling score of 9+ promised a mouthwatering melt-in-the-mouth texture. Like the ribeye, it shone with its natural beefy flavour, requiring nothing more than a dash of salt to enhance its perfection.

Complementing the mains were sides of Ratte Potato Puree ($18), smooth, buttery, and creamy, dressed with arbequina EVO oil and chives, and the Roasted Honey Saffron Cauliflower ($16), boasting a hint of smokiness and char, balanced with a delightful crunch and spiced with dukkah for an aromatic finish.

To conclude the meal on a sweet note, the Cheesecake Crepe ($20) proved to be a showstopper. Flambeed tableside, the cheesecake crepe, accompanied by caramelized seasonal fruits, delighted the palate with its soft texture and perfectly complemented salted caramel sauce. It was a divine finale that left a lasting impression.

Wagyu X @ Club Street - The Rare Wagyu Crossbreed Available Chargrilled and Smoked in New Menu

Returning to Wagyu X on Club Street, I ventured to experience the exquisite Hokkaido wagyu crossbreed, renowned for its harmonious blend of Wagyu's buttery texture and Angus beef's robust flavour. Wagyu X has elevated their offerings with a new menu featuring beef chargrilled over binchotan charcoal and infused with the subtle, fruity essence of Sakura wood smoke, imparting delightful cherry notes to the dish.

I began with the Amuse Bouche — a delicate ensemble of tender Wagyu slices enveloping enoki mushrooms. This prelude offered a tantalising preview of the exceptional quality and flavour awaiting me.

Following suit was the Wagyu Carpaccio ($42) — a sublime creation boasting paper-thin slices of wagyu adorned with a drizzle of truffle oil and garnished with arugula and parmesan chips. Each bite was a symphony of umami flavours, celebrating the purity of Wagyu in its most pristine form.

Introducing a refreshing starter to the menu, the Chilled Truffle Somen with Scallop ($26) presented a harmonious blend of flavours. Delicately tossed in truffle kombu sauce and garnished with ikura, this dish offered a delightful juxtaposition of textures and an irresistible burst of flavour.

The pièce de résistance arrived in the form of the Binchotan Flame Grilled Wagyu X Sirloin ($180/500g, $335/1kg) and Tenderloin ($135/250g, $245/500g) — showcasing the Wagyu's exquisite flavour profile. Charred to perfection over binchotan charcoal, this dish boasted a crispy exterior, revealing a succulent and flavourful interior.

Initially conceived as a simple staff meal, the Wagyu Fried Rice ($28) has made its way onto the menu, boasting a unique twist. Cooked with wagyu fat for an added depth of flavour, the fried rice is served atop ooba leaf foam. While the dish offers an interesting concept, I questioned the foam's contribution, as it tended to soak up the rice, detracting from its desired fluffy texture.

The Japanese Sweet Potato Croquettes ($16) is a new sides. Japanese sweet potato is used for its starchier texture. Deep fried to golden brown. Crispy on the exterior, sweet and soft inside.

For dessert, the Apple Tart with Ice Cream ($18) offered a delightful finale. Slices of Granny Smith apples were served alongside a housemade berry sauce — a perfect balance of tartness and sweetness to end the meal on a satisfying note.

Wagyu X continues to reign supreme as a haven for discerning diners seeking the ultimate Wagyu experience.

Mashi No Mashi @ Guoco Midtown - – Chef Hisato Hamada, founder of WAGYUMAFIA Opens 100% Wagyu Ramen Concept in Singapore

Mashi No Mashi, located at Guoco Midtown, is a ramen concept by Wagyumafia, a collective of restaurants renowned for harnessing the qualities and versatility of Japan's most famous beef through various culinary concepts. Founded by Chef Hisato Hamada, Wagyumafia prides itself on working directly with farmers and selecting only the top 1% of the finest Kobe and Ozaki beef. Since its establishment in 2019, Mashi No Mashi has been acclaimed for serving the world's first 100% Wagyu ramen.

Wagyu Tsukemen 4/5

The dish that brought Mashi No Mashi to fame is its signature Wagyu Tsukemen, featuring succulent slices of slow-cooked Ozaki beef paired with their signature noodles. The accompanying dipping broth, a 24-hour stewed Wagyu bone broth, was rich in umami and full-bodied, perfectly complementing the thicker-cut noodles with an enjoyable chewy texture. While the ramen as a whole provided a deeply satisfying mouthfeel and flavour, I found the alkaline taste of the noodles less appealing.

Ultra Wagyu Ramen 4.8/5

Ultra Wagyu Ramen ($22) is the brand's first-ever fukuoka Hakata-style ramen, and Singapore is the first outpost to permanently feature it on its menu. This beef-centric Hakata-style ramen broth is made using the finest wagyu bones, which undergo a laborious three-stage heating process to extract maximum flavour and aroma. The broth was an absolute pleasure to savour, together with the luscious pieces of wagyu char siew.

Wagyu Bak Kut Teh 4.5/5

This outlet also launched a Singapore-exclusive menu, starting with Wagyu Bak Kut Teh ($30). Served with a peppery homemade wagyu bone stock, traditional Bak Kut Teh purists may not favour this dish as much. Personally, I love this rendition, which was delightful with a heady, garlicky, and peppery broth. The texture and flavour of the meat were exceptional as well. However, with the price tag, it can definitely be more wholesome with the portions of the You Tiao and Preserved Vegetables.

There are also donburi options available, such as the Wagyu Cha Siu Donburi ($32), which showcases slices of Wagyu Cha Siu draped over Ginger Beef Akitakomachi Rice. The plump and pearly rice was so moreish mixed with flavourful minced ginger beef that it almost stole the spotlight.

Wagyu Gyoza 5/5

The Dim Sums here are highly recommended. Wagyu Gyoza ($8 for 2pc) uses 100% Ozaki Beef. Each piece was filled with four different cuts of juicy Ozaki beef and minced vegetables, achieving a succulent bite in every mouthful.

Sui Gyoza 4/5

The other two dim sums we tried were well executed: Black Bean Spare Ribs ($15), featuring Steamed Wagyu Spare Ribs with Black Bean and Garlic Sauce, and Sui Gyoza, boiled wagyu gyoza drizzled with tangy Japanese sansho chilli sauce. In fact, I enjoyed them much more than the traditional pork versions.

More Singapore-exclusive dishes, such as wagyu laksa and hokkien mee, will be rolled out later in the year. An interesting beverage menu with inventive cocktails is also available, including Chef Hisato's proprietary rendition of a Singapore sling ($18).
