Fragment Private Dining - Modern Asian Cuisine meets European Influences

Our latest home private dining adventure brought us to Fragment Private Dining, helmed by Pristina Mok and her husband. One of the newest entrants into the private dining scene, Pristina only began hosting guests in 2024. She offers an eight-course menu featuring modern Southeast Asian cuisine with European influences. Her experience working at Skirt and Magic Square shines through in the thoughtfully curated dishes, blending familiar Asian flavours with refined Western techniques.

Shima Aji, Brown Crab, Radish Cake 4.2/5

The meal started on a strong note with a trio of small bites: Shima Aji paired with Bonito and Gu Chye, Brown Crab with curry and passionfruit, and Radish Cake topped with spicy bacon and uni. Each bite packed a punch, showcasing a beautiful interplay of flavours and textures. The fusion of Asian ingredients with European techniques was impressive, setting the tone for what was to come.

Beetroot & Persimmon 4.2/5

This light yet refreshing starter featured Beetroot and Persimmon, complemented by peanut dukkah and achar sorbet. The achar sorbet was a particularly clever touch, adding a tangy brightness that elevated the dish beyond the ordinary.

Next, we were served Aburi Sawara, a prized Spanish mackerel known for its delicate flavour and buttery texture. It was presented in a Tom Kha broth — a Thai-inspired coconut milk-based soup — and further enhanced by adding Amela tomato, lending a delightful balance of creaminess and acidity.

Scottish Hand Dived Scallop 4.5/5

One of the most memorable dishes of the night was the Scottish Hand-Dived Scallop. Encased in an Otah (fish paste) filling and finished with a crispy exterior, it was paired with a curry emulsion. This unexpected yet well-executed combination worked wonderfully, bringing together the best of texture and bold Southeast Asian flavours.

Braised Lamb 4.8/5

This dish was an absolute standout. The Braised Lamb was served in a piquant black pepper sauce made from a unique blend of three different types of peppers. The sauce was so good that it came with a side of fluffy naan, perfect for mopping up every last bit. The rich, aromatic flavours made this one of my favourite dishes of the night.

Quail & Claypot Rice 4/5

For the mains, we had the Quail & Claypot Rice. The quail was perfectly grilled and accompanied by sambal belachan, mixed mushrooms, and black truffle. While not pictured, the meal also came with a small serving of claypot rice, ensuring that diners looking for a heartier bite got their fill of comforting carbs.

Whiskey & Coffee Malai Gao 4.5/5

The dessert course was just as impressive as the savoury dishes. The Whiskey & Coffee Malai Gao featured malted barley cream, dark chocolate sorbet, and sesame brittle. The combination of earthy, bitter, and sweet flavours worked in perfect harmony for a delightful and indulgent finish.

Pistachio Nougat, Hawthorn Tea 4.2/5

As a final touch, our meal ended with homemade Pistachio Nougat, accompanied by a cup of Hawthorn Tea infused with black lime and Yakult foam. It was a light, refreshing way to cleanse the palate and conclude a truly memorable private dining experience.

Fragment Private Dining is an exciting new addition to Singapore's private dining scene, offering a modern Southeast Asian menu with European influences that showcases chef Pristina Mok's creativity and expertise. From the impeccable execution of dishes to the warm, intimate setting, the experience is one that both food enthusiasts and adventurous diners will appreciate. Would I return? Absolutely. The thoughtfully curated menu and innovative flavour combinations make it a standout in the home dining space, and I can't wait to see how Fragment Private Dining evolves in the future.

MODU Samgyetang Specialty @ Mandarin Gallery - Singapore’s First & Only Korean Ginseng Chicken Specialty Shop

If you've walked past MODU at Mandarin Gallery, you've noticed the long queues that form daily. With a no-reservation policy, diners eager to taste Singapore's first and only Samgyetang speciality shop must be prepared to queue for a spot. Founded by the original team behind DRIM Korean Steakhouse, MODU is dedicated to perfecting this iconic Korean Ginseng Chicken Soup, offering six different variations alongside a selection of authentic Korean small plates.

For dinner, we opted for the 2 Pax Set ($98), which includes an appetiser, a shareable dish, two choices of Samgyetang, and a shared dessert. This set provided a well-rounded sampling of MODU's offerings, showcasing the variety in their Samgyetang broths.

