Shakō-Ba @ North Canal Road - A Vibrant & Immersive Experience Alongside Classic and Innovative Izakaya Creations

Time to check out the hottest new izakaya bar in town! Shakō-Ba is conceptualised around a unique daruma theme, inspired by the traditional Japanese doll symbolising perseverance and good luck. The space is stylishly decorated, with a main bar and dining area showcasing cheeky neon signage to create the perfect atmosphere for a night out. There's also a private room available for diners who want to enjoy a karaoke session.

The kitchen is led by Chef Patrick, who brings with him over 25 years of culinary expertise. Besides the ala carte main menu, they have recently launched an omakase menu, served in a cosy dining room away from the main bar and dining area. This setting offers a more intimate and sophisticated ambience whilst still embracing a fun and playful vibe. During my visit, my dining companion and I were treated to the Daruma Lite Omakase, and to begin the evening, we were presented with a tray of 6 different types of Japanese cups and glasses. This welcome ritual allows each diner to choose their preferred vessel, which is then paired with a complimentary welcome drink! There are both alcoholic and non-alcoholic options available, and I was pleased with my refreshing iced yuzu drink.

Chef Patrick then presented the first dish: a tray of Seasonal Appetisers featuring three delightful items. The fruit tomato, delicately sprinkled with snowflake salt, was set alongside a bowl of beancurd skin paired with wasabi. Intriguingly, there were two little river crabs perched on the tray — I initially thought they were just decorative! However, they are indeed meant to be eaten. Deep-fried and seasoned with salt and garlic powder, the crabs were incredibly crunchy, and we demolished them rather quickly.

Next, we were treated to the Seasonal Sashimi Tray, presented with a touch of flair as lights illuminated the ice beneath. We were served three thick, fresh slices of fish: chutoro, yellowtail, and swordfish belly. Chef Patrick adds a creative twist to the soy sauce by transforming it into a foam, encouraging diners to apply the soy sauce foam directly onto the fish rather than dipping it.

Before diving into the Scallops Cold Truffle Somen, diners get to engage in an exciting game of dice with Chef Patrick! The stakes are high—those who win will be well rewarded with a complimentary topping of fresh seasonal hairy crab to elevate their somen! But even if luck isn't on your side, the truffle somen is already very delicious, featuring large, succulent pieces of scallops that make it a delight regardless!

Next is a Truffle Chawanmushi that is served piping hot and warms the palate. Each spoonful reveals a silky smooth consistency, enhanced by earthy truffle flavours.

We were then served a tray of Tempura Prawn & Corn Rice, a dish beautifully showcasing textures' harmony and flavours. The bite-sized pieces of prawn and corn tempura are perfectly crisp, providing a satisfying crunch that contrasts beautifully with the soft, fluffy bed of rice beneath. The rice is seasoned with furikake, and I found the dish to be quite tasty, although my dining companion felt that the rice could do with an extra pinch of salt.

The odds are definitely in your favour, as you’ll draw from a full deck of cards, winning the corresponding number of shots based on your draw. But beware: if you happen to draw the Joker, you'll have to buy a round for all the diners at the omakase table, though at a discounted 1-for-1 price! Are you willing to take the risk?

After all that excitement, sip on a comforting bowl of Clam Soup, where each spoonful envelops you in warmth and contentment. The broth is richly infused with the briny essence of fresh clams, and the many tender pieces of clam in the soup provide a satisfying bite in every sip.

For dessert, diners are treated to three delightful pieces of mochi, each one coated in your choice of chocolate, kinako, or sesame. A nice way to experience traditional Japanese sweets with a modern twist.

This Brown Sugar Cheesecake isn't included in the Daruma-lite omakase menu, but it's absolutely worth ordering from the main menu. The cheesecake boasts a luscious, melted top layer of cheese that perfectly complements the crispy brown sugar crust, adding rich caramel sweetness to every bite. Each forkful combines the creamy filling, the crispy sugar crust and the buttery biscuit base, creating a harmonious blend of textures that will leave you craving more.

The drinks menu is equally enticing, featuring a diverse selection of flavoured shochu, sake, highballs and more, ensuring there’s something to please every palate. Whether you prefer the refreshing notes of a fruity shochu or the nuanced flavours of a finely crafted sake, you’ll find the perfect accompaniment to your meal.

Additionally, there's an exciting option to press the "Superstar Button." If you're feeling like a boss, this fun feature lets you treat the whole crowd to a round of shots for just $288! It's a fantastic way to celebrate a special occasion or simply enjoy a lively night out with friends. Toku Nori @ Telok Ayer Street - Reinventing Handrolls with Their Own Special, Modern and Unique Take

Toku Nori, a new Japanese restaurant, is nestled on the second and third storeys of a pre-war heritage shophouse along Telok Ayer Street. The name "Toku (特)" translates to "special" in Japanese, and true to its name, Toku Nori is reinventing handrolls with its unique touch. The 40-seater sushi bar counter dining space infuses traditional design elements of a Japanese handroll bar with contemporary aesthetics, offering an inviting ambience for a memorable dining experience.

Handroll: Hotate Roll 4/5

We began our dinner with a selection of handrolls, each crafted by the chef right before our eyes at the sushi bar counter, served and timed to individual pace. The Hotate Roll ($9), paired with yuzu koshi, lime, and chives, was a delightful start. The premium-grade japonica pearl rice, Koshihikari, provided a sublime balance of moisture, stickiness, and subtle sweetness that complemented the scallop's natural sweetness. The yuzu koshi and lime pairing heightened the overall flavour profile, making each bite a refreshing experience.

