Teochew Handmade Pau (潮洲自制包点) @ Toa Payoh Lorong 1

In this modern days, not many hawkers would still continue the tradition of painstakingly handmade their food. I mentioned Chey Sua Carrot Cake in my earlier post whereby they still steamed their own radish cake for their fried carrot cake. Just a few stalls away at the same food centre is Teochew Handmade Pau (潮洲自制包点) which is started by Mr Yeow Eu Tiew in 1993, still continues to handmade their Teochew Pau.

Richard Yeoh is the 2nd generation of Teochew Handmade Pau (潮洲自制包点). He has given up his mechanical engineering job to help out his dad. As he shared with us, things were not smooth in the beginning. There was a clash of the old ways and his new methods to quantify the recipes. Richard has also started a central kitchen to supply a small quantity of paus to the hawker stall. He explained that having a central quality does not mean using machines to make their paus. The Paus are all still handmade at the central kitchen. One advantage of having a central kitchen is better quality control and consistency. For example, a pau will be exacty 30gram in weight so as a consumer you will not be felt cheated too.

Teochew Handmade Pau offers a variety of their delightful steamed bun but one of my favourite is their Big Pork Bun. The flavourful and juicy pork filling together with the soft fluffy skin is a winner for me. I understand from the owner a lot of efforts are put into ensuring the texture of the skin is soft and fluffy, such as the type of sugar used, the proportional of water and flour.

The different types of Teochew Paus sold at the stall are smaller in size compared to most that you see at coffeeshops. This means you can enjoy more and a variety of the delightful bite size snack. Another difference at Teochew Handmade Pau is their Char Siew Bun and Stewed Pork Bun (Kou Rou Pau). The fillings are minced and leaner instead of the usual Cantonese style buns where you still can find small pieces of meat inside. On top of that, the Siew Mai is also substituted with fish instead of the usual prawn.

I am very glad to announce that Teochew Handmade Pau (潮洲自制包点) has agreed to take part in this year Ultimate Hawker Fest 2014. They will be selling an assortment of their handmade buns to raise fund for charity. The assortment with consider Small Pork Bun with Egg, Salted Egg Yolk Longevity Bun, Char Siew Bun, Siew Mai and Stewed Pork Bun (Kou Rou Pau).

Jing Hua Xiao Chi (京华小吃) @ Neil Road

Since 1989, Jing Hua Xiao Chi (京华小吃) has been delighting its guests with dishes made with original, home-style recipes created by founders Mr and Mrs Han. Jing Hua Xiao Chi renowned for its delicious homemade dumplings is celebrating its 25th anniversary this year at Neil Road. I have the chance to experience making Jing Hua's famous "Little Juicy Steamed Meat Dumplings" (Xiao Long Bao) and "Mixed Seafood and Pork Dumplings" (Jiao Zi) first-hand from Han Guo Guang, the second generation who has helmed the family business. Never thought I would ever get the chance to make my very own “Little Juicy Steamed Meat Dumplings”小笼汤包. What a pleasant surprise when I realised that this was the place where I had my very first little juicy dumplings almost 10 years ago. Way before this dish becomes so ubiquitous in Singapore.

We first started off with "Mixed Seafood and Pork Dumplings". The filling consists of crab meat, prawn meat. pork and chives. The key point to note is that the closing top musn’t have too much of the skin, which may result in a too doughy texture. And, many may not be aware, you must curve the top when closing the gap so that it is "smiling" to its guests.

Next is the making of the Xiao Long Bao. I pulled, twisted and pinched... voila! My very first Xiao Long Bao emerged. Beginner luck I supposed because the subsequent ones failed terribly. After all the "hard work", it was time to harvest our effort.

Noodle with Minced Pork & Soya Bean Sauce (炸酱面) 3/5

We began with something substantial, the Noodle with Minced Pork & Soya Bean Sauce  ($5++). A slight variation from the usual ones I had before. There is crushed peanuts mixed with the minced meat sauce, hence, carrying a slight resemblance with our local Satay Bee Hoon. Personally I prefer those without the peanuts and I thought the noodles could be springier as well.

Mixed Seafood and Pork Dumplings (三鲜饺子) 4.5/5

Then our masterpieces came. Mixed Seafood and Pork Dumplings ($8++ for 10 pieces). Guo Guang prepared both ours and theirs for our tastings. Ours were seemingly in odd shapes whereas theirs were more structured. I love how juicy it was without an overpowering pork taste which some do. The top wasn't too doughy hence you won't end up with a flat flour taste when biting on the closing.

