Acclaimed Japanese dining concept Hikiniku To Come officially opened its first Singapore outpost at VivoCity on 29 May 2026, bringing with it a cult-followed “hamburg steak-on-rice” experience from Tokyo’s Kichijoji district. Known for its unwavering focus on simplicity, precision and freshness, the brand has elevated what is typically a humble comfort dish into a refined, almost ritualistic dining journey.

At the heart of Hikiniku To Come’s philosophy is an obsessive attention to detail. The beef is ground fresh in-house daily under strict temperature control in a dedicated room, ensuring optimal freshness and food safety. Each patty is then hand-shaped using a distinctive “popping” technique that minimises heat transfer from the hands, preserving the meat’s integrity. Made exclusively from 100% Japanese beef selected for its ideal balance of richness and flavour, the patties are grilled over binchotan charcoal and served within seconds of cooking — a meticulous process that guarantees consistency in both texture and taste.

The menu is intentionally minimalistic, offering a single Signature Set Meal ($27.90++) centred on three hamburg steaks, each served one at a time. This staggered progression transforms the meal into a thoughtfully paced sensory experience, where each patty is enjoyed at its peak and approached differently to highlight its nuanced flavour profile.

We began with a couple of side dishes — Potato Salad with Minced Meat ($7.90) and Raw Kimchi ($7.90) — to complement the meal. The Potato Salad with Minced Meat is comforting and hearty, enriched with savoury minced meat that adds depth to the creamy potato base. It strikes a satisfying balance between indulgence and texture, making it more substantial than your typical Japanese potato salad. The Raw Kimchi, on the other hand, offers a lighter, refreshing contrast. Its clean, mildly tangy profile provides a palate cleanser between bites of the rich hamburg steaks, though it leans towards the subtle side in terms of punch.

Hamburg Steak 4/5

The star of the show is undoubtedly the Hamburg Steak. Each patty arrives sizzling hot, placed atop a bowl of fluffy Japanese rice. Diners are encouraged to savour the first patty as is, allowing the beef’s natural flavours to shine. The meat is incredibly moist and juicy, with a pronounced smokiness from the binchotan charcoal. As it rests on the rice, the juices seep into the grains below, subtly enhancing each bite with savoury depth.

For the second patty, diners are guided to pair it with grated radish and a drizzle of the housemade ponzu. This combination introduces a bright, citrusy lift that cuts through the richness of the beef, offering a refreshing contrast that reawakens the palate.

The third and final patty invites a more indulgent finish. Diners can dip the meat into a glossy beaten egg yolk or mix the yolk with soy sauce into the rice, transforming it into a luxurious tamago kake gohan. At Niku Niku Oh!! Kome, dining is as much about experience as it is about flavour. Guests seated at the counter are treated to a theatrical showcase of live grilling, where skilled hands shape, sear and finish premium Japanese aged wagyu hamburg steaks right before their eyes. Each patty is freshly ground and hand-pounded daily on-site, resulting in a texture that is both tender and satisfyingly chunky, with juices locked within.

Original Hamburg Steak 4.5/5

We began with the Original Hamburg Steak, which sets the benchmark for what a proper hamburg should be. The patty was robustly meaty, boasting a rich, beef-forward flavour with a juicy interior that borders on molten. Adding an egg introduces a luscious creaminess, its silky yolk coating each bite and enhancing the overall mouthfeel. While the hamburg rightfully commands attention, the rice deserves equal praise. Polished in-house from husked grains, the rice is a thoughtful blend of Japanese Niji no Kirameki and Vietnamese jasmine rice. The result is a bowl of soft, fluffy grains with a gentle aroma and delicate sweetness, the perfect foil to the richly flavoured beef.

Cheese Hamburg Steak 4.5/5

Next, the Cheese Hamburg Steak takes indulgence up a notch. Cloaked in a blanket of melted cheddar and finished with freshly grated Grana Padano, the patty transforms into something reminiscent of a gourmet cheeseburger, but elevated. The cheeses lend a savoury, slightly nutty richness that deepens the wagyu’s umami, while still allowing the natural beefiness to shine through. It’s decadent without tipping into excess, making it an easy crowd-pleaser and a highlight of the meal.

Creamy Tomato Sauce Hamburg Steak 4.5/5

Rounding off the trio is the Creamy Tomato Sauce Hamburg Steak, a seasonal creation introduced alongside the Westgate opening. This rendition leans into a more “yoshoku” direction, Japanese-Western comfort fare at its finest. The sauce is a well-balanced marriage of a deep, savoury demi-glace and tangy tomato purée, enriched with a touch of cream to achieve a smooth, velvety consistency and an inviting orange hue. The interplay of sweet, savoury and mildly acidic notes keeps each bite interesting, cutting through the richness of the beef. Topped with thick slices of fresh tomato and a sprinkle of parsley, the dish gains a refreshing lift that prevents it from feeling too heavy.

With its combination of quality ingredients, meticulous preparation and engaging dining format, Niku Niku Oh!! Kome proves that the humble hamburg steak can be elevated into a deeply satisfying and memorable experience.

Niku Niku Oh!! Kome, a concept by Japan's top-listed F&B company, Monogatari Corporation, opened its doors at Weave, Resorts World Sentosa, in August 2025. With over 40 outlets across China, Hong Kong, Jakarta and Manila, the Singapore outpost marks a partnership between Monogatari Corporation and homegrown brand Putien.

