Odem @ New Bahru - Modern Korean Restaurant and Craft Makkoli Bar

In New Bahru, Singapore's latest trendy lifestyle and dining destination, Odem is a modern Korean restaurant and craft makkoli bar. Nestled in the corner of this vibrant development, Odem brings a fresh take on Korean cuisine with a contemporary twist. During my visit, I had the chance to sample several standout dishes.

Brioche & Gamtae Seaweed Butter 4/5

We began our meal with the Brioche & Gamtae Seaweed Butter ($20). With its soy glaze, the brioche was soft, buttery, and delightful. The highlight, however, was the Gamtae seaweed butter, which paired perfectly with the warm brioche, enhancing its flavours and adding a hint of umami. It's a simple dish but incredibly satisfying.

Next, we tried the Banchan Platter ($24), which consisted of Granochi (an Anchovy Granola bar with anchovies, nuts, and seeds), Dubu mousse, kimchi, Spinach & Tott, Cucumber Kimchi, and Gim Chips. The Granochi was my personal favourite, offering a nice crunchy texture, while the cucumber kimchi was refreshing. However, considering most Korean restaurants serve banchan for free, I don't know if I would justify paying for this platter.

Makkoli Flights

Odem distinguishes itself from typical Korean restaurants by offering an impressive array of handcrafted makkoli sourced from across South Korea. They've curated two tasting flights for those unfamiliar with makkoli: Odem Quintet ($60) and Moonshots ($88). For those eager to explore, this is a fun way to delve into the world of makkoli, with a range of flavours and profiles that complement the modern Korean fare.

Savoury Donut 4.2/5

The Savoury Donut ($15) was a pleasant surprise. Fluffy and dusted with smoked gochugaru, the donut had a delicate sweetness that balanced perfectly with the savoury filling. Bite into it, and you'll find a delicious combination of shio kelp, salmon roe, and creme fraiche, making it a unique burst of flavours. A definite must-try!

Toro Kimbap 4.8/5

One of my favourite dishes of the night was the Toro Kimbap ($55). The generous portions of chutoro and akami were luxurious, wrapped with perilla, pickled radish, kelp-soy, and sesame. The balance of fish to rice ratio was perfect, and the freshness of the fish elevated this dish. It's a luxurious spin on the classic kimbap and absolutely worth the splurge.

Barbecued Kalbi 5/5

The star of the night was undoubtedly the Barbecued Kalbi ($78). These US boneless beef ribs were marinated to perfection, boasting a sweet glaze that beautifully complemented the charred exterior with tender, juicy ribs that melted in the mouth. This dish was a showstopper, served with a side of watercress salad dressed in tokki butter sauce. If you only try one dish here, make sure it's this one.

Chapssal Donut, Pine Nut Gelato (3pc) 3.5/5

We ended the meal with the Chapssal Donut with Pine Nut Gelato ($18 for 3 pieces). The donuts, filled with red bean paste, offered a nice twist from the usual dessert offerings. While the donuts were good, I actually enjoyed the Pine Nut Gelato more. It was light and refreshing, making for a lovely palate cleanser after the richer dishes. I wouldn't mind having just the gelato to wrap up the meal.

Odem offers a refreshing take on modern Korean cuisine with unique twists and luxurious ingredients. The ambiance, paired with their expertly crafted dishes, makes it an exciting dining spot to explore. While some items might seem a little pricey (especially considering banchan is usually complimentary), the quality of the food and the innovative takes make it worth a visit. If you're looking to indulge in something new, be sure to try the Toro Kimbap and Barbecued Kalbi!

Dal.Komm Playground @ Guoco Midtown - Offering an Expanded Range of Korean-inspired Dishes, alongside a Variety of Korean Alcoholic Beverages

Dal.Komm Coffee has opened a new concept at Guoco Midtown called Dal.Komm Playground offers an expanded range of Korean-inspired dishes alongside a variety of Korean alcoholic beverages, complementing their original cafe offerings.

Pan-fried Sotteok 4/5

From the Small Bites menu, we sampled the Pan-fried Sotteok ($16.90). This dish was a delight, featuring mouthwatering cheese sausages and chewy rice cake. The tomatoey sauce had a hint of spiciness, and the caramelized onions added a delectable sweetness that helped mellow the cheese sausage's saltiness.

