Yun Nans (云海肴) @ Jewel Changi Airport - Unveils Five New Dishes

I am glad to be back at Yun Nans (云海肴) at Jewel Changi Airport. I had enjoyed the food when it first opened its door back in April 2019. I am back to try its new dishes, celebrating Yunnan cuisine in China, using fresh ingredients from the highlands of the Yunnan province.

Spicy Fish Skin with Jasmine Petals 3/5

Fish skin is commonly served in Chinese restaurant nowadays but for something slightly different is the Spicy Fish Skin with Jasmine Petals ($6.90). The deep-fried fish skins are coated with a potpourri of traditional Yunnan spices, boasting a delightful hint of mala and crunchy bite.

Century Egg with Grilled Capsicum 3.5/5

I love century egg and glad to see the restaurant has introduced the Century Egg with Grilled Capsicum ($6.90) as one of the five new dishes. The century egg is soused in a special Yunnan chilli sauce that has a spicy-tangy note.

Fried Chayote with Dried Shrimp (Dried Chilli/Garlic) 4.2/5

The Fried Chayote with Dried Shrimp ($11.90) can be done in 2 ways, dried chilli or garlic. Chayote is a type of melon from Yunnan, that is cooked in almost every home in Yunnan. The restaurant even imports the dried chilli all the way from Yunnan.

Double Boiled Pear with Golden Fungus and Snow Lotus 4/5

A hot dessert on the menu is the Double Boiled Pear with Golden Fungus and Snow Lotus ($5.90). A rare item is the wild golden fungus, a speciality ingredient from Yunnan province that has health benefit such as nourishing the lungs and good for the complexion. There is also wild snow lotus that is known to alleviate cough.

Steamed Red Grouper with Green Peppercorns 4.2/5

One of my favourite dishes is the Steamed Red Grouper with Green Peppercorns ($48.80). Steamed to perfection is the tender and moist fish. What brightens the flavour is the fresh green peppercorns, which are fragrant and less numbing than their red counterparts.

Double Boiled Chicken Soup with Red Mushrooms 4.5/5

While Yun Nans is known for their signature Steam Pot Chicken Soup, the Double Boiled Chicken Soup with Red Mushrooms ($22.90/$38.90) is as good too. The black feet chicken is double boiled for at least two hours with red mushrooms. The red mushrooms are priced delicacy, costing US$400 per kg, which are consumed only during celebrations and special festivals. It has full of nutrients such as amino acid and helps to nourish the blood.

Besides the five new dishes, there is also the children's menu, which offers two selections: Yunnan Rice Noodles with Shredded Chicken, Shredded Carrot and Black Fungus ($7.80); and Shredded Chicken Congee ($7.80). Each choice comes with fresh fruits, corn cakes and ribena.

O'TAH @ Jewel Changi Airport - New F&B Concept By Lee Wee & Brothers

Lee Wee & Brothers, a local F&B brand known for its traditional otah has opened a new modernise concept at Jewel Changi Airport. The new concept, O'TAH offers a modern take of the traditional otah with exclusive otah collection.

Four Exclusive Otah Collection 4.2/5

Customers can still purchase the traditional otah at the new concept stall locate at basement 2 of Jewel Changi Singapore. However, I would like to recommend the exciting new creations, whereby new flavours are incorporated into the classic otah. The four new exclusive flavours are Pink Salmon Otah ($26.40/box of 12), Scallop Otah ($26.40/box of 12), Cream Cheese & Corn Otah ($26.40/box of 12), and Petai & Anchovy Otah ($20.40/box of 12). These are all handmade. The ingredients are wrapped in a pair of coconut leaves, which impart a tropical fragrance and sweetness, then grilled for the smoky aroma.

O'TAH Fries 4/5

The O'TAH Fries ($6.90) looks like spam fries, isn't it? These are actually made from the traditional otah. They are hand-cut hunks of mackerel fish otah fries. It is paired with lime and herb mayonnaise dip for maximum indulgence.

Ben's Burger 4/5

I like to have the tradition otah with my bread, and the Ben's Burger ($11.90) definitely brings it to a new level. The Ben's Burger ($11.90) is a towering creation with mackerel fish patty, tomato, purple cabbage, caramelised onion and sunny side up, sandwiched between the fluffy charcoal buns.

