Folklore @ Destination Singapore Beach Road - A Heritage Peranakan Lunar New Year Celebration

Celebrating Lunar New Year often means feasts of abundance. In today's world that we are living in, perhaps, what is more important is the togetherness that this period could bring to every household. Make your way down to Folklore at Destination Singapore Beach Road, and enjoy a warm and homely reunion affair by Chef Damian D’Silva. Have a taste of what it means by heritage - not just about the age-old recipes handed over from Chef Damian's maternal Paranakan family but how each dish is being cooked with fond memories and skills that chef has brought with him since young, by helping out his grandmother and mother in the kitchen months ahead of the celebratory feast.

Popiah Set 4.5/5

Every table, including yours, should have this “Do-It-Yourself” Popiah Set ($60). Takeaway is available at $321 nett for minimum of 20 pax order, good for 4 pax. Rolling the popiah together really enliven the mood and how often do you get the chance to make it together? The popiah filling is not something that you could get in the market. It may look somewhat the same but what you will get is hand-shredded turnip, bamboo shoot and pork belly cooked in prawn and pork stock. The ingredients are not thrown and cooked together in one shot but prepared and cooked down individually to develop their flavours before mixing them together. Cooked with preserved soya bean paste, the filling may look heavy and rich but it simply delivered a balance of savouriness and sweetness. Accompanying the filling is an array of condiments like the minced and fried garlic, chilli paste, sweet flour sauce, shredded egg, crabmeat and prawn, as well as ten large house-made popiah skins. The popiah skin is made fresh daily and you can see just how moist each is when served. Unlike the usual, this skin is soft and light with egg, but I would prefer a plain popiah skin to deliver the flavours wrapped within without adding on to it. I love the succulent crunch and sweetness that the prawns brought to the filling.

Peranakan Prawn Salad 3/5

A must-have dish at Chef Damian's home during Chinese New Year, representing wealth and luck is this Peranakan Prawn Salad ($20). It is an appetiser featuring poached prawns topped on a bed of cucumber slices and fresh Chinese lettuce leaves. What is unique is the chilli plum sauce drizzled atop, along with lime juice. The salad has all the refreshing elements, akin to a Thai mango or papaya salad but the thick chilli plum sauce tends to coat the ingredients like what happened when you overdose your Yu Sheng with Plum sauce, which could get a little overwhelmingly sweet and spicy at the same time.

Garang Assam with You Tiao 4.5/5

If you like dishes such as Penang Laksa, Garang Assam with You Tiao ($34) will up the pleasure exponentially. A dish enjoyed on the second day of Chinese New Year in Chef Damian’s family, this spicy and sour Peranakan dish is wholesome with red snapper fillet, served with crispy you tiao. A laborious dish, I would say. Rempah titek is made up of dry chillies, shallots, shrimp paste, candlenuts, turmeric, galangal, bruised lemongrass, fried till cooked, then add water and boil till thickened, before adding in tamarind pulp and water. And finally, in goes the red emperor snapper fillet. To dip the You Tiao in and savour the gravy that it has sop up is the closest you can get to Chef Damian's memory. He has enjoyed his the same way too, as his grandma would visit the market in the morning to purchase freshly fried dough fritters to complement the rich, piquant gravy. It is a dish that makes you salivate just thinking about it. Well, if dough fritters are too rich, a bowl of rice is always good!

Sayur Kailo with Pork Ribs 3.8/5

In Sayur Kailo with Pork Ribs ($32), get acquainted with this vegetable which called itself drumstick. Due to the shape of its pod, this harvested gourd from the Moringa Tree features a thick long bean pod and serves well as an accompaniment to dishes with thick sauce or gravy, as the pod takes on fully the flavours of the base sauces. Its tough exterior reminds me of an old lady's finger which the exterior has grown to tough to be eaten but the interior still remains pulpy. To eat it, you would have to would bite into a section of the cooked pod, then pull it out of your mouth to extract the soft flesh. I had mine this way and it was like indulging in a decadent bone marrow. I'm not a fan of pork curry but these tender ribs were better than expected.

