Kwee Zeen @ Sofitel Singapore Sentosa Resort - Limited-Time Hawker Buffet On Magnifique Hawker Nights

Sofitel Singapore Sentosa Resort & Spa has collaborated with some of the best and well-loved local hawkers and brands to create a one-stop destination for the best local food across Singapore. In celebration of National Day, the Hawker buffet ($74++/pax) runs from 5 to 9 August 2022, featuring free-flow food from 15 hawkers, including:

2) Jian Bo Shui Kueh
3) Legendary Bak Kut Teh
4) Janggut Laksa
5) Lee Wee & Brothers
6) Hock Lian Huat
7) Nam Kee Chicken Rice
8) Li Xin Teochew Fishball Noodles
9) Kim Choo Kueh Chang
10) Old Amoy Chendol
11) Hong Seng Curry Rice
12) Mr Popiah
13) Rochor Original Beancurd
14) Du Du Cooked Food
15) Old Original Serangoon Hokkien Mee

While the Taste of Singapore will end on 9 August 2022, the stalls included in the hotel's Magnifique Hawker Nights Buffet line-up are still operating every Friday and Saturday from 12 August.

Each hawker stall has its own booth, and dishes are assembled on-site by the hotel's chefs with ingredients catered from respective hawker stalls. The booths span from the indoors to the outdoor area of Kwee Zeen restaurant.

We kickstart the buffet with a piping hot bowl of goodness from Legendary Bak kut Teh. The pork ribs are soft and fork tender, stewed in a robust broth of fragrant herbs and spices.

Next, we moved on to the Traditional Hainanese Curry Rice from Hong Seng Curry Rice. Messy but delicious, we piled the plate with the quintessential Pork Chop, Boneless Curry Chicken, Pork Belly and Cabbage before topping off everything with thick and luscious curry sauce.

One of my favourites is the laksa from Janggut Laksa. The trademark of the Original Katong Laksa was that the noodles were cut short and eaten with a spoon for the sake of convenience. As for the laksa broth, it was comforting, flavourful and light, even though it is not too spicy.

The Lor Mee from Ah Ma Lor Mee was also satisfying, with a flavourful and viscous gravy packed with a good amount of lor bak, white fish flakes, egg and fried meatball.

We had a bowl of dry meepok noodles from Li Xin Teochew Fishball Noodles. It is a comforting bowl of noodles with a springy texture. You can opt for the soup version as well.

The Nasi Lemak from Lee Wee & Brothers had all the quintessential ingredients fried chicken wings, otah, roasted peanuts, cucumber slices, ikan bilis and sambal chilli.

For beverages, we had the soya bean milk from Rochor Original Beancurd. It was cold, refreshing, and as good as I remembered it to be. While you are there, grab some of their traditional beancurd as well.

The buffet also includes other local delights such as the satay and chilli crab with mantou.

Dive into favourites such as the Sambal Squid, Braised Pork Knuckle, and Chef Nelson's rendition of the tender beef cheek rendang.

There is also small seafood on ice selection, including prawns, clams, black, gong gong, mussels, scallops, and yabby.

End your meal on a sweet note with a wide array of traditional Nyonya kuehs and desserts, such as the Kueh Lapis, Rainbow kueh and ondeh ondeh.

Not to be missed is the chendol from Old Amoy Chendol, which comes with shaved ice, red beans, pandan jelly, coconut milk and gula melaka. As it was a DIY station, we topped off our bowl with extra coconut milk, which has a strong taste but is not too overpowering, and gula melaka, which was fragrant and rich.

While $74++ may be pretty steep price to pay for free-flow hawker food, it is a great solution to sample the best of Singapore's hawker culture in one place without having the hassle of travelling to the outlets one by one. Moreover, with the hotel's aim to give featured hawkers a "platform to earn a sustained income with a long-term partnership", which allowed the hawker buffet to run from 12 August to the end of the year, we absolutely love the cause and support for our local hawker heroes!

Bedrock Origin @ Oasis Resort Sentosa - All New Beef & Reef Series

Bedrock Origin at Oasis Resort Sentosa, which opened in September 2021, introduces an all-new Beef & Reef series. It is a quarterly showcase through the year that celebrates a bounty of seafood and premium meats prepared with primal culinary techniques such as curing, dry-ageing and grilling over an applewood fire.