Pan Fried Mixed Seafood & Pork Dumplings (三鲜锅贴) 3.8/5

Next, we had Pan Fried Mixed Seafood & Pork Dumplings ($8++ for 10 pieces). The presentation of it didn't change at all since 10 years ago, just that it got bigger. With its 2 tails opening, the generous filling that was almost overflowing from its thin crispy skin, beckoned to us. However, as much as I was delighted by the portion of the meat, I felt a fully wrapped dumpling would have been juicer with its juice being locked in during the pan-frying process. If my memory didn't fail me, that was my thought 10 years ago as well.

Little Juicy Steamed Meat Dumplings (小笼汤包) 4.5/5

And what many of us were anticipating for, their famous Little Juicy Steamed Meat Dumplings ($7++ for 7 pieces). We were being served our masterpieces and theirs for comparison. Again, theirs looked more structured than ours. And one look at it, I knew it had enough broth to envelop my taste buds. As I held it against the sunlight, I could see it surfacing to almost half of the dumplings through its thin translucent skin. We were taught how to pick up a dumpling successful. The trick is to wet the tip our chopsticks first prior to picking it up to prevent the tip from sticking to the skin. A good Xiao Long Bao does not break at the bottom that easily which most of our masterpieces did. Guo Guang explained that the key when making the Xiao Long Bao is to be careful not to pull too much of the skin when making the fold on top which will cause the bottom to be stretched too thinly. As for the taste, as expected, the tender meat was flavourful but not oily which melted away easily in my mouth.

Steamed Vegetarian Dumplings (素饺子) 3/5

We tried another dumpling, Steamed Vegetarian Dumplings ($7++ for 7 pieces). I always feel that vegetarian food is not easy to prepare. Most tend to be overly seasoned which I feel is the case for this dish. So, go for the real meat dumplings!

Chinese Pizza (三鲜盒子) 3/5

The last savoury item we tried was Chinese Pizza ($10++). The filling used is the same as the mixed seafood and pork dumplings. Hence not much wow factor for me. I prefer those that looks like a smaller and flatter version of a calzone but filled with chives and bits of eggs. With the skin deep fried, the entire dish was too heavy for me.

Crispy Red Bean Pancake (豆沙锅饼) 4.2/5

Towards the end of lunch hours, I could see plates of the Crispy Red Bean Pancake ($10++) being served. One of which belonged to us. As I bite through the outer crispy layer, my teeth sink through another layer of mochi-like texture before reaching the sweet red bean paste in between. At that instant, the post Chinese New Year food, fried nian gao (年糕) came to my mind. Wow, I didn't expect this dish to be that satisfying. It was warm, chewy, sweet.

Sweet Osmanthus Flower Rice Ball Soup (桂花汤圆) 4/5

Another dessert we tried was Sweet Osmanthus Flower Rice Ball Soup ($3++). The look and the taste of it exude simplicity and honesty of a homemade dish. The rice balls were filled with peanuts, red bean paste, lotus and walnut paste, and black sesame. We had the mixed one but you can also request a specific combination of flavours. The osmanthus soup carried a tinge of sweet smelling aroma. I wish it was stronger with a much lower level of sugar to balance the sweet rice balls.

As the F&B landscape gets more and more competitive, I believe that to uphold traditions and staying true to your original recipes is an uphill task. From today's meal, I could feel their commitment in doing so. After so many years in one location, Jing Hua now has a new addition at Rochor Road to continue bringing its Home-style Goodness to its regulars and garner new ones.

Crab Ah! @ Shangri-La's Rasa Sentosa & Spa

Pincers and Pints await you at Crab Ah! I am not referring to the all lobster Pince & Pints at Duxton. Instead I am bringing you to Shangri-La's Rasa Sentosa & Spa. The waterfront area of the resort is converted into an al fresco dining facing the South China Sea offering a feast for two which includes succulent Sri Lankan crabs and an array of appetisers, side dishes, desserts and free flowing house wines and beer.

The picturesque views of the sunset on the coast, music from a live band and the surrounding sea breeze present a perfect evening for couples to wrap up a delightful dinner. If you are lucky, you may also spot peacocks running around the waterfront or sleeping up in the trees.

The dinner for two started with some delectable Deep Fried White Bait. Well seasoned and crispy, this is a perfect appetiser to go with the free flow wines or beer while waiting for the mains.

For the set dinner of two, diners get to have a choice of four different sauces. The four sauces available are the signature Chilli sauce, popular Salted Egg sauce, black pepper sauce and superior XO sauce. I got the chance to try two out of the four sauces. Both sauces were as good. The crab was also fresh, sweet and juicy complemented by the delicious sauces. Among the two sauces I tried, I would have to be a bit bias and go for more favourite salted egg.

