Tiong Bahru Hainanese Boneless Chicken Rice @ Bukit Batok - Getting My Chicken Rice Fix Before Malaysia Flesh Chicken Export Ban

With Malaysia banning the export of fresh chicken to Singapore from 01 June 2022, hopefully, this is short term for Malaysia to stabilise domestic supply and price hike. Nevertheless, it causes a swarm of customers at various chicken rice stalls around the island before the ban kicks in. As a result, some stalls may close for a while or change to selling other stuff without fresh chicken until the ban is lifted.

One of my favourite chicken rice stalls is Tiong Bahru Hainanese Boneless Chicken Rice, an awardee of Michelin Bib Gourmand. It has expanded with several stalls across the island in the last year. I visited one of their stalls at Bukit Batok to have my chicken rice craving.

I had the Duo Chicken Rice ($5/$6), which comes with steamed chicken and Roasted Chicken. We also added a braised egg. The rice is fluffy and fragrant with tender chicken. I also like the accompanying achar giving it a refreshing touch.

Outram Park Fried Kway Teow Mee @ Hong Lim Food Centre - A Messy Plate Of Goodness That Is Worth The Long Queue

What is your favourite local street food? Mine is Char Kway Teow among the many. Where is the best in Singapore then? I feel that everyone has their own best since local street food is something that one grown up with. However, there are also those popular ones that have gotten the recognition from fellow Singaporean. This can be seen from the daily long queue at the stalls. One such stall is Outram Park Fried Kway Teow Mee at Hong Lim Food Centre which is also recognised in Michelin Bib Gourmand Singapore 2018 and 2019 edition.

Due to the coronavirus outbreak, people are going out less, and hence I took the opportunity to check out Outram Park Fried Kway Teow Mee since the queue is not as long as usual. By the way, I was really looking forward to the plate of hot piping fried rice noodles, as this is my first time trying it. Yes, I have been put off by the long queues all these years, and this is my first time having it.

I was blown away when I took the first mouthful. First, you get the wok hei smokiness, follow by the perfect balance of sweet and savoury. What I like most is the coat of beaten egg that is still a bit runny, and the noodle is cooked to a delicious semi-wet texture. For $5, this portion is quite generous too. It comes with bean sprouts, fish cakes and cockles. You can also add extra cockles for additional $2. If I am to be particular, I feel that the addition of Chinese sausage will further elevate the delicious plate of rice noodle. Nevertheless, this is still my top 3 char kway teow in Singapore.

Shi Hui Yuan @ Lau Pat Sa Festival Market - 4 Times Michelin Bib Gourmand Winner Opens New Stall

Started in Mei Ling Market and Food Centre in 1969, Shi Hui Yuan has been awarded Michelin Bib Gourmand for 4 consecutive years from 2016 to 2019. Recently it opened a new stall at Lau Pat Sa Festival Market, whereby it is more central. I think its location is ideal for introducing the delicious dish to the younger working crowd as well as tourists.

The stall offers up to ten different combinations to pair with their silky hor fun. Since I have never been to their flagship stall and it is my first time having it. I decided to go for the Blissful Set ($7.80) that comes with almost everything. In my plate, there are chicken drumstick, duck drumstick, spare ribs, braised egg and mushrooms.

The thing that makes the plate of hor fun special is the aromatic gravy that consists of 30 different types of herbs. It gives it a unique take which is somewhat in between of Ipoh Hor Fun and local Cze Char Hor Fun.

That is not all, the well-braised items completed the whole package. I would highly recommend their braised chicken feet and spare ribs.

Chef Kang Noodle House @ Jackson Square (Toa Payoh) - Michelin Bib Gourmand Wanton Mee

I had heard of the snaking queue with waiting time up to 2 hours at Chef Kang Noodle House when it first opened in December 2018 at Jackson Square. You can't blame the popularity of the hawker stall when it is opened by one Michelin starred Chef Ang Song Kang of Chef Kang's Kitchen. The fairy tale continues with the recent release of Michelin Bib Gourmand 2019. Chef Kang Noodle House is one of the 58 awardees of Michelin Bib Gourmand 2019. What an achievement of the wanton mee stall, winning such a prestige award in less than a year of their opening.

There are only 3 items on the menu. Noodle with Char Siew and Wanton ($5), Noodle with Shredded Abalone, Char Siew and Wanton ($10), Char Siew ($10). I ordered both the noodle dishes to try.

For five dollars, you get a plate of noodle with fatty char siew, pork lard, greens and wantons. What impresses me at Chef Kang Noodle House is down to each component on the plate of wanton mee. The char siew is fatty with a nice char on the exterior. Just look at the layer of fats and lean meat. The noodle is springy with a delightful bite, complemented by the delicious dark sauce. The wanton was plump and generous filling such as prawn, minced pork, black fungus and water chestnut. In fact, I find it more towards a dumpling than a wanton.

