The Soup Spoon @ Marina Bay Link Mall - Brazil Souper Inspiration

Chefs travel, to recharge, get new ideas, get inspired, and the inspirations will be translated to the dishes in front of you. The same goes for The Soup Spoon, where SouperChef Anna creates soup recipes inspired from her travel experiences around the world. From now till 1st of September, get a taste of Brazil with a slurp of their Souper Chef Specials - Brazil Souper Inspiration.

This is the second launch, if you didn't manage to taste the first. With options of 2 meats, 1 seafood and 1 meatless, I'm sure you will find one that will suit your palate.

Vegan Caldinho de Feijão
Black beans, tomatoes, sweet potatoes, yam, tapioca, chayote, celery, carrots, garlic, onions, coriander, chillies, paprika, cumin, oranges and mango juice.

Beans and rice are at the heart of Brazilian food, followed by manioc (a root vegetable like a potato). feijoada, a thick and heavy stew of black beans and pieces of pork and other meats, is their national dish. Caldinho de feijão is a lighter version which SouperChef Anna had tried in Recife. At The Soup Spoon, she created a meatless version, Vegan Caldinho de Feijão replacing meats with roots such as sweet potatoes, yam and tapioca. Spiked with diced tempeh, that gave a fun, chewy texture to the mashy beans and soft roots. Don't overlook the small wedge of lime served atop, which brightens up the stew with a zesty citrus note.

Beef Stroganoff Brazilian Style
Marinated NZ grass-fed beef cubes, carrots, potatoes, onions, garlic, tomatoes, button mushrooms, artichoke hearts, red rice, paprika, capers, celery, cream, herbs and spices.

Little did I know that Beef Stroganoff is a Russian dish. First introduced to the Brazilians in the 50s, the original recipe has evolved to include much more ingredients such as tomatoes, ketchup, Worcestershire sauce, heavy cream. The Soup Spoon's version is a hybrid of both. Using marinated NZ grass-fed beef cubes, the meat was really tender, and my favourite part of this soup is definitely the chunks of button mushrooms along with other vegetables cubes. It wasn't too creamy, and I like the tang that edged the soup, lent by the piquant capers. The thin fried potato sticks atop reflects Chef Anna's attention to details, in which the Brazilian Beef Stroganoff is traditionally served with rice and chips.

Moqueca Barramundi
Kühlbarra barramundi fish, red bell peppers, green bell peppers, tomatoes, tapioca, chillies, coriander, onions, garlic, ginger, coconut cream, kaffir lime leaves, paprika and lemons.

Bazilian fish stew comes in 2 styles - Baiana and Capixaba. Baiana style is heavier with coconut cream and African red palm oil while the latter is lighter without both. Moqueca Barramundi is a mixture of two, with a little coconut cream but no palm oil added. When I first tasted the Kühlbarra barramundi fish, I mistook it as salmon as I felt both share similar richness in taste and texture. It was sweeter and tender than I had expected from a stewed fish. The soup itself is like an in-between of laksa and red Tom Yam soup. As a meal, I would very much prefer a clear soup, just as I would take my tom yam soup.

Galinha Caipira (Country Style Chicken Stew)
Marinated chicken thigh, carrots, tapioca, yam, tomatoes, onions, garlic, pineapple, okra, quinoa, turmeric, ginger, coriander, coconut cream, oranges, lemons, herbs and spices.

Galinha Caipira is one of Brazilian's comfort food, which Chef Anna had it in Minas Gerais style. I learnt that in Brazil, it is over in Minas that one tastes the essence of home-cooked food. Embedded within is a strong Portuguese influence, hence thick broths and stews are much celebrated here. Bright orangy yellow in colour, turmeric dictates the robust character of the stew. The quinoa absorbed the wonderful juices from the roots and vegetables, thickening the stew into congee. The presence of tomato and pineapple reminded me of what my mum usually does to enliven the taste of her curry. Garnished with roasted chopped peanuts, coriander leaf and coconut flakes, the intensified nutty and coconuty flavours bespeaks Chef's Southeast Asian roots in a subtle but punchy manner.

