Tong Lok Kway Chap @ Pasir Panjang - Popular Kway Chap In The West

Since moving to the West, I have been wanting to try Tong Lok Kway Chap for the longest time. The popular stall is always sold out by noon and I usually struggle to get out of bed on weekend. I finally managed to drag my feet to the coffeeshop on a Saturday morning to try the renowned kway chap stall in the West.

The flat rice sheet or more commonly known as kway by the locals is thin and smooth. However the accompanying broth was rather weak in flavour.

I ordered a mix platter of Kway Chap which consists of tau pok, beancurd, fishcake, pig stomach, pig skin and pig intestines. The innards were well cleaned and absorbed the braised sauce, it did not have the gamey taste. The sauce did not have the strong herbal flavour. In fact it was sweetness to it.

There are two highlights for me here. The pig intestine has an interesting crispy texture to it. I am not sure how the stall does it but it seems like after it has been braised, extra treatment was done to obtain the interesting texture. The other worthy note is the tangy chilli sauce that complemented the braised ingredients excellently.

Tong Lok Kway Chap does sell out before their closure time. Hence I would advise customers to go early if you don't want to make a wasted trip.

Xing Yun Kway Chap @ Tampines Round Market & Food Centre - Opens Only 3 Days A Week Kway Chap Stall

I got to know about Xing Yun Kway Chap at Tampines Round Market & Food Centre, when I noticed a facebook posting from my friend who is queuing for the kway chap. Apparently the stall only opens three times a week, from Friday to Sunday. It immediate aroused my interests to find out for myself what is so good about their kway chap.

The very following week, I made the long journey from West to East. There was already a queue when I reached. We have to queue for around 45 minutes for our turn to order. Since it took us so long, we ordered almost everything including the pig tongue. My friend was telling me that he spotted the stall auntie brimming with smile when she heard our order.

So what is the verdict of the kway chap? It is worth the queue. Many may worry about the gamy taste of the innards but the ingredients were all well cleaned, braised and absorbed the flavoursome sauce. What I enjoyed even more is the balanced consistency of the sauce which is neither too sweet or salty. It sure suits my taste buds.

Not to forget the other component of a good kway chap, the sheets of kway. The kway was smooth and thin. A mixture of pork ribs broth and braising sauce makes up the soup base for the delish bowl of rice sheets.

Having tried the kway chap myself, I can understand why patrons are willing to wait up to almost an hour for the delicious kway chap. I have to thank my friend who posted the stall on facebook, allowing me to discover another good kway chap stall in my food journey.

Blanco Court Kueh Chap @ Holland Drive Food Centre - A Generous and Comforting Plate of Kway Chap

During my visit to Cheng Heng Kway Chap And Braised Duck Rice at Holland Drive Food Centre, I noticed another kway chap stall, Blanco Court Kueh Chap located just 2 stalls away which is run by an old couple. My curiosity brings me back to the food centre the following week to find out which is better.

First we tried the Kway. Compared to their neighbour, the kway is more silky and thinner in texture. Unfortunately I preferred the thicker rice sheet from Cheng Heng which comes with a bite and is able to soak up the gravy more.

The pale colour is already a tell tale sign that the braising sauce is lighter in taste. True enough the braised ingredients are not as tasty as Cheng Heng, lacking the rich flavour of the braising sauce.

While the braising sauce may be lighter, I did not taste any gaminess in the innards. The serving for 2 pax is $10. The portion is also more generous and I like how the stall auntie chopped them up into big chunky piece. This is the two noticeable advantage of Blanco Court Kueh Chap over Cheng Heng.

I am not sure whether the stall is related to the popular Blanco Court Kway Chap stall at Old Airport Road. My suspicious is there are not. The stall probably used to operate from the defunct Blanco Court food centre and borrow the name when it moved to its current location. Cheng Heng Kway Chap And Braised Duck Rice @ Holland Drive Food Centre

At Holland Drive Food Centre, there are two stalls selling Kway Chap. One of them is Cheng Heng Kway Chap And Braised Duck Rice. This stall seems to have a longer queue compare to the one about 2 stalls away. When I was there, the stall was man by two aunties probably in their late 40s to 50s.

The Kway or rice sheet is smooth and soft. It is served in a bowl of richly flavoured braised broth and topped with a generous serving of fried shallots.