HwangTaeChae 5/5

The meal began with HwangTaeChae, a savoury and crisp snack made from dried pollock strips. It reminded me of dried sole fish but with a sweeter, more umami-laden profile. It is extremely addictive, and I found myself reaching for more even before the main dishes arrived.

Minari Pancake 4.2/5

We went with the Minari Pancake, a unique variation of the classic Korean pajeon, for our shareable dish. The minari (Korean watercress) gives the pancake a bright, herbaceous bite, while the Bori shrimp enhances its umami depth. The crisp, golden exterior added to the overall enjoyment, and when dipped into the accompanying special sauce, the flavours became even more pronounced.

Black Sesame SamGyeTang 4.5/5

MODU offers six variations of Samgyetang, and for our first choice, I decided on the Black Sesame Samgyetang — a flavour I had never encountered before in Korean cuisine.

While the chicken is not particularly large, it was fall-off-the-bone tender and came stuffed with glutinous rice. The black sesame broth turned out to be rich, creamy, and fragrant, with the nutty aroma of black sesame complementing the ginseng, leek, pine nuts, and jujube in the soup. The broth's unique earthy and slightly toasty notes worked surprisingly well with my palate, making this an unexpected but delicious discovery.

Collagen Herbal SamGyeTang 4.5/5

We chose the Collagen Herbal Samgyetang for our second soup, which leans closer to the traditional, original-style Samgyetang. The herbal broth was noticeably thicker due to the added collagen, giving it a silky, luxurious texture. Unlike the Black Sesame version, this one had a stronger ginseng aroma, making it a comforting, nutritious choice for those who enjoy the classic flavours of Samgyetang. Like the Black Sesame Samgyetang, this version also came with a whole chicken stuffed with glutinous rice, along with ginseng root, leek, jujube, pine nuts, and chives. If you're new to Samgyetang, this is a great starting point for an authentic experience.

The other four flavours on the menu are Beauty Samgyetang, Hangover Samgyetang, Perilla Seed Samgyetang, and Black Chicken Samgyetang.

GotGam Mari 4/5

To wrap up our meal, we were served GotGam Mari, a dried persimmon stuffed with creamy cheese and walnuts. The dried persimmon's natural sweetness was intensified due to dehydration, making it lusciously sweet and chewy. The cheese filling added a creamy, slightly tangy contrast, while the walnuts provided a crunchy texture.

MODU sets itself apart by offering a focused menu centred around Samgyetang, allowing diners to explore different variations of this traditional Korean dish. The Black Sesame Samgyetang was a unique standout, and I can see why their herbal broths have gained such a loyal following. With its authentic flavours, long queues, and no-reservation policy, MODU is clearly a hit among Korean food enthusiasts. If you're willing to brave the wait, it's worth a visit — especially if you're looking for a comforting, nourishing meal with a taste of tradition and innovation.

Mizuki @ Ngee Ann City - Tempura Omakase with Quality Seasonal Ingredients in Orchard Road

Mizuki, located in Ngee Ann City since 2017, offers a refined dining experience that specialises in tempura. Guests can choose from a variety of omakase menus, including Tempura Omakase, Wagyu Omakase, and Signature Omakase, alongside set meals and à la carte options.

With its serene, minimalist interiors, the restaurant offers diners the opportunity to enjoy their meals at the 9-seater tempura counter or in private rooms, making it a perfect setting for an intimate experience.

Tempura Dinner Omakase 4.5/5

On our visit, we had the Tempura Dinner Omakase ($198/pax). Before the meal commenced, the chefs showcased the seasonal ingredients of the day, beautifully presented with autumn leaves, giving us a glimpse of what was to come.

The omakase began with Sashimi, featuring meticulously sliced fish of freshness, especially the Kampachi.

This was followed by a comforting shiitake and edamame Chawanmushi, topped with snow crab and shark fin.

Seasonal Tempura 9 Kinds

The highlight of the evening was undoubtedly the Seasonal Tempura 9 Kinds. We observed the chefs carefully prepare each piece, delicately laying each ingredient and coating it in a traditional batter before placing it in the fryer.

Diners are provided with an assortment of condiments, including salt, tentsuyu sauce, lemon, and freshly grated radish, to customise their tempura experience.

Japanese Tiger Prawn

The Japanese Tiger Prawn served with its head featured a light and crisp batter that complemented the prawn's natural sweetness rather than overwhelming.

Tara No Me

Tara No Me is a mountain vegetable with a slightly bitter taste. We enjoyed the bitter notes on their own, but they are also good paired with the Tentsuyu for an extra touch of savoury.