From tasting these 4 Brazil Souper Inspiration, I get a glimpse of the Brazilian cuisine. I heard this is a much toned-down version - going easier on the cream, relying on roots and vegetables to create the texture and heartiness. What's notable is the use of herbs, spices and zest, which tickle my tastebuds in all 4 soups. Behind each inspiration is an interesting encounter, and you may read each story from their E-magazine which can be downloaded on their website. Do make an effort to read, and you may then find a deeper meaning in every slurp.

Grain Traders @ Capital Green - Atas Mixed Vegetable Rice

I heard many raving reviews of Grain Traders at Capital Green since its opening in September 2015. Grain Traders basically serves comfort hearty meal bowls where guests can mix and match their own preference. The concept is quite similar to our mixed vegetable rice stall.

Guests will get to pick from the spread a Grain, 1 Protein, 1 Hot Vegetable, 2 Cold Veggies, 1 Sauce and 1 Topping. If you are those indecisive type, don't worry. Grain Traders has 6 Signature Bowls that has already pre-matched to your liking.

Salmon Bowl 4.2/5

For our first rice bowl, We had the Brown Rice, Crunchy Green Medley, Chargrilled Salmon, Bean Sprout Salad, Wafu Tomatoes, Crushed Peanuts and Coconut Curry sauce. The portion of the Salmon Bowl ($16) is rather generous and substantial. The fresh ingredients which unlike those mixed vegetable rices, are less oily and more healthy.

Tuna Bowl 4.2/5

For the Tuna Bowl ($16), I chose the Quinoa, Wild Mushrooms, Wafu Tomatoes, Cucumber Pickles, Crispy Garlic & Shallots and Asian Gravy to go with the Tuna. It was another delightful bowl of fresh, comfort and hearty bowl that was both satisfying and filling.

The opening of Grain Traders definitely given the workers in CBD a healthier option and variety for lunch everyday. If not for the $16 price tag, I would have gladly substitute the $3.50 mixed vegetable rice and have this everyday. By the way, I heard words that Grain Traders will be opening its second outlet very soon.

Souperstar @ Eastpoint Mall - Modern Popiah with a Twist

When our friend, Wayne told us that there is a stall in Eastpoint Mall selling fusion popiah, it alerted our food rada and we purposely made a trip down to the far Eastern side of Singapore to check out Souperstar at Eastpoint Mall. The folk behind Souperstar is non other than the 2nd generation of Fortune Food which specialized in popiah skins and kueh pie tee since 2004. The business has since grown from a small hawker stall at Geylang Bahru hawker centre, to a wholesale and home delivery business.

Sesame Chicken 4/5

Creating the new fusion popiahs is Wei Ting and Wei Ling who has grown up with the business, Using what they known best, the popiah skin, they are introducing Singaporean to the new age popiah with a twist. I would prefer to call it the new Singapore Wrap.

Sweet Thai Chicken Popiah 3.8/5

Instead of the usual shredded turnip, the popiah is replaced with salad greens. The Sesame Chicken Popiah ($3.80) comes with slices of roasted chicken, cherry tomatoes, coral lettuce and white sesame sauce. It is like having a bowl of salad but in a wrap form. If you prefer something that is more intense in flavour, then the Sweet Thai Chicken Popiah ($3.80) is an option. It comes with roasted chicken, fresh mango, cilantro, coral lettuce, sweet Thai chilli mayonnaise.

Seafood with Mayo Popiah 3.8/5

For seafood lover, there is the Seafood Wasabi Mayo ($4.10). Wrapped in the thin popiah skin are fresh shrimps, season tuna, crab stick, wakame seaweed, coral lettuce and light wasabi mayonnaise. These fusion popiah is actually bigger than your tradition popiah with generous stuffing. Having one is enough to fill you up. .

While we may progress in food, we also cannot forget the tradition. Hence, on top of the three fusion popiahs. Souperstar also sells the Traditional Popiah ($2.50). I noted that the tradition popiah did not use bean sprout but replaced with cucumber instead. I like the used of the cucumber giving it a more crunchy and refreshing bite.

Besides the popiah, Souperstar also offers a selection of hearty soups and stew with rice and bread. After eating all the popiahs, I was already too stuffed to try the other items. Anyway my main reason is to try the fusion popiah and I have accomplished the mission. Not only is it yummy, it is healthy too. Thumbs up to the new Singapore Wrap.

