PN Resto Bar @ Holland Village - Former Black Pearl Steakhouse, Renamed and Revamped Its Menu

PN Resto Bar at Holland Village, formerly known as Black Pearl Steakhouse, has a revamped menu that encompasses a broader range of tapas and mains, including a list of wines and specially crafted cocktails.

Canadian Pacific Live Oysters

We started with Canadian Pacific Live Oysters ($26/6pcs), which were plump and fresh, accompanied by a glass of House White.

Angus Beef Cubes 2.8/5

For a place known for its steak, this plate of Angus Beef Cubes ($28) disappoints with unevenly cooked meat. Some of them were nicely sauteed, but most were chewy or tough.

Grilled Barramundi Fillet 3.8/5

The mains fared much better. The Grilled Barramundi Fillet ($31) with mango salsa was served with crispy skin, with sautéed cherry tomato giving bursts of sweetness to the creamy white wine sauce.

Ebi Sakura Capellini 4/5

Ebi Sakura Capellini ($27) with ikura never fails to please when done right - al dente capellini punctuated with savoury sakura ebi, with occasional bursts of briny saltiness from the ikura pearls.

Red Velvet Molten Lava Cake 3/5

Our dessert was a Red Velvet Molten Lava Cake ($16). I love the almost-crusty layer of sponge cake but not so much on its sweetness. A more bittersweet chocolaty cake would have been more delectable.

Gordon Grill @ Goodwood Park Hotel - Celebrating German Gastronomy In Commemoration Of The Hotel's 120-Year Legacy

In commemoration of Goodwood Park Hotel's 120-year legacy, embark on a German gastronomy journey at Gordon Grill to celebrate the occasion. Why German? It is because Gordon Grill is once known as Teutonia Club in the 1900s. The property was an exclusive enclave for German expatriates. Hence the restaurant has put together an exemplary selection of notable German dishes interpreted through modern European culinary style.

We have the Five-course Degustation Menu ($98++) which will be available from 22 August to 21 September 2020. Besides that, there is also a three-course ($68++), and four-course ($88++) set menus to cater for everyone's preference. We started the dinner with the chilled Truffled Capellini with Crab Meat and Caviar to whet the appetite.

Chilled White Asparagus, Dill Cured Salmon 3.8/5

Our first appetiser is Chilled White Asparagus paired with Dill Cured Salmon topped with mesclun lettuce and shallot apple vinaigrette. I somewhat can associate with the dish as my first trip, and first meal in Germany was white asparagus a few years back. Unfortunately, due to the supply issue, they have to use white asparagus from Peru, which is just as sweet.

Seared Atlantic Sea Scallops 4/5

The second appetiser is Seared Atlantic Sea Scallops paired with smoked Black Forest Ham and Brown Mushroom Ragout, held together in a creamy, lemony buttered hollandaise sauce. The dish combines the flavours of Northern coastal areas of Deutschland with that of the South.

Bavarian Sauerkraut Soup 4.2/5

The comforting Bavarian Sauerkraut Soup is subtly sweet, creamy with a well balanced tangy finish. The addition of potatoes, speck and creme fraiche provide the boast in flavours and textures.

Pan-seared Halibut Fillet 4/5

For the main course, the guest will have a choice between the Crispy Pork Belly or Pan-seared Halibut Fillet. I decided to have Halibut, which is popular seafood found in Northern Germany. The firm and buttery white fish served atop an appetising compote of Swedish turnip, leeks and potatoes.

Crispy Bavarian Pork Belly 4/5

I took a photo of the Crispy Bavarian Pork Belly, which my dining companion had. Ok, It is served with dark beer and caraway gravy, a classic flavours of Bavaria. I more than took a photo, I got to try a piece of it it. What I really enjoyed is the layer of airy, crispy crackling skin. The piece of meat was also cooked to fork-tender.

Cicada @ Clarke Quay - Modern Asian Cuisine With Cocktails On Tap

Cicada is a newly opened restaurant at Clarke Quay that offers cocktail on tap and Asian-inspired dishes using Western culinary techniques. Unlike the restaurants in the area, Cicada stood out with its lush and greenery interior with softwood furniture.