TAH-co 3.5/5

Giving taco a local spin is the TAH-co ($9,90). The crispy tortilla comes with breaded mackerel fish otah, guacamole, salsa, corn and purple cabbage. Biting into the taco, one gets an abundance of flavours and textures.

Besides the new creations, O'TAH also serves many of Lee Wee & Brothers's fan-favourite dishes such as Banana Leaf Squid Otah, Fried Curry Chicken Nasi Lemak, Grilled Honey Chicken Nasi Lemak. There are also accompaniments such as Sambal Chilli, Ikan Bilis Pack.

Shake Shack @ Jewel Changi Airport Singapore - First Southeast Asia Outlet With Exclusive Items

The long wait is over as Shake Shack opens its door at Jewel Changi Airport Singapore, the first in Southeast Asia. The queue also has significant shorten since its opening back on 17 April 2019.

Same as the other outlets around the world, Shake Shack Singapore's menu will feature their signature items such as the ShackBurger, Shack-cago Dog, classic crinkle-cut fries, craft beer, wine and frozen custard ice cream.

Shake Shack Singapore has also introduced exclusive items such as the Pandan Shake and unique local flavoured frozen custard ice cream (Jewela Melaka, It Takes Two to Mango and Shack Attack).

Classic Crinkle-Cut Fries

What is so special about the Classic Crinkle-Cut Fries? The grooves and cuts on the fries actually give it a crispier texture while allowing it to pick up more of the ketchup and cheese sauce. Shake Shack actually took this off their menu but was not well received. In the end, they have to bring it back.

ShackBurger

If you are a first-timer at Shake Shack, then the ShackBurger is a must-order. The cheeseburger comes with soft pillowy potato buns that are sandwiched with tender, juicy US Angus beef patty that has been grilled to a nice medium. It also comes with lettuce, tomato and a savoury secret ShackSauce that bind the whole burger together.

Shroom Burger

For the vegetarian, there is there Shroom Burger. Even the non-vegetarian me loves it too. The burger comes with crisp-fried portobello mushroom filled with melted Colby Cheese, Monterey Kack and Tilsite Cheese, topped with lettuce, tomato and ShackSauce.

Comparing notes with fellow foodie friends that have tried Shack Shake overseas, we felt that the burgers here tasted better. We are surprised!

Japan Gourmet Hall SORA @ Changi Airport Terminal 1 - Showcasing Dishes From Fukuoka, Hokkaido and Kanagawa

Japan Gourmet Hall SORA has opened a new outlet at Changi Airport Terminal 1. Now it has 2 outlets at both Changi Airport Terminal 1 and 2. The new outlet at Terminal 1 houses three restaurants - Ikkousha, Yoshimi and Megumi Maru, showcasing Japanese dishes from three prefectures (Fukuoka, Hokkaido and Kanagawa).

Special Tonkotsu Ramen 4.2/5

First stop is Ikkousha from Fukuoka that is known for its Yatai-style ramen. The chain started in March 2004, and now it has 62 outlets in the world. Over at Singapore, one can savour exclusive dishes prepared in Yatai-style such as the Special Tonkotsu Ramen ($18.70), Special Red Chilli Ramen ($20.90) and Special Black Garlic Ramen ($20.90) and more. I tried the Special Tonkotsu Ramen, which comes in a bowl of silky and milky tonkotsu broth, made by simmering pork bones for many hours. It is lighter and less salty compared to many other ramen places. What impressed us is the beautifully boiled char siu that complements the bowl of ramen.

Kaisen Maze Don 4/5

Next stop is Megumi Maru, Singapore's first-ever maze don concept created by Misaki Megumi Suisan. We tried both the Kaisen Maze Don ($18.80) and Aburitoro Maze Don ($35.10). The Kaisen Maze Don is an assorted poke bowl comprising akami, salmon, boiled prawn, unagi, takuan, onsen tamago and sushi rice. The star has to be the uni dressing, a combination of sea urchin and shoyu, that binds all the ingredients together.