Aloha Poke @ Amoy Street

The foodscape of Amoy Street just got even more dynamic with the addition of Aloha Poké – a salad bar borne out of the founders' affinity for traditional Hawaiian Poké bowl, which was developed during their trip to Hawaii. Poké, originally served in Hawaii as a raw appetizer, is a Hawaiian staple and the choice food of surfers.

The original Poké usually comprises of just seasoned Ahi Tuna, tossed with toasted sesame seeds, sweet onions and scallions. However, over here at Aloha, fret not if you are not a fan of Tuna, as Salmon, Seasonal Fish and even Tofu, are also available. To spice up things a little, they come in a variety of eclectic flavours such as Wasabi Mayo, Spicy Sauce, Nutty Sesame and Original Sauce. Together with the greens and crunchs, what you will get is a notch up from your regular salads.

 3 sizes are available - Lil’ Swell (1 Scoop: 75g of Poké) at S$11.90, Standard Nalu (2 Scoops: 150g of Poké) at S$ 15.90 and Big Kahuna (3 Scoops: 225g of Poké) at S$19.90.

They have interesting add-on available such as the Flying Fish Roe, Pomegrante, Quail’s Egg etc. When I saw the Flying Fish Roe, what came to my mind is Bara Chirashi, as I had rice in my salad as well. So that was definitely my choice.

I chose the standard Nalu, and one of their Cold Press juices. Kona Beer, from a craft brewery in Hawaii, is also available if you want to make your meal more ‘fun’. Another great option is their Cocoloco, coconut juice from daily-cracked fresh Thai coconuts, and Cold Press Juices.

For the first time, I had more proteins than the greens for my salad. Although the Poke were seasoned, but from the texture and juiciness of the fish, I could tell that the ingredients were really fresh. Though every mouthful was the same thing, but it was never boring, with the flavourful Poke mingling with the different textures of the avocado, nuts, roes, greens and rice. It is definitely not easy for a salad bar to draw crowd on a Saturday at CBD area. However, Aloha manages to do it, with its dynamic version of Bara Chirashi. Just one thing, as the sauces used can be a little on the salty side, I feel more greens to compliment the Poke. If not, I would prefer the Poke to be less ‘saucy’.

Aloha Poké has had pretty good feedback so far since its opening in October. With such a strong and well-crafted identity, I’m quite certain that it will get its fair share of the pie in this competitive market.

Spinacas - Hearty Salad Delivery

Today I am trying Morrocan Spiced Chicken Salad which consists of baby spinach and chicken cubes marinated for 12 hours with fiery Middle Eastern spice blend and sauteed to juicy perfection. It is topped with honey cherry tomatoes, broccoli, hard boiled egg, cheddar cheese, nuts and grapes, dressed in extra virgin oil, salt & pepper.

Morrocan Spiced Chicken Salad 4.5/5

I like the fact that the dressing and sauteed chicken are packed separately. Eating healthy does not mean just piles of greens. Paired with the spicy Morrocan chicken, this has made salad eating for fun and delicious.

Squash @ The Central (Clarke Quay)

Located at the basement of The Central Clarke Quay is Squash, a new juice and salad bar founded by Mr Allan Foo. Holding a Curtin university degree in finance and marketing, Mr Allan Foo used to work in the banking industry and in real estate investment. The late nights and busy schedule has taken a toll of his health. Through the benefits of juices and micro-nutrients, he managed to restore his own health. Hence he decided to leave the corporate world and opened Squash, inspired to help others to get back in health with his delicious and nutritious food and drink offering.

Cold Pressed Juices 4.2/5

The main products at Squash is their Cold Pressed Juices that ranges from $6.90 to $9.90. Cold pressed juice is sort of a drinking trend lately even though the price is much higher compared to normal fruit juice extracted from juicers. It is understand that the cold pressed method retains more nutrients of the fruit or vegetables. It is also understand that the owner will be introducing a cold pressed juice cleansing programme in the very near future. If you are not a person that is too adventurous in taste, my advice is to avoid the vegetable cold pressed juices.