After digging into the luscious crustaceans and getting my finger messy, there were more dishes awaiting for us to savour. Both the Stir Fried Seasonal Vegetable and Shrimp Fried Rice looked kind of plain but that's only in appearance. The stir fried vegetable was crunchy and flavourful. Each mouthful of the fragrant shrimp fried rice was filled with wok hei aroma. Thumbs up!

Pandan Ice Cream 3/5 and Teh Tarik Ice Cream 4/5

Dessert is a choice of the Pandan or Teh Tarik Ice cream. I personally prefer the teh tarik ice cream over the pandan ice cream. I find the pandan ice cream tasted more like kaya, a bit too sweet.

Besides ice cream, there are also a selection of different Kuehs for diners to have a taste of the local snacks. There is even a Do-It-Yourself Ice Kachang dessert counter.

Extreme Xiao Long Bao (至尊小笼包) @ Tiong Bahru Market & Food Centre

Things that are colourful seems to always catch the eyes of many and arouse the appetite more. When Paradise Dynasty introduced the colourful xiao long bao, it caused a new hip in the Chinese culinary scene with many follow suit. I have even tried coloured Har Gow from Mouth Restaurant too. Probably taking the inspiration from these restaurant's chef, one such hawker at Tiong Bahru Market & Food Centre, the Extreme Xiao Long Bao (至尊小笼包) has created their own twist of the traditional snack.

I tried the Mixed Xiao Long Bao ($5) which is steamed upon order with six delectable bites of them in the steamed basket. There are two Traditional Xiao Long Bao, two Salted Egg Yolk Xiao Long Bao in orange colour and two Cheese Xiao Long Bao in yellow.

Salted Egg Yolk Xiao Long Bao 3.8/5

My followers and readers will know that I like salted egg yolk, I am here specially for this after hearing from a friend that Extreme Xiao Long Bao serves Salted Egg Yolk Xiao Long Bao. I really think it is an interesting concept. After tasting it, it did have a hint of the salted egg yolk flavour but not robust enough for me to go wow.

Cheese Xiao Long Bao 3/5 and Traditional Xiao Long Bao 4/5

The other interesting creation is the Cheese Xiao Long Bao. This is somewhat confusing as I could not really taste anything cheesy. It is more inclined to the traditional taste. The standout definitely has to be the Traditional Xiao Long Bao. A nice balanced between the minced pork filling and broth. The broth was not too sweet unlike so that I have tried allowing one to enough the marinated pork filling while the subtle broth giving it a lift in flavour.

Overall I can't say Extreme Xiao Long Bao is the best in town but it definitely offers a mix of varieties which is value for money. I probably go back for the traditional and salted egg yolk, giving the cheese xiao long bao a miss.

Pan Delights Bistro @ Bukit Merah Central

After checking out Lim Soup and The Bakery Chef, we popped by Pan Delights Bistro next door to find out what is this place all about. The decor is clean and simple with white walls around. I actually quite like the piece of drawing on one of the wall which is a view of the neighbourhood where the bistro is located.

Pan Delights bistro offers an array of European favourites, bar snacks, coffee and beers. While we were there, the bistro was about to close for their afternoon breaks in another half an hours time. As we did not have much time to eat, we just order drinks and a pasta dish to try.

Tangy Passion 4/5 and Sangria Ice Tea 4/5

For the drinks we had the Tangy Passion ($4.50) and Sangria Ice Tea ($4.50). I like how the drinks are served in a big jar, visually I felt it is already value for money. The Tangy Passion is a concoction of passion fruit, lemon and orange juice. The Sangria Ice Tea is an enjoyable non alcohol interpretation with sangria essence infused into tea and finished with a splash of orange juice. Both drinks are refreshing and perfect for the humid Singapore weather.

Scallop & Prawns Aglio Olio 3/5

For mains we tried the Scallp & Prawns Aglio Olio ($14.90), spaghetti with scallop and prawns tossed with garlic, herbs, chilli and olive oil. The pasta was cooked to a nice al dente texture. However the other components have rooms for improvement such as the scallops could be more seared. The flavours were also quite flat, more should be done to bring out the flavours.

While I did not really have a very memorable dining experience at Pan Delight Bistro, I did notice from their facebook page that they have introduced some new items on the menu and they look really good. I can see that they have seriously put in some effort in improving their dishes and look forward to pay them another visit.

