Fireplace by Bedrock @ One Holland Village - Brand New Wood-fired Grill Concept by Bedrock

Fireplace2

Fireplace by Bedrock, nestled in the vibrant enclave of One Holland Village, emerges as a captivating extension of the renowned Bedrock brand. Inheriting the DNA of its popular steakhouse lineage, Fireplace beckons diners with a welcoming warmth and convivial ambience. The restaurant masterfully utilises fire to enhance each ingredient's innate rustic flavours, crafting a chic yet relaxed atmosphere distinct from its sister establishments.

Fireplace8
Watermelon Salad 4/5

Our dinner commenced with the Watermelon Salad ($14), a delightful ensemble of fresh watermelon cubes, red onions, cucumbers, toasted pine nuts, feta cheese, and coriander. Elevated by a coriander lime dressing, the salad resonated with vibrant hues and bright flavours.

Fireplace22
Avocado 4.2/5

The Avocado ($12), grilled over an applewood-fired grill, revealed a perfectly creamy texture. Crowned with roasted corn kernels and diced tomatoes, the dish boasted a harmonious interplay of sweetness and creaminess, accentuated by a drizzle of ponzu dressing.

Fireplace12
Coal-Roasted Sweet Potatoes 3.8/5

Coal-Roasted Sweet Potatoes ($10) underwent a transformative journey from boiling to grilling on the applewood-fired grill. Seasoned with salt and blended fennel seeds, the dish showcased the sweet nuances of purple sweet potatoes, intensified through the grilling process and paired with sour cream.

Fireplace16
Octopus Tentacles 4/5

The Octopus Tentacles ($28) underwent tender simmering before meeting the applewood-fired grill. Adorned with housemade coriander pesto sauce, celery cress, and Japanese 7-spice blend, the dish flaunted a delightful marriage of textures and flavours.

Fireplace4
Bone Marrow Toast 4/5

The Bone Marrow Toast ($28) presented a rich indulgence as beef bone marrow graced a toasted housemade brioche bread. Caper, parsley, caramelised onions, and pickled shallots adorned the ensemble, contributing to a balanced and delectable finish.

Fireplace24
Half Spanish Suckling Pig 4/5

Transitioning to mains, the Half Spanish Suckling Pig ($240) took centre stage, slow-cooked over the fire pit for three hours until the meat achieved tender succulence and the skin crisped to perfection. Ideal for sharing, this dish embodied a celebration of flavours.

Fireplace26
Dirty Duck 4.2/5

The Dirty Duck ($48) showcased an Irish duck rubbed with a medley of aromatic spices and sous vide and finished on the grill. The succulent meat, smoky char, and infused spice aroma resonated harmoniously, complemented by the thoughtful addition of grilled plum to cut through the richness.

Fireplace30
8 Hours Wood-fired Roasted Whole Lamb 3.8/5

A testament to its dedication, the 8 Hours Wood-fired Roasted Whole Lamb, 300g ($50), featured Australian Lamb slow-cooked for eight hours over the fire pit. The result was a tender and juicy delight devoid of any gamey undertones.

Fireplace36
Lemon Pound Cake 3.8/5

The Lemon Pound Cake ($13) showcased a unique twist for a sweet ending. Grilled on the applewood-fire pit after being brushed with melted butter, the cake's charred surface provided a delightful contrast. It was a symphony of textures, served with creme fraiche and mixed berries compote.

Fireplace33
Grilled Spiced Rum Pineapple 4/5

Concluding our feast, the Grilled Spiced Rum Pineapple ($14) offered a sweet and tangy finale. Soaked in rum and grilled over the fire pit, the pineapple slices were served with spiced rum syrup and a scoop of rum and raisin ice cream, creating a memorable conclusion to our dinner experience.

Fireplace by Bedrock embodies a fusion of rustic charm and finesse, inviting diners to savour the nuanced artistry of fire-kissed flavours.

Province @ Joo Chiat Road - Relish in a 7-course Autumn Menu of Fusion Southeast Asian Flavours in Hidden Private Dining Restaurant

IMG_8004

Led by Chef-owner Law Jia-Jun, Province stands as a private dining restaurant in Joo Chiat dedicated to exploring the diversity of Southeast Asian ingredients and flavour combinations. Chef finds inspiration in many sources, from his childhood memories to his travels, the people he has met, and more. A meal here is perfect if you're looking for something different yet still done brilliantly.

IMG_6342

Locating the restaurant, nestled discreetly within 808 Eating House, is the first adventure for diners. It may be tricky initially, but head on in via the main entrance of 808 Eating House, and the staff will provide guidance.

IMG_6347

The intimate space, accommodating only eight guests, is perfect for a date night or a cosy celebration with friends and family. The chef refreshes his menu every season, curating the finest ingredients for his creations. The 7-course prix fixe menu begins with smaller bites, progresses to larger-sized proteins, and concludes with desserts. During this visit, we had the opportunity to try the Autumn menu.