Noodle/Pasta Salad 3.5/5

Squash is not just a juices bar. Adjacent to it is a salad bar where one can mix and match their own salad preference or combination. The salad starts from $5.90 with a base (mesclun greens, noodles salad etc) and choice of 2 standard toppings and 1 dressings. Additional cost applies for premium toppings and dressings.

A unique twist to the normal salad bar is the interesting introduction of Asian flavours into the salad. The exotic additions such as Thai Prawn and Chicken Bulgogi gives a new take in eating greens.

Ultimate Rojak Salad 4/5

A very bold attempt is the Ultimate Rojak Salad. The used of rojak dressing in your greens is a local twist to the hawker favourite, rojak. Dried cuttlefish and caramelized pineapple are also added to the salad. Sounds crazy but it kind of work.

Salad Yu Sheng 3/5

With the lunar new year just around the corner, Squash has also introduced the Salad Yu Sheng. Tossed to a healthy new year ahead, with this interpretation of the yu sheng.

Overall the highlight at Squash still has to be their cold pressed juices. The salad is an additional bonus for people who wants to eat healthy. Unfortunately eating healthy does not come cheap but at least at Squash the salad is quite substantial for the amount you are paying for.

SMOR @ One Raffles Place

Smor located at the basement of One Raffles Place is Singapore's first Scandinavian Deli to specialise in Scandinavian open-faced sandwiches. I guess partly due to their humble fit out, this place has been overshadowed by its neighbours which are much bigger and popular brands such as Paris Baguette, Umi Sushi, Swiss Bake etc. I would have missed out this superb place if not for kind invitation from Traveen and Tarun, founders of Smor.

The menu is rather straight forward, consisting of three sections, Cold, Hot and Vegetarian. The bread for each option varies from freshly baked rye, multigrain, chai seed to brioche bread. I really like the organic look and feel of their sandwiches, simple and clean.

Customer has a choice of Light ($6.90) for a choice of one sandwich, Regular ($12.90) for 2 sandwiches and Viking ($17.90) for 3 sandwiches respectively. All come with a side salad. A special Scandinavian breakfast set ($4.90) is also available that comes with dark rye topped with  ham & cheese, potato and bananas, served with coffee/tea. There are also set meals that come with stew/soup, all diary free.

Shrimp Sandwich 4.2/5

I particularly like the Shrimp Sandwich a lot. A heap of hand peeled Norwegian shrimps, lightly coated with lemon mayonnaise was piled on a thin crispy Chai Toast. Although garnished with just a sprinkle of chives and a slice of lemon wedge, it was somehow aesthetically pleasing to me. I was amazed at how these shrimps can remain so crunchy and succulent. Every bite of the tiny shrimps releases a burst of sweetness with a tinge of savoriness to tease my taste buds. The tangy lemon mayonnaise lends its creaminess, like butter on a crispy toast, which make this simple sandwich extremely palatable. I don't think I could get this from anywhere else.

Salmon Sandiwch 3.8/5

The Salmon Sandwich is made using Smoked Norwegian Salmon. You can indeed feel the difference in its texture. It is still moist with a level of translucency.

Beef Sandwich 4.5/5

I can't wait to introduce you their Beef Sandwich, consisting of Swedish herb roasted sirloin layered with caramalized and cheesy onions with crisp beetroot chips. The taste is amazing! I love how the caramelised onions pairs perfectly with the sirloin and the beetroot chips which simply adds another layer to the taste. Who would think of using beetroot chips as part of a beef sandwich? Best of all, they ain't pre-packed chips but sliced and toasted out from a fresh beetroot. You can ask for the sirloin to be medium rare if you want to. Though mine was well done, it was still as tender. One look and you know that the meat is fresh unlike those frozen beef offered by those typical chain sandwich places. This is so value for money.

Kale & Mushroom Sandwich 4/5

Kale & Mushroom Sandwich comes with button mushroom. kale, roasted almonds dressed with spicy olive oil and melted provolone. Not the usual lettuce you get but Kale, one of the healthiest vegetables around, yet not easily found in regular supermarkets. I'm surprised that such a small setup can offer such a premium sandwich. To keep the recipe authentic, only a bit of spice has been added to cater to the local love for spicy food. Brioche is used for this sandwich. Its buttery taste goes very well with the greens.