We started our dinner with a couple of cocktails from the tap to go along with the small bites. From the tap, we kickstarted the diner with Cicada Sling ($18) and Iced Kopi ($18). Both are light and easy drinks that will ease one into the night. The other cocktails available on the tap are Quayside Aperol Spritz, Fennicillin, Thai Collins, Chocolate Mojito and Farang. During happy hour, the cocktails are going at $15 per glass instead of $18.

Beer Battered White Bait 4/5

For small bites, we had the Truffled Edamame ($9) and Beer Battered White Bait ($12). While the truffle gives the edamame a beautiful scent, it doesn't get infused with the beans inside. Hence I doubt it is necessary to add truffle to it unless one eats the skin. Or else lightly seasoned with salt is sufficient. As for the beer-battered whitebait, topped with wasabi snow is very addictive. I could not stop going back for me.

Smokin' Dumplin's Foie Gras 3.5/5

An interesting take of the Chinese dumpling is Cicada's version of Smokin' Dumplin's served in an encased jar filled with applewood smoke. It comes in 3 stuffing options, Truffle Foie Gras ($22), Truffled Mushroom ($14) and Pork and Mushroom ($14). The dumpling skin is replaced with a crepe skin to house the stuffing in it. I didn't enjoy the dumpling because the crepe skin becomes soggy from the filling inside. However, I feel that this will be acceptable for Westerners for the innovative take of the traditional Chinese dumpling.

The Cicada's Nori Tacos ($14) comes in trio with a crispy nori shell. Available in three flavours, they are Salmon Belly Cubes with Japanese Pickles ($14), Korean Beef Bulgogi with Kimchi Slaw ($14) and Pan Seared Foie Gras with Peanut Sauce, Pickled Cucumbers ($18). This is not the first time I have eaten such interpretation, but I really enjoy the fusion of the vibrant flavours.

Cicada's BaoBao Trio 3.5/5

If you not into tacos, there is an oriental interpretation of the slider using steamed mantou. Cicada's BaoBao Trio comes in 3 delightful flavours. They are Crispy Prawn Kakiage with Wasabi Mayonnaise ($14), Chicken Katsu with Rojak Salad ($12) and Aubergine & Mushroom with Teriyaki Mayonnaise ($12). Once again, these dishes are not new, but I applauded the thoughtfulness behind the sauce pairing for each ingredient.

Char-Grilled Spatchcock 4/5

For the mains, we have the Char-Grilled Spatchcock ($42) which is suitable for up to 4 people. Weighing around 800g, the bird is marinated with a middle eastern spice rub. Nothing fancy in the cooking, allowing the full appreciation of the tender meat with a subtle aroma of the spices. It comes with cherry tomatoes, potato gratin, sauteed mushroom and rojak salad as accompanying sides.

Grilled Vegetables Platter 4/5

For the vegetarians or you still want some vegetables for your meal, there is the Grilled Vegetable Platter ($35) that comprises of Impossible Meatballs, Sweet Corn, US Jumbo Asparagus, Shiitake Mushrooms, Cherry Tomatoes, Baby Carrots, Baby Potatoes and Sundried Tomato Pesto.

Oriental Braised Duck Leg 4/5

Among the dishes, the Oriental Braised Duck Leg ($24) is one of my favourites. The duck leg is cooked to tender, absorbing the sweet, savoury five-spice duck jus. Though I find the sauce is on the sweet side, it may be my own preference. This is paired with crispy yam balls, the classic duck and yam pairing in Chinese cuisine.

Sakura Ebi Capellini 4.2/5

My favourite goes to the Sakura Ebi Capellini ($22). Each mouthful of the springy capellini is filled
with the strong crustacean flavour, complemented by the toppings of sakura ebi, bonito flakes and shredded nori.

Purple Sweet Potato Panna Cotta 3/5

Moving to the desert, we began with the colourful Purple Sweet Potato Panna Cotta ($12). Aside from the vibrant plating of mixed fresh fruits, the panna cotta was a letdown. Instead of being smooth and silky, it turned out to be a mousse-like texture.