Salted Vegetable 3.5/5

I usually like to order some Salted Vegetables to go with kway chap. The salted vegetable is cooked to a enjoyable softness. The saltiness also helps to cut through the rich braised sauce.

The Kwap Chap for 2 pax comes with pork belly, pig skin, small and big intestines, egg, tau pok, tofu, pig stomach, and duck meat. All together, the meal for 2 pax costs only $12. The different ingredients were well braised, soaking up the rich and flavourful sauce. Among all the braised ingredients, the stood out is the melted in the mouth braised pork belly and the succulent braised duck.

Overall, the kway chap at Cheng Heng Kway Chap And Braised Duck Rice is worth the queue and wait. For $12 and the portion being served, I think it is quite reasonable priced too.

Jin Ji Teochew Braised Duck (金记潮州卤鸭) @ Smith Street Food Centre (Chinatown Complex)

Located at the same stretch of hawker stalls with Yuet Loy and Mitzi at Smith Street Food Centre is Jin Ji Teochew Braised Duck (金记潮州卤鸭). Started in 1980 by Melvin's parents, the stall has been around for more than 30 years. The stall initially sells Teochew braised duck only but as time gone by it has added other items such as kway chap on the menu.

I visited the stall with my kakis, Ian and Tony on a Sunday afternoon to check out the stall. We started off with a platter of braised duck and innards to go with the rice and kway (broad rice sheets). First I tried the Teochew Braised Duck. Using only duck that is above 2kg and not more than 3kg, the duck is braised using more than 10 different spices in a recipe thought by an old master. The duck is succulent and fragrant while not too fatty.

Many are afraid to eat Innards because if it was not cleaned probably it can be quite unappetizing. However, I can safely said that the ones I had was probably cleaned and well braised, infused with the herbally braised sauce.

Which did of Kway do you like to go with your Kway Chap? The thin or thick type? While the thin type is smoother in texture, I prefer the thicker version that is used at Jin Ji. As the kway or broad rice sheets are tasteless, I find that the thicker rice sheets can better absorbed the sauce and has a better bite.

The Rice for the duck rice was a little short of our expectation. Using short grains, it lacked the bite that I was looking for. While I can spot dried shrimps and fried shallots, the rice somehow was still lacking in fragrant.

Pig Ear and Pig Tongue 4/5

Besides Teochew braised duck and kway chap, Jin Ji also sells Pig Ear and Pig Tongue that are not commonly available. Pig ear and pig tongue may sound acquire but it is a delicacy to some. This is a perfect beer snack for me.

After trying out the braised duck and kway chap at Jin Ji Teochew Braised Duck, the three of us all agreed that the braised sauce with its recipe of more than 10 different herbs is the star here. It seems like everything goes well with the braised sauce. If the stall can improve on their rice, it will be perfect. By the way I heard that their new rendition of the dry stew duck kway teow with vinegar garlic chilli is pretty awesome too.

Boon Tong Kee Kway Chap Braised Duck (文通记粿汁卤鸭) @ Zion Riverside Food Centre

Boon Tong Kee? Isn't it the famous chicken rice stall? Don't be mistaken, although the stall at Zion Riverside Food Centre has the same name they are not related. Boon Tong Kee Kway Chap Braised Duck (文通记粿汁卤鸭) is opened by a lady owner who's stall always has a long queue of customers trying to savour its delicious kway chap.

The bowl of kway had a slight tad of herbal taste which came from hours of simmering in herbs and duck bones.

I could not find the exact word to describe the taste of Boon Tong Kee Kway Chap when I first had it. I knew it was different. It lacked the rustic flavours but yet delish. I think ieatishootipost best describle it as new world taste.The gravy that was poured over the ingredients was also thicker with a nice hint of herbal taste.

Heng Heng Boneless Duck Rice.Noodle.Kway Chap @ West Coast Market Square

West Coast Market Square has numerous good hawker stalls and one of them is this duck rice, kway chap stall. I like kway chap that is darker in colour which means that the ingredients were well braised and absorbed the gravy. This stall definitely has it and the kway was silky and smooth too.

Keah Kee Duck Rice.Kway Chap @ Changi Airport T1

Yummy Yummy...nom nom nom. I love my kway chap. I love the staff canteen kway chap in Changi Airport Terminal 1. I think they have one of the best kway chap in town.