For beverages, they have a selection of tea, coffee as well as Scandinavian Specialties. Do give their Scandinavian beverage a try. I had their Scandinavian Nektar. Made with real crushed berries and sparkling lemonade, I felt it freshened up my senses the natural way.

What I adore about independent setup is that they usually have great stories to share. Similar to farm-to-tables setup, Traveen hopes that customers can benefit from the goodness of eating wholesome and organic food like how he does. Other than that, one of Traveen's motivations behind Smor is also to contribute his part to the society. Smor gives chances to ex-convicts and senior citizens to work in its kitchen. He is not into making huge profit but simply to breakeven. Hearing this from a former Sales Director, APAC in Bloomberg for 12 years, it is something quite remarkable. I'm sure every cent doesn't come easy when all the ingredients are imported from the Scandinavian regions and delivered to their doorsteps weekly. It is also heart-warming to know that setting up this business brought him and his mum closer as his mum sat him through all the recipes to ensure the authenticity of his offerings.

I will definitely be back with more friends to try the rest of the sandwiches on the menu. Do drop by and support them as well. F&B is a tough business, especially for such a niche concept like Smor. To survive, they really need customers who appreciate their food and concept.

Lim Soup @ Bukit Merah Central

Getting tired of 老火汤 in almost every corner of Singapore? Why not check out this new soup stall at Bukit Merah Central called Lim Soup. The recent media coverage has definitely caught my attention hence I made my way down to the stall. By the time I reached Lim Soup, it was almost three after the lunch crowd. Most of the items and soup has already been sold out and I was left with not many choices.

ABC Soup 3/5

First I tried the ABC Soup ($4.50). The soup had a hint of sourness which probably was due to the tomato that was used on that day.

Organic Rice 4/5

With more people preferring to eat healthy, Lim Soup also offers the choice of Organic Brown Rice ($0.80). I like the fact that it comes with some cabbage and topped with fried silver fish.

Double Boiled Old Coconut Chicken 3.5/5

What brought me to Lim Soup is the Double Boiled Old Coconut Chicken  ($7.50). The presentation itself is something different and unique using the whole coconut husk stuffed with herbs and chicken. The taste is kind of special with a subtle sweetness on top of the mild herbal taste. I can't really say the taste is out of this world but it is light and refreshing.

Overall I find the soup at Lim Soup is on the lighter side compared to those you get elsewhere example from 老火汤. Would I make a trip down specially for the soup, probably not. The double boiled old coconut chicken soup is something new and interesting. While the stall provides a good healthy meal, I probably will skip the double boiled old coconut chicken soup and opt for another soup that is cheaper.

3) Alight at Outram MRT Station. Take Exit H. Walk to bus stop at Outram Park MRT Station along New Bridge Road (Stop ID 05069). Take bus number 147 or 961. Alight 8 stops later. Onaka which uses only the most wholesome and selective organic ingredients, amalgamates Asian culinary cultures together with modern Western influences in order to produce uniquely healthy dishes.

Watermelon Sashimi 3/5

I have been wanting to come to Onaka to try the Watermelon Sashimi ($10). The sous vide watermelon rest on a bed of kombu and topped with agar wasabi tobiko is served with daikon tamari dip. I never knew that watermelon has such and interesting and unique texture that really felt as if one is have sashimi. The whole dish was light and refreshing.

Duck Confit 3.8/5

The Duck Confit ($33) is served on a pumpkin mash, orange segment and roasted mushroom with orange. The duck leg itself was rather huge and it a way a bit fatty. I have to leave the skin untouched due to the layer of fats underneath it. Nevertheless, the duck leg was really tender and succulent. I also applauded the use of orange and pumpkin to give a fruity and sweet balance to the whole dish.

Chilli Crab Capellini 4.2/5

There are many so called fusion chilli crab pasta dishes but usually they did not live up to their proclaim because of the lackluster chilli crab sauce that is not even close to the local dish. Using in house made chilli sauce, the Chilli Crab Capellini ($24) with real crab meat and a sous vide egg was really delicious. It has to be one of the closest interpretation of the local chilli crab sauce I have tried that goes well with the capellini.