Shredded Abalone, Char Siew and Wanton 4.8/5

For another extra five dollars, you get shredded abalone with the char siew wanton mee. Initially, I thought the shredded abalone is chicken. It does look like it isn't it? The chicken itself can be quite dry to go with the noodle; hence, the soft and bouncy texture of the abalone is a good replacement enhancing the full enjoyment and balance of the dish.

Do note that Chef Kang Noodle House is located inside Jack Square, surrounded by building blocks. Hence it can't be sighted from the main road. One needs to make its way into the industrial cluster, and it is located in the canteen around in between block A and B.

Michelin Bib Gourmand Singapore 2019 - 58 Restaurants and Hawkers. Who Is In and Who Is Out?

Michelin has released its Bib Gourmand Singapore 2019 awardees. A total of 58 restaurants and hawkers made it into this year's list. There are a total of 12 new entrants. Compare to the release of 2018 bib gourmand list, 4 of last year's winner has been dropped from the list, 2 hawker and 2 restaurants.

A check against last year list, 4 of them has dropped out from this year list. The dropouts are Rolina Traditional Hainanese Curry Puff, Shi Wei Da, New Ubin Seafood and The Coconut Club. To be fair, New Ubin Seafood at Hiil View is closed, and The Coconut Club has relocated, probably that is why they didn't make it to the list this year.

Tai Wah Pork Noodle @ Hong Lim Food Centre - It Pales In Comparision To The Michelin-Starred Stall At Crawford Road

Many diners may have mistaken Tai Wah Pork Noodle at Hong Lim Food Centre to the Michelin starred hawker stall Hill Street Tai Wah Pork Noodle at Crawford Road. Even the bowl they used looks the same. The similarity is not coincidence as they are actually related. The stall at Hong Lim Food Centre is run by Mr Tang, the younger brother of  Hill Street Tai Wah Pork Noodle.

Bak Chor Mee 3.5/5

A bowl of Bak Chor Mee ($6/$8/$10) comes with wantons, pork balls and pork slices, minced pork and pig liver.

The noodle itself is cooked to a delectable bite and tossed in a mixture of vinegar and chilli sauce. Unfortunately I didn't find the vinegar they used as fragrant as the one at crawford road. Same goes to the pork balls which lack flavour.

While I didn't like the vinegar and pork balls, I have to say the wanton stuffed with marinated pork is really good. I can taste the robust flavour of dried sole fish in the wanton stuffing. The wanton skin is also thin and smooth.

The bowl of Bak Chor Mee is decent but pale in comparison to Hill Street Tai Wah Pork Noodle. Nevertheless, congratulation to Tai Wah Pork Noodle for being one of the awardees in the Michelin Bib Gourmand Singapore 2018.

Go-Ang Kaomunkai Pratunam @ NEX Shopping Mall - Bangkok Michelin Bib Gourmand Chicken Rice Opens In Singapore

Some said we learn cultural similarity and diversity through food and this sentiment headlined my experience with Thailand’s Go-Ang Kaomunkai Pratunam, which has recently opened its door at NEX Shopping Mall. Established in 1960 as a food stall specialising in Hainanese chicken rice in the Pratunam district of Bangkok and awarded a Michelin Bib Gourmand award in 2018. This Thai Hainanese chicken rice may or may not make it to your top list but it will change your perception of how this iconic dish can be consumed.

Go Ang Chicken Rice comes with either Thigh ($5.50) or Breast ($4.50) meat. As expected, the thigh meat is naturally more tender than the breast meat, and the layer of plump skin was certainly not those to be chucked at one side. The grainy and firm rice worked well to bring out its pleasing texture. That said, the breast meat fared well too if you like firmer meat. The rice, however, didn't manage to captivate my taste buds. I feel it lacked a certain fragrance and aromatics, which make the chicken rice itself addictive.

But ultimately, what gives this Go Ang Chicken Rice its unique identity is the chilli sauce that comes with it. Based with fermented chilli, fermented soy beans, coarsely chopped ginger, this piquant sauce is a tapestry of Thais' flavours in another perspective.

Omelette 3.5/5

Like what they always say "same same but different", this goes the same for their Omelette. Its accompanying sauce again, has all the elements to whet your appetite. Chye Pok version ($6.50) is available as well.

Braised pork 3.5/5

In Bangkok, the locals not only love their chicken rice but also their braised pork and surprisingly soups too. The Bitter Melon & Pork Rib Soup ($6.50) wowed us with its tender pork ribs and the depth of flavour. As for the Signature Braised Pork ($8/$12), considered that lean meat is used, its fork tender meat was impressed. I like the braising sauce too, which was relatively much lighter compared to our version but packed with flavours. Love it with the omelette's dip sauce!