At Niku Niku Oh!! Kome, diners are treated to the theatrical experience of live grilling, where Japanese aged wagyu beef hamburg steaks are cooked right in front of your eyes at the counter. Each patty is freshly ground and hand-pounded daily at the outlet, ensuring maximum flavour and a satisfying texture. To personalise the experience, diners can choose from three signature sauces, five condiments, and even optional indulgent toppings such as melted cheddar or a raw egg yolk. Every set also comes with free-flow rice, soup and broccoli.

Original Hamburg Steak 4.5/5

We started with the Original Hamburg Steak. The beef was meaty, juicy, and full of flavour. Adding an egg gave the dish an extra layer of creaminess that elevated the whole enjoyment. While the spotlight is on the hamburg, the unspoken hero here is the rice – soft, fluffy and polished in-house from husked grains for optimal freshness. The restaurant uses a special blend of Japanese Niji no Kirameki rice and Vietnamese jasmine rice, resulting in an aromatic, delicate accompaniment to the steak.

Cheese Hamburg Steak 4.5/5

Next up was the Cheese Hamburg Steak, where the patty was smothered in melted cheddar and freshly grated Grana Padano. The richness of the cheese deepened the flavours of the beef, reminding me of a decadent cheeseburger, but with the juiciness of a premium wagyu patty. Definitely one of my favourites.

Avocado Hamburg Steak 4.2/5

The Avocado Hamburg Steak came topped with slices of avocado, tartar, and teriyaki sauces. While unique, this combination did not quite hit the mark for me, as the flavours seemed to compete rather than complement the beef. It was my least favourite of the three.

Prices at Niku Niku Oh!! Kome are surprisingly reasonable. A basic set with two original hamburg steaks starts at $16.80, while the most expensive set at $22.80 offers all three flavours. Each set is generous, inclusive of one pasteurised egg, along with unlimited servings of soup, rice, and broccoli – making it a value-for-money experience, especially given the premium quality of the wagyu beef.

We commenced our dinner with a comforting bowl of Onion Gratin Soup ($7.80). This homemade consommé, sweetened by caramelized onions, features a slice of toasted baguette loaded with melty Gruyère cheese. I recommend leaving the baguette to soak up the delicious soup for a bit longer for an even richer experience. This soup is a long-standing bestseller of Royal Host, gaining fame when Marilyn Monroe praised it during her honeymoon to Japan in 1954.

For a healthier option, we tried the superfood Kale Salad ($19.80). This crunchy kale salad is complemented by plant-based meat, blueberries, and a special peanut oil salad dressing that adds an aromatic finish. It's a refreshing and nutritious choice that perfectly balances the meal.

The Omurice with Demiglace Sauce ($26.80) is a must-try. Fresh eggs flown all the way from Kyushu prefecture create a creamy omelette that tops fluffy Japanese ketchup rice. For a unique twist, there's a Singapore-exclusive version featuring Singapore Chilli Sauce and Snow Crab on top. The dish combines traditional Japanese flavours with a local touch, making it a standout item on the menu.

Royal Host's signature item is their Japanese Hamburg. We sampled the "ROYAL" Hamburg Steak with Brown Butter Sauce ($29.80), served sizzling on a hot plate. Made using premium-quality beef typically reserved for steaks, the hamburg is seared to perfection, achieving a beautiful exterior char while maintaining a succulent and juicy texture. There's also a Singapore-exclusive Black Pepper Sauce version for those who prefer a bit of heat.

Stepping into the former Zouk, one encounters the metamorphosis into Jiak Kim House, an enchanting dining venture brought to life by The Brewerkz Group. Chef-Partner Seow Tzi Qin takes the reins, introducing an inventive menu that weaves modern Asian cuisine with Southeast Asian flavours, all within a contemporary framework. This establishment is more than a restaurant; it celebrates evolution against the backdrop of Zouk's storied past.

The dinner commences with complimentary rotating bread, with the noteworthy Bolo Bun stealing the spotlight with its century egg and salted egg filling. This ensemble features four distinct items: the 7-Herb Crab Cake with Assam Mayo, Lamb Goulash Croquette with Mint Coriander Coulis, Chilli Crab Pie Tee, and Tri-Colour Otak Otak. These items aptly exemplify Chef TQ's culinary vision and the establishment's unique gastronomic style. Moreover, they offer a vibrant introduction to the rich and diverse flavours of Southeast Asian cuisine.

The Mushroom Herbal Tea 'Macchiato' ($22) is the chef's creative take on the beloved local Bak Kut Teh. Accompanied by a tantalising green pepper sauce, the dish is complemented by fresh kimchi pickles at the side, adding a delightful touch that helps balance the richness of the flavours.

The Herbal Scallops 'Pao Fan' ($42) received mixed reviews from some dining companions who felt it fell short of the traditional Chinese Pao Fan dish's expectations. Despite presenting components like puffed rice, the dish deviated from the anticipated experience. Rather than a faithful representation of Pao Fan, it resembled more of a scallop dish paired with earthy cordyceps and briny ikura in dashi buerre blanc. Nevertheless, it was still enjoyable as a scallop dish on its own.

The combination of flavours and textures in this dish is truly magical.