IMG_8005
Rice ‘Toast’ with Charcoal Seared Prawns 4.8/5

We were impressed right from the first dish, the Rice 'Toast' with Charcoal Seared Prawns. Inspired by grilled onigiri, the toast here was made of rice, giving it a unique texture, topped with fresh and sweet seared prawns from Ah Hua Kelong.

IMG_8006
Ah Ma’s Popiah 4/5

Next was a dish inspired by Chef's grandma - Ah Ma's Popiah. With a chewier skin base with a hint of butter fragrance, this elevated rendition of popiah featured cured pork belly, sweet sauce and fried beancurd.

IMG_8007
Yakitori 4.2/5

Instead of the traditional choice of chicken, the Yakitori at Province uses local deboned frog leg. It is charcoal grilled and served with a charred calamansi for a drizzle of acidity.

IMG_8008
Cephalopod 4.5/5

The Cephalopod highlights squid in two ways. First in a smoky grilled style and second as fried. Paired with pomelo, betel leaf, and pickled spring onions, the dish was a harmonious mix of savoury, sweet, tangy, and subtle bitterness.

IMG_8009
Into the Brassica Garden 4.2/5

Into the Brassica Garden showcases ingredients which were all sourced from Cameron Highlands. The dish features various forms of broccoli, including a warm and creamy broccoli puree as the base, complemented by kohlrabi and mustards. The addition of calamansi vinaigrette provides a delightful brightness to the ensemble.

IMG_8010
Golden Cap Farms 4.5/5

Mushroom lovers would surely be delighted with Chef's Golden Cap Farms. This dish combines a medley of King Blue Oyster mushrooms and fermented mushrooms topped with caramelised onions, croutons, and chives. The dish, reminiscent of a mushroom pie, impressed with its layered flavours, even though the caramelised onions stole a bit of the spotlight.

IMG_8011
Finned 4.5/5

Finned has fork-tender local halibut served with Ah Hua Kelong's clams, garlic scapes and a lightly savoury barigoule sauce. It was a delightful take on halibut.

IMG_8012
Feathered 4.8/5

The most surprising dish for many of us was Feathered. Despite its unassuming appearance, it delivered a remarkable depth of flavour. The chicken, meticulously prepared by removing the skin and stuffing it with various chicken parts, including liver and heart, was marinated in whisky and homemade five spices before being roasted. The succulent meat was paired with a scoop of nutty roasted yam, coriander oil, and a black vinegar reduction infused with a 10-year-old Chinese Hua Diao wine.

IMG_8013
Fruit I 4.8/5

We thought using starfruit in Fruit I, our first dessert, was genius! It was made up of variations of starfruit with attap seeds as the icy base. I've never been a fan of attap seeds as well, but the use of them here for their sweetness and crunchy texture was excellent. It was lovely paired with a topping of tangerine gem, which provided citrusy floral notes.

IMG_8014
Fruit II 4.8/5

Our second dessert of Fruit II was equally impressive. Here, we had a base of Indonesian vanilla chantilly between crunchy mille-feuille, sweet Berangan bananas poached in rum and spices, and a scoop of rum ice cream. It reminded us of a childhood sweet treat, but much more elevated.

While some may find the overall portion of food to lean smaller, I thoroughly enjoyed Chef Jia-Jun's innovative creations. The team provided attentive and warm service, taking the time to explain each meticulously prepared dish passionately. It was a delightful experience worth a visit!

Common Man Coffee Roasters @ Alexandra - New Outlet Housed In A Heritage Building

IMG_7040

Common Man Coffee Roasters has recently opened its outlet at Alexandra, located in a beautiful heritage building outside Anchorpoint. In the evening, Common Man Night Shift takes over to provide after-hours sessions with food and wine.

IMG_6998
Turkish Common Man Breakfast 4.5/5

Its menu has been updated with a few dishes. Under Breakfast, we had Turkish Common Man Breakfast ($29). Presented in a rather unusual way but equally tasty. We had a phyllo-wrapped soft-boiled egg on the plate accompanied by 2 crispy feta balls on a bed of green hummus, served with grilled pita bread. The egg was gorgeous with a jammy centre, and the green hummus was well seasoned with a good amount of spice that gave this dish its characteristic flavour profile. The toasted pita bread had a nutty taste, making it a good base for the dish's bold flavours.

IMG_7011
Kouign Amann Toast 4/5

For a sweet breakfast item, Kouign Amann Toast ($25) is an excellent alternative to waffles or pancakes, featuring the popular Kouign Amann from TBB crowned with Vanilla ice cream, complete with a classic cherry-chocolaty combination of cherries, plume compote and chocolate sauce. The sprinkle of chocolate granola nuts and almonds gave the dish a delectable crunch and nuttiness.

IMG_7002
Conti Sandwich 3/5

Under Lunch offerings, Conti Sandwich ($29) features Foccacia from TBB spread with sundried tomato, and shaved ham and rocket leaves are sandwiched in between. The Foccacia was excellent, with a fluffy and chewy texture and a pronounced rosemary flavour. Though Strataciatella and Pecorino cream were listed on the menu, there was little of it. Overall, it is still a decent sandwich.