Aburitoro Maza Don 4/5

For those that are not into raw food, there is the Aburitoro Maze Don. The otoro is flame seared and perched on a bed of sushi rice. It is accompanied with a variety of healthy vegetables, like ladyfinger and purple cabbage, with an onsen egg capping the line-up.

Maguro Mentai Roll 3.5/5

Good for sharing is their maki rolls. I had their Maguro Mentai Roll ($15.90). I think anything mentaiko works wonder, and this is harmonised by the refreshing cucumber. Other crowd pleasers include salmon cheese roll, caterpillar roll, anago roll and more.

Pork Loin Katsu Set 3/5

The third and last concept at SORA Terminal 1 is katsu curry specialist Yoshimi. The restaurant has over 19 outlets in Japan, and this is the first time opening an outlet outside Japan. We started with the Pork Loin Katsu Set ($23.80) which comes with a bowl of miso soup, rice and cabbage.

Mille-feuille Katsu Set 4/5

Compared to the pork loin katsu set, I would prefer the Mille-feuille Katsu Set ($26.80) which boasts 16 layers of pork. It is more tender than the pork loin. A worthy note is the delicious and fragrant curry that consists of over 15 herbs and spices blend. It complements the pearly Japanese rice excellently.

Omurice Curry 3.8/5

For the Omurice Curry ($16), it has both vegetarian and non-vegetarian version. I personally prefer the non-vegetarian version as the curry is more robust with the beef stock in it. Not to forget the fluffy egg dome that conceals the Japanese rice in it.

Mixed Berry Pancake 4/5

If you have a sweet tooth, Yoshimi is the only concept that offers desserts on their menu at the terminal 1 outlet. The Mixed Berry Pancake ($19.80) is soft and fluffy, with the right balance of sweetness from the whipped cream and acidity from the mixed berry compote. If you have this too heavy, you can also grab a Hokkaido Soft-serve Ice Cream ($6.90) to go.

Pink Fish @ Jewel Changi Airport Singapore - World Champion Chef Brings A World Of Flavours To The Norwegian Salmon at Hip New Eatery

Pink Fish is a fast-casual concept restaurant that uses salmon as its ingredient. The hip eatery from Norway is founded by world champion chef Geir Skeie, who is the Bocuse d'Or winner in 2009, together with his two friends. This is their first international outlet, and they have picked Jewel Changi Airport Singapore as their foray to the rest of the world.

Kick start with the healthy Kombucha drink. It is a natural sparkling, fermented tea, packed with probiotics drink that is supposed to have a lot of health benefits. Diners can choose over a variety of flavours too. While it is a healthy drink, I find the taste quite acquire to my liking.

American Burger 4/5

The signature is their burger, which comes in 3 flavours (Asian, European and American). It comes with a generous 110g of salmon patty. I tried the American Burger ($9.90) that is sandwiched with coleslaw, cucumber, tomato and slathered with BBQ sauce. What impresses me is the salmon patty which comes with real chopped pieces of salmon

American Chilli Soup 4.2/5

With the closing of Chili's American Grill & Bar, I thought I will not be able to have a good bowl of chillis soup anymore. Thanks to Pink Fish for being my saviour. The American Chilli Bowl Soup comes with beans, coriander, tortilla chips and topped with grilled salmon fillets. The portion comes in 3 sizes - Nibbles ($10.90), Hungry ($14.90), and Starving ($18.90).

European Salad 3.8/5

Like the soup bowl, it comes in 3 sizes - Nibbles ($10.90), Hungry ($14.90), and Starving ($18.90). Diners can also have the options of Asian, European or American for the salads. I have the European Salad which consists of grilled salmon fillet, greek yoghurt sauce, feta cheese cubes and olives.

Asian Raw 3.5/5

For the raw section, I tried the Asian Raw Bowl. It consists of Japanese sashimi salad with raw salmon cubes, yuzu, miso, edamame and rice. Similar to the soup and salad, it comes it 3 different sizes and flavours.

A noble note of the eatery is the use of sustainable Norwegian salmon to the biodegradable packaging and cutlery. I applaud the eco-conscious of the company for playing a part in protecting our Mother Earth. I hope more companies in Singapore will follow suit.