Uni on Shiso

One of the most luxurious bites was the Uni on Shiso, a harmonious combination of creamy bafun uni, baby whitefish, and caviar atop a tempura-fried shiso leaf and seaweed. It was indulgent without being excessive and left a lasting impression.

Next was a classic Gingko.

Fish with Cucumber

The Fish with Cucumber was an unexpected combination. The fish meat was delicate and soft, and the cucumber gave a lightness.

Hotate

Another standout was the Hotate, served in two parts. The first was fried to retain a pink, tender centre, accompanied by a refreshing zest of grated yuzu.

The second was wrapped in nori and topped with ikura, creating a delightful contrast of flavours and textures.

Mushroom

Additional prawn paste was added to the Mushroom before frying.

Ika

Next was the uniquely prepared Ika, drizzled with a reduced sauce made of squid head. While the exterior was crisp, the Ika in the middle was intentionally kept raw.

Anago

The Anago was one of my favourite courses, along with the Uni and Hotate. The mild, sweet meat was absolutely tender, enhanced by a squeeze of lemon.

Dried Persimmon

One of the more creative dishes was the Dried Persimmon with Mochi, where a tempura-fried persimmon slice was sandwiched between crispy mochi and wrapped in nori. The combination of sweet, chewy, and salty elements made it memorable.

Kakiage Don & Miso Soup

The meal concluded with the Kakiage Don & Miso Soup, a bowl of fried tiger prawns and sakura shrimp served over rice. I recommend breaking the egg yolk and mixing it in.

Assorted Dessert

Assorted Dessert followed, featuring a trio of homemade creations: Strawberry Ice Cream, Warabimochi, and Pudding. The desserts were decent, with the milky pudding standing out more for its creamy texture.

Overall, the tempura at Mizuki was outstanding, and I particularly appreciated the chefs' condiment recommendations for each piece served. Additionally, the pacing of the meal was attentive and comfortable.

Grissini @ Grand Copthorne Waterfront Hotel - Promotional Menu Featuring Sustainable Wild Seafood From Pacific Northwest Seafood

As part of World Gourmet Summit 2021, Pacific Northwest Seafood will be featured on promotional menus across a variety of cuisines in several of Singapore's renowned restaurants. One of the collaborating partners is Grissini at Grand Copthorne Waterfront Hotel. It has put together a set menu at $158 per person featuring the black cod and dover sole from Pacific Northwest Seafood.

The set menu started with some complimentary bread and breadsticks, followed by three different appetisers.

The three appetisers are Gambero Kataifi, Salmon Cornetto and Proscuitto e Melon. I enjoyed the crispy vermicelli wrapped around the prawn topped with a savoury burst from the ikura. Served in an ice cream cone, the salmon cornette is a textural enjoyment, while the prosciutto e melon is a classic combination that will never go wrong.

Hamachi Carpaccio 4.5/5

Next course, I had the Hamachi Carpaccio paired with Oscietra caviar and heirloom tomato. The ponzu and basil oil brightens the  Japanese Amberjack sashimi.

Casarecce Al Sugo Di Merluzzo 4.2/5

To showcase the Black Cod from Pacific Northwest Seafood, the chef has incorporated the buttery meaty fish in the pasta dish - Casarecce Al Sugo Di Merluzzo. The perfectly cooked pasta in black cod ragu is deliciously addictive in the tomato-based sauce, crowned with a piece of the melt in the mouth black cod.

The next fish featured in collaboration with Pacific Northwest Seafood is the Dover Sole, known for its sweet, delicate and nutty flavour. I enjoyed the sweet sauce that is glazed on the beautiful fish accentuating the flavours. Accompanying the dish, we have green lettuce, maitake mushroom and seaweed at the side.

There is even a pre-dessert course using the Japanese Persimmon with honeymoon and sour cream - a fruity and refreshing pre-dessert to freshen up the palate.

Tiramisu Alle Castagne 3.8/5

For dessert, we had the Triamisu Alle Castagne. It is like having two desserts on a plate. The topping of chestnut cream on the ladyfinger reminds me of mont blanc. The sweetness of the chestnut cream helps to balance the strong flavour from the alcohol-soaked ladyfinger.

Finishing the set course meal is the Petite Four. The promotional menu featuring sustainable wild seafood from Pacific Northwest Seafood is priced at $158 per pax. It is available from 27 October to 6 November 2021