Cicada's Chendol 4/5

I am actually quite surprised with Cicada's Chendol ($12) that comes with a scoop of coconut ice cream. It hits the spot with the fragrant coconut milk and gula melaka, which to me is the deciding factors of a good bowl of chendol. The grass jelly is rather weird for chendol, but I am not complaining as I thought it gives the dessert extra textural enjoyment.

Yam Mille Feuille 4.2/5

I find the Yam Mille Feuille ($12) a creative creation that reminds one of the Chinese Orh Nee dessert. In between the layers of crispy pastry are fragrant yam paste, paired with coconut ice cream on the side.

Sticky Date Pudding 3/5

The Sticky Date Pudding ($14) with butterscotch sauce and vanilla ice cream, unfortunately, was too sweet for me. That aside, the sticky date pudding is moist and flavourful. I have to admit I don't have a sweet tooth. Hence this is hard for me to finish.

Porta at Park Hotel Clarke Quay goes green with a plant-based Green Monday menu in partnership with Green Monday, as part of its initiatives to support and raise awareness on sustainable future through inspiring diners on the benefits of green diets. A social enterprise group established in Hong Kong in 2012, Green Monday promotes and enables green, healthy and sustainable living to raise awareness and inspire public on the benefits of green diets, nurturing the love towards our planet, and the pursuit of harmony in life. On the Green Monday menu are 10 dishes ranging from vegetarian, vegan, dairy-free, and nut-free, including plant-based meat and dairy alternatives, featuring plant-based produce from Beyond Meat, Heura, as well as plant-based cheese and dairy from Daiya Foods.

Going green also means allowing simple flavours to shine, and their subtleties always leave you wanting for more. Burratina ($22) is one such dishes, where the delicate, pillowy burrata is enlivened with savoury, peppery and sharp basil pesto shio kombu, balanced with sweet Roma tomatoes.

Beyond Burger ($29) features both the plant-based alternatives Beyond patty and Daiya cheese, bind together with housemade ketchup and mayonnaise, caramelised onions in a brioche bun. The smokey, rich ketchup and that savoury-sweet caramelised onions are to die for. However, I personally find a messy burger more fulfilling, and Beyond Burger falls short of that factor.

Orecchiette Pasta 3.8/5

Orecchiette Pasta ($24), on the other hand, is an ultimate comforting dish that will win you over by its warm and creamy aroma effusing from the housemade cream sauce. The sauce is made using cream, milk, garlic, onion, bay leaf, infused with the earthiness of wild mushrooms. Sliced and tossed in the Beyond sausage, passed off easily as the real thing with their garlicky flavour and meaty texture.

Porta's all-day dining menu sees new creations as well, starting with Parma Ham ($16). Dressed with tangy balsamic vinegar and creamy Thai lime aioli, both elements cut the richness of the meat, and the latter also helped to harmonise the contrasting flavours of the savoury meat and the sweet compressed watermelon cubes.

For the main course, a crowd-pleaser will be the Venus Clams Capellini ($24). It showcases Indonesian clams prepared in clam stock with shio kombu, spiked with heat from chilli padi and an accentuated umaminess from a handful crisp sakura ebi.

Black Cod 4/5

Adopting an earthy green-brown palette, I love the execution of the Black Cod ($29). An emerald green spinach dashi purée backdropped its ivory white self, which is further contrasted with a blanket of crushed pistachio and puffed wild rice that textured its buttery flesh.

Gourmet Pork Sausage Roll 2.8/5

Gourmet Pork Sausage Roll ($21) is the latest brunch item, featuring a gourmet pork sausage roll with jalapeno salsa. The sausage was juicy, but the salsa lacked both the fiery and kick. Similarly to Beyond Burger, it was a brunch item that left me feeling a little empty.

Coffee lovers will appreciate the bitter-sweetness in the new dessert creation - Kopi "O" ($12), a 'parfait' in a traditional coffee cup made with housemade dark chocolate coffee sponge, coffee crumbles, coffee jelly, milk sauce, and espresso ice cream, completed with butter sugar toast on the side.