Steamed Sea Bass 4.5/5

Among all the dishes, I enjoyed the Steamed Sea Bass with Chilli, Lime & Garlic the most. I had this dish a couple of times but theirs by far is the most memorable. Judging by the what was left on the plate, it just showed how tasty this dish was. We were fighting for the last drop of the lemony and spicy gravy.

Basil Chicken with Kai Lan 3.8/5

To ensure the authenticity and quality of the cuisine, all kitchen staff were trained by Go-Ang founder Mr. Sombat Pruekpaiboon at the original restaurant in Bangkok. Hence, even simple dishes like Stir Fried Basil Chicken with Kai Lan seemed to exude a taste that was much elevated than what are available elsewhere.

For desserts, we tried Homemade Red Ruby with Coconut Ice Cream ($5.00) and Steamed Tapioca with Coconut Cream ($4.50). Homemade red ruby is a rare gem these days and these gems can also be found in their Thai Chendol ($5), which I highly recommend you to order it over your usual Thai Milk Tea. The strands of chendols were soft with a bite and so yummy to chew on when I seeped them with the milky concoction. Nothing was overly sweet, except for the red ruby but these are the gems that make them so delicious for the dessert. I like the steamed tapioca too, which was warm and comforting to end a meal.

Go-Ang Chicken Rice may not replace that sense of comfort and familiarity given by your favourite plate of chicken rice but it sure stirs up some excitement when you need it.

Michelin Bib Gourmand Singapore 2018 - 50 Restaurants and Hawkers. Who Is In and Who Is Out?

Michelin has released its Bib Gourmand Singapore 2018 awardees. A total of 50 restaurants and hawkers made it into this year's list. There are a total of 17 new entrants. Unagiya Ichinoji by Miyagawa Honten @ Robertson Quay - Renowned 125-year-old Unagi Speciality Restaurant Opens In Singapore

Miyagawa Honten, one of Tokyo’s most well-known unagi restaurants with 125 years of experience under its belt, has opened its first overseas outpost in Singapore - Unagiya Ichinoji. Located at Robertson Quay, this is the first time we have an original unagi speciality restaurant that is hailed from Japan. Here in Singapore, we have the privilege of being able to enjoy 2 other styles of unagi other than the traditional Miyagawa-style Hitsumabushi, which are the Yanagawa-style Seiro Mushi and Osaka-style Mamushi Donburi.

Osaka-style Mamushi Donburi 3.5/5

As most are already familiar with the Hitsumabushi, I shall introduce the style that i find most interesting - Osaka-style Mamushi Donburi with Chawanmushi ($23.80). There are a few additional elements to this style, making it more engaging than the rest. Just imagine mixing the creamy onsen egg and umami packed mentaiko into the pearly Japanese rice, which is already flavourful with the special in-house tare. There's also a small portion of grated Japanese yam served at the side. Its mushy texture may not be enticing to some but I like it.  It brought back good memories of traditional dishes that I had had in Japan and rarely available.

Seiro Mushi 3.5/5

If you find the previous too rich for your liking, Seiro Mushi with Chawanmushi ($24.80), a version from Yanagawa, Fukuoka has the least distraction, which allows you to enjoy your eel as it is.

At Unagiya Ichinoji, the eels are prepared using the same original method as Miyagawa outlets, which is first steamed then grilled. Whereas for Yanagawa, it is done the other way round. The slab of unagi is first charcoal grilled, then steamed in a bamboo steamer together with kinshi egg and Hokkaido rice. The sweet sauce is mixed in for five minutes before serving, so as to allow one to enjoy the original flavours of the eels. There is certainly a sense of nostalgia emoted by the bamboo steamer, instilling a different experience from that of Mamushi Donburi.

Hitsumabushi (S) 3.8/5

I'm sure Hitsumabushi way is not new to many, some of you might have come across first hand in Man Man or Uya. Basically, it's a Nagoya’s style of enjoying freshwater eel by consuming the steamed-then-grilled eel in three different ways. First, divide the bowl into four portions. Enjoy the first portion on its own to savour the eel’s depth of flavour. Then, for the second portion, add nori (seaweed), wasabi and green onion to the Hokkaido rice and eel. For the third portion, add the clear dashi to the above mentioned mix. The final portion is to be enjoyed in your favourite way. Available in various portions, from $19.80 small portion to $77.80 extra large portion.

All the eels are marinated with Sansho and Kuro Shichimi (seven black spices) specially imported from Kyoto. At the table, ground sansho and kuro shichimi are available as condiments and I do highly recommend sprinkling some of them onto your unagi. The peppery aroma and lively flavours come in layers with a tinge of heat. I find that very appetising when mix with the clear dashi.

The special in-house tare (sweet basting sauce) glazed on your unagi is made with a recipe that spans 4 generations. Operating 20 outlets in Japan alone and having its outlet in Meguro-ku, Tokyo awarded Bib Gourmand in MICHELIN Guide Tokyo 2018, Unagiya Ichinoji is yet another significant milestone for Miyagawa.