Bakwan Kepiting 3.8/5

Peranakan cuisine is just not about curries and spices, as seen in Bakwan Kepiting ($20), a crab meatballs soup cooked in a prawn and pork stock. Minced pork is mixed with chopped prawns, bamboo shoots, soya sauce and "beaten" to a desired consistency, followed by crabmeat and spring onions. The meatball paste is shaped into balls and then steamed before adding to the soup to be cooked. It is a dish suitable for the spring festival, as bamboo shoots is essentially a spring produce which is added to the soup, adding on to the significance as a festive dish. The meatballs were compact but at the same time loose with bamboo shoots as fillers, which flavour the meatballs with sweetness and crunch.

Mee Siam 3.8/5

Peranakan Mee Siam ($16) is a classic staple in a Paranakan household and Chef Damian’s mee siam paste is a complex blend of onions, chillies, shallots and candlenuts. This is a drier version compared to those that we are familiar with. The vermicelli is fried with the paste, together with the thick broth that is slow-cooked with fermented bean paste, dried shrimps, prawn broth and then finished off with lime juice. No assam is added, instead lime juice and sugar are used to impart the sour and sweet notes. If you find assam too assertive, this might live up to your expectations. And the eggs, were exceptionally fluffy!

Kueh Kosui 4.8/5

For dessert, share a plate of Kueh Platter featuring chef's daily selection of handmade kuehs, a showcase of traditional Peranakan desserts. What we had were Ondeh Ondeh, Ang Ku Kueh with peanut and mung bean paste fillings, Kueh Lapis Sagu as well as one of the highlights of the evening - Kueh Kosui. I was told this is the best and I couldn't agree more the moment I took a bite of it. Made using genuine Gula Melaka, which chef has sourced it himself, this Kueh Kosui came with a well rounded sweetness and the fresh grated coconut just made it even more sublime as the kueh slowly melted in my mouth.

White Rose Cafe @ York Hotel - A Refreshed A La Carte Menu

York Hotel is renowned for its Penang Hawkers' Fare buffet but lesser known is their local and Asian cuisine served at the White Rose Cafe. Helmed by Chef Charlie Tham, the culinary team has refreshed the a la carte menu showcasing new re-interpretations of Asian dishes and Western classics.

Satay 4.2/5

We started with some Satay that is well marinated and grilled to a nice exterior char. Diners have a choice of chicken or pork. It comes with rice rice cakes, sliced cucumber, onion and peanut sauce topped with grated pineapple. Love the fact that the sauce comes with grated pineapple for the hint of sweetness on top of the nutty sauce.

White Rose Cafe New Specialties Mee Siam 4/5

Even thought it is a refreshed menu, it also brought back some of the old favourites such as the Mee Siam. The tangy and spicy gravy topped with prawns, sliced egg, bean sprouts and diced fried bean curd complements the rice vermicelli excellently. Do note this is sampling portion.

Vietnamese Beef Pho 4/5

Chef Charlie has also introduced Vietnamese cuisine in the refreshed menu. The soup for the Vietnamese Beef Pho is boiled for hours using beef bone marrow for a good 8 hours, resulting in a light but rich broth.  The flavourful broth is accompanied by the smooth flat rice noodles, tender sliced beef, bean sprouts and onion. It is then garnished with red chilli, lime and fresh local herbs.

Vietnamese Pork Chop 4.2/5

The other Vietnamese dish on the menu is the Vietnamese Pork Chop. I love the aroma of lemongrass in the marination of the pork fillet. Grilled to tender perfection, it is served with sunny-side up egg, fresh local herbs, pickled vegetables and steamed fragrant rice.

Seafood Mee Goreng 4.5/5

There is the Malay style mee goreng as well as the Chinese style. I prefer the latter for its wetter version, which is a bit like the hokkien mee. The Seafood Mee Goreng here hits all the right notes for me. Mildly spiced, the wok fried yellow noodles comes with egg, prawns, squid, sliced fish and bean sprouts.

Fish Head Curry 4.2/5

One should not miss having the Fish Head Curry at White Rose Cafe. The fish head curry is prepared accordingly to the well guarded recipe from Soon Heng Restaurant dating from 1970s, touted as the creator of the Singaporean Chinese style fish head curry. The red snapper fish head is first steamed and then cooked in a mildly spiced assam or tamarind based curry sauce together with tomatoes lady fingers, sliced onions and fresh chillies. The fish is cooked perfectly, firm and moist with a delectable sweetness of the flesh.