Next, we had the Maguro Roll ($8), featuring smoked onion cream, crispy shallots, and melt-in-the-mouth maguro. The combination of flavours and textures worked harmoniously, offering a delightful textural enjoyment that left us craving more.

The Engawa Roll ($9.5) was another highlight, aburi for a touch of smokiness before being wrapped into a roll with shiro miso and roast garlic. The slight char from the aburi added a depth of flavour that elevated the delicate engawa.

For a more luxurious experience, we opted for the Foie Gras Roll ($16). The creamy foie gras, given a kiss of fire from the torch, was paired with a garlic soy glaze and spicy leek, resulting in an explosion of flavours that was both rich and satisfying.

The Wagyu & Uni Roll ($16) comprised of wagyu karubi, Hokkaido sea urchin, and caviar. This luxurious combination of fatty, melt-in-the-mouth wagyu, the sweetness of uni, and the umami from the caviar created a heavenly flavour profile that left us wanting more.

In addition to the sushi rolls, Toku Nori offers a selection of izakaya items. We sampled the Kakuni Pork Belly ($14/2pc), Aburi Salmon Crispy Sushi ($16/3pc), Maguro Popper ($12/3pc), and Chicken Ribs ($14). Each item was well executed, delicious, and perfectly complemented with alcohol, making them ideal for a casual night out.

The Wagyu Sando was another standout dish. The rich, buttery wagyu was sandwiched between lightly toasted, golden brown bread. The exceptionally tender wagyu and the slight crunch of the bread created a delightful mouthfeel that was both satisfying and memorable.

To wrap up our meal, we enjoyed the Housemade Warabi Mochi ($12), which was airy and soft, presented in three different flavours: kinoko, goma, and matcha. For matcha lovers, we had the Sakura Matcha Latte and Yuzu Matcha, both of which used ceremonial-grade premium tsuki matcha, offering a perfect balance of flavours to end our meal on a high note.

Toku Nori is a gem in the heart of Telok Ayer Street, offering a unique and modern take on traditional Japanese handrolls. Its inviting ambience, attentive service, and innovative menu make it a must-visit for anyone looking to explore the delicate art of sushi and handrolls. Before delving into the dining experience, we indulged in the Takara MIO Sparkling Rose Sake Limited Edition (300ml), served chilled. Accompanying this refreshing libation was the Peperron Edamame ($7). While the edamame pods were flavoured, the seasoning remained on the surface, sparing the prized beans inside.

The Salmon Yukke-Style Carpaccio ($13) graced our table next. Thick, luscious salmon slices bathed in a sweet and tangy chef's special sauce. Adorned with ikura, the pearls of umami goodness, it elevated the salmon's rich, fatty flavours.

Beef Tataki with Dashi Ponzu ($16) followed suit, showcasing thinly sliced, seared beef drizzled with a zesty dashi ponzu sauce. Adding green onions and fried garlic provided an aromatic and harmonious finish.

The Kombu-Marinated Chicken Thigh Steak ($15) showcased dry-aged chicken marinated in kombu before grilling. The result was a tender, moist, and intensely flavoured chicken. While the distinct chicken flavour might not suit every palate, it was a bold and unique creation.

Despite its creative intent, the Pressed Sushi left us with mixed feelings. We opted for the Scallop Pressed Sushi ($22) adorned with ikura and green onions. Regrettably, the ratio of rice to scallop was skewed, overwhelming the delicate sashimi topping.

We savoured the Japanese Style Grilled Apple ($8), accompanied by red bean, mochi, and vanilla ice cream for dessert. This simple yet delightful dessert offered a sweet conclusion to our meal.

We started with 3 Kind Sashimi that was served thick cut. The portion was generous, suitable for 2 or even 3 pax.

Uni Sakura 3/5

Next was a dainty bite I reckoned more befitting as an omakase course - Uni Sakura. Sandwiched between 2 thin wafers are pieces of tamago, pickled radish, and uni. While I didn't find it a cohesive dish, I appreciate its creativity.

Butabara Yuzu Miso 3.5/5

Expect the quintessential skewers. We had Tsukune (chicken meatballs) and Butabara Yuzu Miso. I didn't enjoy the taste of the Tsukune somehow, but the latter fared much better with well-charred pork-belly fats flavoured with tangy and savoury yuzu miso.

The Soft Shell Crab Tempura was pleasing with airy batter. There was a light crunch in every bite, and the best bits were those that gave way to the sweet meat inside.

G Dragon Maki 4/5

One of the recommended dishes at the restaurant is the G Dragon Maki, scrumptious with fried King Prawn, salmon, and a spicy housemade sauce. The fiery savoury sauce brought out the sweetness of the prawns, and I enjoyed the overall mouth-filling texture.

Unagi Don 3.8/5

If you are here for lunch, there are also simple yet pleasing Dons such as Unagi Don at affordable prices. The Unagi was served glazed with tare sauce and slightly charred, adding a delicious smokey flavour layer. The meat was unctuous too. Hence the humble pickled shallots and radish slices were the perfect accompaniments to punctuate the dish with their acidity.