Seafood Pancake 4.5/5

Next, from the Sharing Plates, we enjoyed a delicious Seafood Pancake ($23.90). Packed with shrimp and squid, the pancake boasted a juicy and chewy interior contrasted with a crisp exterior. The accompanying vinegary dipping sauce enhanced each bite, making the dish even more irresistible.

Galbi-Jjim with Mashed Potato 4.8/5

The Galbi-Jjim with Mashed Potato ($28.90) was exceptional for mains. The slab of braised beef was incredibly fork-tender and flavourful, and the accompanying carrots, radish, and mushrooms added a comforting taste. The buttery mashed potato further elevated the marbled meat's overall texture and indulgence.

Spicy Ssamjang Prawn Noodles 3.8/5

The Spicy Ssamjang Prawn Noodles ($20.90) was a crowd-pleasing fusion pasta dish. The prawns had a satisfying crunch, and the slightly spicy sauce coated the pasta just right. Bursts of sweetness from the blistered cherry tomatoes added a pleasant contrast.

Cruffin French Toast 3/5

For dessert, we had the Cruffin French Toast ($18.90), topped with cream, vanilla ice cream, and a sprinkle of granola. While enjoyable, the experience could have been improved by substituting the granola with salted nut clusters or a similar option for added texture and taste.

Dal.Komm Playground also offers a selection of alcoholic and non-alcoholic beverages. The Coffee Cube ($8.90) is one of their signature drinks, and their interesting selection of flavoured Makgeolli is also worth trying.

People Table Tales @ Tiong Bahru - New Private Dining Serving Crocodile Rib Rendang

People Table Tales is a new private dining place that recently opened in the quaint Tiong Bahru neighbourhood. It caught my attention for serving whole-roasted crocodile rib rendang on its menu. The 8-course meal is priced at $198 with alcohol pairing.

Our dinner started with the Mouth Pleasers, a selection of small bites to kickstart the dinner. The Croc Fin Crackling intrigued us, which can be enjoyed with the accompanying Green Sambal and Lacto Pumpkin Sambal.

Next is Natsuki's Dream, a speciality of vegetables from Natsuki's Garden, a local organic farm. The highlight on the plate is the sweet corn paired with lacto mango.

Mushroom Buddies 4.2/5

The Mushroom Buddies is inspired by Vietnamese pho covered by a sheet of rice paper. It showcased the earthy tone of the mushrooms excellently in a robust broth lifted by kaffir lime. I felt the soaked rice paper somehow substituted the noodle for the pho.

Looking like a piece of charcoal is Black, chicken pieces in coffee shoyu, blackened garlic and pineapple, resting atop a pulut hitam cracker. The succulent chicken pieces are from a breed known as Silkie Chicken, whereby their bone and skin are black.

The chilled Pineapple Gazpacho is a welcome break from the meal to freshen up the palate for more to come.

Nasi Ulam 4.2/5

Next, we had Nasi Ulam, which is served at the tableside. The service staff will mix all the different ingredients, such as toasted rice, herbs from Corridor Farmers, and lime dressing, in a big bowl. The bowl of rice is packed with beautiful aroma from the herbs, enhanced by a zesty finish from the lime dressing.

Whole-roasted Croc Rib Rendang 4.5/5

The one dish everyone was anticipating throughout the night was the Whole-roasted Croc Rib Rendang. I am not new to eating crocodile meat, but it is my first for the rib and the cooking style. For those that have not eaten crocodile meat, it is clean tasting without any gamey taste, almost like chicken.

The rib meat is very tender and falls off the bone with ease. It is also served with achar, coconut serundeng, roti and smoked coconut rice.

For me, the highlight is the spiced coconut jus. Not only did it complement the croc rib, but it also went so well with the roti and smoked coconut rice.

Before moving to the dessert, we had the Moju Granita for palate cleanser that consists of seasonal fruits, candied winter melon and cranberry hibiscus.

Wrapping up our dinner is Everything Makegeolli comprising of black rice makgeolli cremeux and tuile paired with white rice makgeolli ice cream.