The Tastemaker Store @ Havelock Road

Like many neighbourhood cafes such as Percolate, The Bakery Chef and Shrove Tuesday, we are seeing a growing trend of cafes opening up at our housing estates. One such recently opened cafe is The Tastemaker Store at Havelock Road. I would say I really like the decor of the cafe. Keeping it very simple, clean, white wall and wooden chairs and tables.

Lemon Curd Toast 4/5

I do kind of like the concept of The Tastemaker Store taking traditional snacks and delights giving it a new twist of life. Similar to stepping into your neighbourhood coffeeshop or Ya Kun, you can order your Toast Set ($5.80) that comes with 2 soft boiled egg, coffee/tea and a choice of kaya, lemon curd and fruit jam. Instead of the usual bread toast, muffin is used here. I gone for the Lemon Curd Toast as I was told it was imported from Italy. I really like the new interpretation of the classic toast.

Caffe Latte 2/5

Unfortunately the toast set was lacked down by the Caffe Latte ($5). I tried to ask what beans they used but I was told that they could not tell me and they have to check with the owner. Very interesting encounter ever from all my previous cafe hopping. Anyway the coffee was really bad and its has no body at all. I really hope they could do something to the coffee or the whole concept will be waste.

Yam Cake 4/5

The Tastemaker Store does offer some bakes from Maple and Market but I have my eyes on the local delights, Yam Cake ($3.80). The homemade yam cake from the owner's mum is packed with so many components such as 3 different textures of yam, 2 different types of Chinese sausages, fried shallots, pumpkin, dried shrimps and chilli. The generous slide of yam cake will delight both the young and old.

I really hope The Tastemaker Store can really give a thought about using artisan coffee beans. I think they really have the potential to go far except for the fundamental flaw of a cafe, that is good coffee. I will be back again and hopeful by then The Tastemaker Store can satisfy my caffeine addiction.

Whale & Cloud (鲸舆雲) @ Niven Road (Selegie)

The words have been out and soon this little hidden cafe at Selegie will no longer be a secret. Whale & Cloud (鲸舆雲) is a cafe located at Niven Road. To be exact, the entrance is at the back of the shop house, access via the back alley. The door is usually locked, so you have to knock on the door. Is she trying to be secretive? Well I felt it is more for safety reason since she runs the place herself and being at the back alley, there is some element of danger.

The lady owner has rented the backyard of the office and converted it into a small cafe which only opens during weekend when she is free from her sales and marketing job in a technology start up company. In fact the front of the cafe is the office where she holds her day job.

The sight of the unfinished red wall, potted plants hanging down from the ceiling and a platoon of Bearbricks toy collection welcome me when I stepped into the little cafe. This place is so beautiful. It felt like I have been transformed into her own little wonderland.

The lovely cafe is really small with 2 small tables and a row of old Cathay cinema chairs. The little cafe probably can sit about 12 people at max. The center of the cafe is where the daily freshly bakes are being displayed.

There is something about this cafe that makes you feel at ease and in a way forget about the world beyond the blue metal door. Time and pace seems to slow down in the small little space. The soft spoken and gracious lady owner, the lady owner goes about asking the customers what she can get for them and offering her fresh bakes. The whole atmosphere and ambience felt as if I am at home or visiting a friend's kitchen.

Currently the coffee at Whale & Cloud is served in paper cups. The lady owner shared with me that she is currently using Omotesando Koffee beans from Japan. These beans are brought during her recent Japan trip. The coffee beans used at the cafe will depends on her oversea trip, so do look forward to sample different type of coffee beans from various part of the world when she returns from her next trip. Carrot Cake 4/5

Actually I came from a lunch tasting so I was actually quite full but when the owner offered me a slice of the homemade carrot cake to try, I simply could not reject her. I like the fact that the carrot cake is dense, moist, nutty and mildly spiced. I am not a big fan of cinnamon hence I enjoyed this version at Whale & Cloud. In fact I finished the whole slice.

Whale & Cloud operates on a trust concept. There is no menu or price for their offerings. You simply pay what you want before leaving.

Updated: Whale & Cloud actually has three owners. During the visit of my post, the other 2 owners were not around. Whale & Cloud has also started to get their bakes from Kisses Bakery. Each slice is priced at $5. For the coffee, it is still pay per what you like.

1) Alight at Little India MRT station. Take Exit A. Cut across the carpark and walk to Rex Cinema at Mackenzie Road. Cross the road to Niven Road. Instead of going down Niven Road, go to the back alley of the shop houses beside the hostel. Walk down the alley to destination. Journey about 5 minutes. [Map]