IMG_7003
Grilled Veggie Salad 3.8/5

Grilled Veggie Salad ($27) was vibrant with savoury and citrusy orange miso dressing and appetizing with a salty punch boosted by an addition of Anchovy cream. It was hearty with charred courgette, burnt cherry tomatoes, creamy avocado and a soft-boiled egg. The salad is topped with pieces of morish parmesan crisp for a textural crunch.

IMG_7005
Chilli Chicken 4/5

Chilli Chicken ($32) features a Supreme cut chicken breast, a dish that celebrates warm flavours and that of spices. Despite its lean nature, the chicken breast was exceptionally succulent, enriched with a serving of creamy avocado salsa and starchy smashed sweet potato. The accompanying harissa sauce elevated the bold flavour profile, with peppery rocket leaves and pickle onions to cut through the savoury intensity.

Avenue 87 @ Amoy Street - The Third Edition Tasting Menu

Avenue87Jul22-17

I am back again at Avenue 87, a modern Asian restaurant opened by co-Chef-Founders Glen Tay and Alex Phan. The duo has recently put together a new menu - Journey Menu (125++) and  Experience Menu ($168++).

Avenue87Jul22-2
Pork Jelly 3.5/5

I had the Experience Menu, kickstarting with several Snacks that showcase the chef's interpretation of the local flavours. For example, the Pork Jelly is inspired by the classic Teochew pig's trotter jelly sandwiched between two thin crispy sheets.

Avenue87Jul22-6
Tofu and Kueh Pie Tie 4/5

Next is the Tofu and Kueh Pie Tie. The Tofu is an interpretation of the mapo tofu substituting the spiciness with Korean chilli paste (gochujang). The Kueh Pie Tie is not a new snack but an elevated one for their love of the local curry fish head. It is Indian-style curry, tangy and packed with aroma from the spices.

Avenue87Jul22-13
Laksa 3.5/5

As for the Laksa sphere, it was an interesting representation of the local flavour topped with caviar and an Indian spiced cracker. Unfortunately, I thought the cracker spices overpowered the appreciation of the laksa flavour.

Avenue87Jul22-18
Uni on Toast 4.2/5

The last snack is the Uni on Toast. A delicious combination that will get one screaming for more.

Avenue87Jul22-24
Foie Gras 4/5

Moving on to the next dish, we have the Foie Gras, which is thick and creamy, paired with Chinese celery, confit tomato and mandarin orange. I like the touch of mandarin orange that helps to refresh the palate.

Avenue87Jul22-36
Duck 4.5/5

One of my favourite courses is the Duck item, a soup dish. Being Chinese, we love our soup. The saltiness from the salted vegetables and heat from the peppercorn made this a delicious pot of soup. You can also find a cabbage roll wrapped with duck meat in it.

Avenue87Jul22-39
Frog Legs 4.2/5

The Frog Legs are my dining companions' favourite dishes. The boneless and tender frog legs are cooked in a beautiful Thai green curry sauce, with the addition of lemongrass and Thai basil for the extra fragrant.

Avenue87Jul22-44
Toothfish 4.5/5

The Toothfish has a sweet buttery flavour similar to cod fish. The beautifully cooked fish is complemented by the crab roe and baijiu sauce, topped with ikura.

Avenue87Jul22-48

Avenue87Jul22-49
Aged Yamaguchi Wagyu

The last savoury dish is the Aged Yamaguchi Wagyu. It is served together with Taiwanese claypot rice with wild mushrooms. Having them together, it felt like having a plate of Asian char siew rice on a plate.

Avenue87Jul22-54
Calpis

Before moving to the dessert, we had the palate cleanser that was sweet and refreshing.

Avenue87Jul22-60
Toast 4.2/5

For dessert, we had a soft and fluffy Toast deep-fried to a crispy exterior, paired excellently with kaya ice cream.

Avenue87Jul22-64

Avenue87Jul22-68

Last, we had the Petite Four to wrap up the dinner. I enjoyed the soft and spongy Mochi coated with peanuts. The Jackfruit Ice Cream Sandwich is as good too.

Overall, I enjoyed the new menu at Avenue 87. Previously, I felt their menu might be hard for customers to accept as it was too focused on local flavours. The new menu is more balance, incorporating more Asian flavours while still showcasing the local flavours in the snack items.

Note: This is an invited tasting.

TheBravery10
Hojicha Milk 4/5, Dirty Matcha 4/5

The Bravery serves up signatures like the ever-popular Lavender Latte ($6.50) along with new offerings such as Hojicha Milk ($6.50) and Dirty Matcha ($7). Using beans from Allpress Espresso in Melbourne, which boasts of rich, chocolate notes with a full-bodied flavour, each cup of joe makes for the ideal morning or midday pick-me-up.

We round off our meal on a sweet note with their variety of desserts. Available all day, the bakery churns out a wide range of bread, cakes and pastries, such as the crowd-pleasing Gateau au Chocolat ($6.90 per slice) filled with rich chocolatey decadence.

TheBravery16