Grilled Chicken Thigh 4/5

Besides the Asian fares, there are Western classics such as Fish N Chips and Grilled Chicken Thigh. I tried the grilled chicken thigh which is served with seasonal vegetables and sauteed potatoes. The chicken skin is grilled to a nice crisp while the meat is tender and juicy.

Tang Yuan 3/5

Wrapping up our dinner, we had the Tang Yuan, traditional glutinous rice balls stuffed with black sesame filling in hot ginger flavoured syrup. While I enjoyed the soft glutinous rice, I felt that the ginger soup is a bit too sharp. It need some extra sweetness to balance the sharpness.

I really enjoyed the refreshed a la carte menu at White Rose Cafe. The dishes served are food that is closed to our heart and I have to admit that it has executed them well. I would recommend the fish head curry, mee goreng and mee siam as my favourite.

IAAI Malay Food @ Havelock Road Food Centre - Mee Rebus At Only $2

On my trail to find cheap food in Singapore, it lead to IAAI Malay Food stall at Havelock Road Food Centre. This humble and little known stall sells a variety of items on the menu at at two dollars. A price you hardly can find in Singapore nowadays.

Mee Rebus 

For the price tag, the bowl of Mee Rebus ($2) is very substantial. The stall owner is not stingy with the ingredients or portion at all. It comes with yellow noodles, green chillis, spring onions, Chinese celery, fried firm tofu, fried shallots, bean sprouts and a whole hard boiled egg. The gooey gravy with mild spiciness may not be the best I have eaten but it is acceptable if you one that is not too picky. I am not complaining as its only two dollars for the portion.

Mee Siam 2.5/5

Besides the Mee Rebus, I also tried the Mee Siam ($2). Again the portion is huge and it comes with a whole hard boiled egg. Unfortunately the gravy lacked depth and it tasted watered down.

During our visit in the late morning, their Epok-Epok Kak Andon (1 for $0.70 and 3 for $2) was already sold out. The stall auntie told us that its very popular and usually its the first item to be gone. Guess I need to be very early in my next visit to try the Epok-Epok. The stall also sells Mee Soto ($2), Nasi Lemak ($2), Nasi Sambal Goreng and Nasi Campur.

The Peranakan Restaurant @ Claymore Connect - Peranakan Food Along Orchard Road

Along Orchard Road, there ain't many restaurants that serve homely style kind of food, which makes The Paranakan, located at Claymore Connect, rather one of its kind. Helmed by Executive Chef Raymond Khoo, not only you get a taste of tradition, you get a glimpse into their culture too!

And by that, I mean taking a walk into their mini exhibition at the corner of the restaurant. These exhibits add on to the opulence of the interiors, especially under the shining chandeliers.

The menu is pretty extensive, categorised into appetiser, rice, pork, beef, chicken, fish etc. If you are familiar with Paranakan cuisine and know the kind of dishes that you want, it won't be much of a problem. However, for amateurs, TOK PANJANG would be an ideal choice. Basically, it is like a 'tasting' menu, with 8 to 10 dishes served in small plates, along with their signature soups and dessert platter.

Cute little Kueh Pei Ti planted amongst the dishes, as the amuse bouche. Although it is a really small bite, I left it half eaten. Perhaps, a popiah stall still serves better Kueh Pei Ti than restaurants.

Two soups were included. I very much prefer Sup Bakwan Kepiting. The body of the broth is not 'rich' as the menu describes, but a clear soup sweet and rich with nutrients from the sweet crabmeat/pork/prawn balls and the bamboo shoots. Soothing.

A bit of fumble at the beginning, but the rest were considered quite sumptuous. One dish that surprises many of us is their Nasi Ulam Istimewa - as described a spectacular dish of rice with raw herbs, vegetables, minced fish and salted fish. If not for Chef's recommendation, this humble looking dish could easily be overshadowed and overlooked. A rather laborious dish which has an acquired taste at first bite, intriguing at second, moreish at third.

Read a couple of negative reviews on the Nonya Chap Chye, but it was a good day for me - well stewed cabbage and black fungus.