Meyer Lemon Trifle 4/5

If you are a fan of lemon tart, this Meyer Lemon Trifle will be right up on your alley with a tangy concoction of Victorian sponge and housemade lemon curd. I actually like it even better with the thyme-infused whipped cream, which is lighter and less cloying than meringue.

Glorious New Creations To Usher In The Year Of The Rat At Goodwood Park Hotel

For the Year of the Rat, Min Jiang at both Goodwood Park and Dempsey have assembled a line-up of new creations as well as new sweet and savoury delights for the festive celebrations.

Available for both dine-in and takeaway at Min Jiang Goodwood Park Hotel is the Joyful Abundance Yusheng ($168++ dine-in/ $179.75 takeaway). The platter is adorned with an intricate illustration of a pair of children jovially playing. The delectable yusheng comprises of baby abalones, raw salmon, cheesy deep-fried chee cheong fan strips, romaine lettuce, wild arugula, yellow frisee, red radishes, white radishes, pickled melon strips, red shiso, fresh pomelo, crushed peanuts, white sesame seeds and pine nuts. All these are held together by the light, yet refreshing dressing made from calamansi juice, plum sauce and strawberry jam.

For those planning to celebrate Lunar New Year in the comfort of their home, one can impress their guests with the Pot of Gold ($243.95). This is good for 8 persons. The slices of slow-braised pork belly alternated with sliced creamy pumpkin for a delightful mouthful. This is paired with premium 6-head Australian abalones and broccoli.

Five Fortune Takeaway Platter

Great for sharing is the Min Jiang at Dempsey Five Fortune Takeaway Platter ($104.85) which is suitable for 6 persons. The five tantalising appetisers are Deep-fried Prawns with Crispy Milk, Sliced Smoked Duck with Plum Sauce, Pan-fried U.S. Kurobuta Pork Strip with Melted Onions, Crispy Soft Shell Crab with Garlic and Shallot and Marinated Jellyfish.

Another delectable takeaway at Min Jiang Dempsey is the Fortune Delight Crispy Silver Hill Duck with Glutinous Rice ($211.85). It is suitable for 8 persons. The duck is deep-fried to crispy and served on top a bed of fragrant glutinous rice.

Longevity Noodles with Baby Abalones and Roasted Iberico Pork Loin

A unique alternative to the usual traditional Chinese New Year fare is the Longevity Noodles with Baby Abalones and Roasted Iberico Pork Loin. The East-meets-West dish uses capellini tossed in an umami-laden combination of soya sauce, shallot oil and chopped dried kombu. This is then topped with braised baby abalones and chopped chives. Fortune Koi Fish 'Nian Gao' with Red Bean Paste

During Chinese New Year, restaurants will create dishes of fishes as they symbolise a surplus of prosperity, which is auspicious in Chinese's tradition. At Min Jiang, customers can complete the reunion meals on a sweet note with the Fortune Koi Fish 'Nian Gao' with Red Bean Paste ($9.80++ for 2pc dine-in/ $39.40 takeaway box of 8pc) and Duo of Prosperity Fish ($118).

Mango with Pomelo & Sago Pudding and Durian Pudding

As for the Duo of Prosperity Fish, it's actually Mango with Pomelo & Sago Pudding and Durian Pudding. A befitting sweet finale, brimming with tropical fruit flavours.

Spring Blossom Cake 

Beautifully decorated and ideal for gifting is two new cakes at Goodwood Park. The Spring Blossom Cake ($108) which encapsulates the vibrancy of Spring is a moist butter cake layered with French-style buttercream. The stunning showstopper is donned in a brilliant red fondant, studded with delicate cherry blossoms and atop, three beautifully handcrafted, lifelike peonies.

Prosperity Marble Cake 

Another resplendent offering is the decadent Prosperity Marble Cake ($68). The beautiful cake is a rich chocolate cake slathered with a rich dark chocolate ganache. It is decorated with a novel icing print with the "福" character and pair of auspicious carps symbolise good fortune, luck and abundance.

Gula Melaka Festive Cookies

A new addition is the Gula Melaka Cookies ($28.80 per box of 7pc). It is a harmonious melange of nuttiness from the ground cashew nuts and caramelised notes of the gula melaka. It also comes with pretty icing in seven different symbolic designs.