Ayam Buah Keluak, a quintessential dish that speaks the quality of a peranakan restaurant. Judging by the reaction of the rest, the buah keluak did live up to the expectation of being the Asian black truffle.

Curry Ayam Estimewa (Curry chicken infused with the fragrance of spices and lime leaves) is a crowd pleaser. The chicken was tender, bathing in really robust curry which carries hint of lime leaves.

If your repertoire of paranakan food is limited to fish and chicken, then here is the chance to venture into Paranakan pork dishes. The Babi Tau Yu (Braised pork in dark sweet sauce with tau pork) is like our braised pork belly, a less familiar one would be Kaki Babi Pong Teh (Pork leg slow cooked for six hours with sautéed onions and fermented beans). It could be a little oily, but in small dosage is always good for the skin!

To round up the tok panjang would be the chef’s dessert platter and choice of malacca coffee or tea. The Pandan Gula Melaka Cake won the heart of many, some like the one with durian. I don't appreciate its sweetness but I like the shredded coconut on top which adds on to its taste. My favourite of the whole lot would be Pulot Enti Hae Bee Hiam. The Hae Bee Hiam here is really well done - the spice level is just right, and not oily as all, almost like the bacon bits atop my baked potato. With that on top of the sweet glutinous rice, the combination is simply satisfying.

The tok panjang style is a fun way to try out the dishes, especially if you ain't familiar with Straits Cuisine and have not formed a liking towards any dish. However, perhaps such presentation requires a different preparation work, the food didn't seem 'hot'.

Such grandeur setting is just right for a high tea, isn't it? The restaurant recently launched their Peranakan High Tea from 11am to 5.30pm daily. The Mee Siam has less gravy but double the taste. If you like durian, dipping the toast into their durian paste is a dip of happiness, though I wish it could be less sugary. The toast with Hae Bee Hiam is simple but really delicious. Another item that delights me was their version of Kong Ba Bao, with Satay Babi Sum Chan as the filling. Slow cooked for nearly 4 hours, the meat was tender with soft fats. Homemade pineapple tarts are included as well, which are available for sale if you like.

Eat like a French here at The Paranakan, trying out the dishes in a more exquisite manner. A great option to dine away from the crowd in Orchard.

Chong Wen Ge Cafe (崇文阁) @ Thiam Hock Keng Temple - Peranakan Cafe Right Beside A Temple

Located inside the compound of  Thiam Hock Keng Temple (the oldest and most important Hokkien temple in Singapore) is Chong Wen Ge Cafe (崇文阁) offering local kuehs and delights on the menu instead of the usual egg benedict, pancake and waffle. The name of the cafe - "Chong Wen Ge cafe" plays tribute to the ‘Institute for the Veneration of Literature’ which is Singapore’s first Chinese school.

Nyonya Achar Loti 2.5/5

Initially we want to order the Otah Loti but it was not available. Hence we ordered the Nyonya Achar Loti ($3.80). The toasted crustless bread is spread with butter and layered with homemade piquant achar. While the achar was well pickled with the shredded vegetables retaining their crunchiness, it did not go well with the bread and even made the bread soaky. It was also very messy to handle and eat. Although the combination did not work for me, the achar was very good on its own. I would imagine it working excellent with a plate of nasi lemak.

Signature Teh-C Special 4/5

A drink that you don't usually see on the menu is the Signature Teh-C Special ($6.80). It is a spin to the quintessential local drink, Teh C Peng, served chilled. On top of the brewed black tea and evaporated milk, the thick dark layer at the bottom is secret ingredient - gula melaka. A unique drink that is worth trying.

Nyonya Mee Siam 4.2/5

Another worthy item to try is Nyonya Mee Siam ($7.80). The rice vermicelli comes with tiger prawn, beancurd, eggs and fresh beansprouts in sweet tangy tamarind gravy. I was not expecting much from the local delight since it was a cafe but I was proved wrong.The rich and hearty bowl of mee siam with its rich and hearty gravy is definitely something that I would go back for.

My Cosy Corner @ Coronation Shopping Plaza

My Cosy Corner at Coronation Shopping Plaza is very popular if you stay in the Bukit Timah area. This tiny little eatery is tucked right in the corner at level two of the shopping centre. The eatery is not that cosy as the name suggested, it felt like stepping into a small eatery in the early 80s. Furthermore it felt more like an eatery selling Japanese food, rather than local nonya cuisine.

Kueh Pie Tee 4/5

Our lunch at My Cosy Corner started with Kueh Pie Tee ($4.80 for 6pc). I was actually feeling a bit upset that I am served with empty kueh pie tee cups and I have to make it myself. Lucky the food itself make up for it. The Chinese turnip is sweet and still has crunch to it. I would recommend adding a bit of the chilli sauce to enjoy the nonya snack in the crispy pastry tart shell.

The reason why I made my way down to My Cosy Corner is to have their popular Mee Siam ($5 without prawn). The rich gravy with its perfect balance of sourish and spiciness make it extremely tasty. The crispy tau pok cubes give it an extra texture bites, completing the whole enjoyment.

Laksa 4.2/5

I also tried the Laksa ($5 without prawn) that comes in a thick and lemak gravy. The dried shrimp gives the creamy gravy a further lift in taste. This is a good bowl of laksa worth the calories.

During my visit. I realized a lot of customers wanted to try their popiah but it was not available. Apparently they don't sell popiah on Sunday. Which also means I did not get to try their popular popiah. I am sure I will be back to try their popiah and also the delicious Mee Siam again.

Asam Tree Cafe, Bakery and Restaurant @ Ang Mo Kio Ave 6

I have to credit Maureen by introducing to Asam Tree Cafe, Bakery and Restaurant at Ang Mo Kio Ave 6. The Halal certified eatery is just located beside the NTUC Fairprice. I was actually quite amazed by the number of dishes the humble eatery can offer in their little space. Seating area are quite limited and close to one another. It can be a bit uncomfortable but it did not deter people away with a constant stream of crowd around the clock.

Noticing their popularity, we approached the eatery to take part in this year's Ultimate Hawker Fest 2014. We were very glad that the owner agreed to participate in this year's fund raising event. Asam Tree Cafe Bakery and Restaurant will be cooking one of their popular item, Longtong ($3.50) at the ulitmate hawker fest. The value for money bowl of Longtong comes with steamed rice cake that has a hint of pandan fragrant and moist, a piece of huge fried tofu, cabbage and a whole egg. The curry gravy was quite rich but not too lemak. I was so good that I was actually drinking it like a soup dish.

Mee Soto 4.2/5

The owner shared with us that the Mee Soto ($3.50) is their top seller. The sweet chicken broth goes well with the yellow noodle. However I suspect why this is the top seller has to be the chilli. Stirred and mixed it well with the chicken broth and the whole dimension of the noodle dish is brought to a new level of enjoyment.

Asam Tree Cafe, Bakery and Restaurant also offers two other noodle dishes on the menu, Mee Siam ($3.50) and Mee Rebus ($3.50). These are really value for money with their huge servicing accompanied by the rich and delicious gravy.

Goreng Pisang 3/5

If you not into something that is too filling and just a bite, the Goreng Pisang could be a choice for you. I like the light batter crispy coated around the fried banana fritter but I do not like the type of banana used. I prefer those that is sweeter.

Rojak 4.5/5

The Rojak is a must try here in my opinion. The crispy youtiao was tossed in a homemade belachan and topped with peanuts. The thick gooey prawn paste which came with a spicy kick was really addictive.

We are glad to have Asam Tree Cafe, Bakery and Restaurant taking part in this year's Ultimate Hawker Fest selling their Longtong at the fund raising event. Asam Tree Cafe, Bakery and Restaurant is just one of the Halal certified stalls taking part in this year Ultimate Hawker Fest. Other Halal certified stalls are Prata Place, TenderFresh. Food Glossary and Old Bibik is awaiting for the Halal certificates.

The Ultimate Hawker Fest 2014 at Suntec Convention and Exhibition Hall 401 & 402 on 22 November 2014, 11am to 5pm is a fund raising event for the beneficiaries under the care of Touch Community Services regardless of race and religions. Coupons is required to purchase the food from the various hawkers and can be purchased at https://www.ultimatehawkerfest.sg/. While the hawkers sacrifice their time and some even a day's income to do a part for the needy and disadvantaged, I hope you can support them and do a part for charity too.