The first edition, available until 31 March 2022, features an array of delectable seafood dishes and steak with a 6-Course Dinner Tasting Menu ($188** per person) or a 6-Course Dinner Tasting Menu with Caviar ($288** per person). In addition, diners can enhance the dining experience with an exquisite wine pairing for an additional $88 per person.

Kingfish Tartare, Salmon Pastrami Toast, King Crab Roll 4.2/5

The 6-Course Dinner Tasting Menu starts with a medley of petite bites comprising Kingfish Tartare, Salmon Pastrami Toast, and King Crab Roll. Among the three starters, my favourite is the king crab roll. It comes with sweet Japanese king crab meat in a tartare sauce is enrobed in thinly sliced green apples and crowned with mountain caviar.

Wine Pairing: A perfect accompaniment to the trio is the Cullen Amber, Sauvignon Blanc Semillon from Australia with beautiful tropical and citrusy notes.

Truffle Corn Custard 4/5

The second course is the Truffle Corn Custard. It is a sweet egg custard coming from the freshly juiced corn, complemented with brown butter red prawns, a drizzle of truffle oil, basil oil and tarragon leaves.

Wine Pairing: French Domaine Albert Mann, Riesling, flaunts notes of white flowers and citrus fruits amidst a zippy and mineral finish of delicious green apples and zesty limes.

Grilled Octopus Tentacles 4.2/5

Next is the Grilled Octopus Tentacles. The hearty dish features tender octopus tentacles that have been applewood-smoked and grilled. The hearty dish also comes with jamon iberico, fried cauliflower rice, and pickled radish on a bed of velvety cauliflower puree.

Wine Pairing: Terrazas Reserva, Malbec from Mendoza, revealing black fruit notes, soft tannins, and a smooth and oaky finish.

Aged Turbot 4.2/5

The Aged Turbot has been dry-aged in-house for three days giving it a firmer texture and concentration of flavours. It is elevated with a side of sweet and tart sun-dried cherry tomatoes, basil cress, and kombu compound butter.

Wine Pairing: Domaine Cazes, Alter, a blend of Syrah, Grenache, and Mourvèdre, with ripe fruit notes of plum and cherries.

Kyoto Tamba A5 Wagyu (100g) 4.5/5

The highlight has to be the Kyoto Tamba A5 Wagyu (100g), grilled over applewood fire and glazed with a red wine veal jus reduction. Top-quality piece of richly marbled beef that melted in the mouth.

Wine Pairing: Roberto Voerzio, Nebbiolo Di Sanfrancesco from Italy. It is an ideal match with its red fruit notes of cherry, raspberry, and strawberry.

Flourless Chocolate Cake 4/5

Rounding off the 6-course meal is the Flourless Chocolate Cake. The 85% dark chocolate cake is adorned with brandy-infused cherries and grated toasted whole hazelnuts,

Wine Pairing: Jean Leon 3055, Merlot from Spain, boasts toasty notes and a profile of smooth tannins and forward notes of cherries for an exceptional closure.

Paying homage to the Christmas traditions of old, Sofitel Singapore Sentosa Resort & Spa presents a full-fledged Christmas Town in this season of merry-making. Over at Kwee Zeen, guests can look forward to spectacular holiday buffet spreads. Besides the traditional holiday classic, guests can also look forward to an eclectic lineup of fresh seafood, international cuisines and a full dessert counter with quintessential panettone, chocolate fondue, log cake, stollen and much more.

The highlight of the Christmas Mega Safe Brunch at Kween Zeen has to be the Seafood of Ice and oyster counter. The Oyster counter has four different varieties, while the seafood of ice has a massive selection of crustaceans and shellfish. You can eat to your fill.

In every festive celebration, the festive roasts such as Turkey, Beef Ribs, Tomahawk, Sausages and Ham are not to be missed. Best to have them together with sides like roasted potatoes and vegetables.

The huge paella pan brimming with seafood and the various ham on the buffet spread caught my eyes. It brings back memories of my Spanish trips.

Diners can also look forward to other Asian and Local cuisines, such as the popular Japanese section for sashimi and sushi. My personal favourite is the noodle station where I can have the local laksa. I even asked the staff to add a few pieces of roasted duck from the Chinese's section. There is even an Indian section where you can indulgent in an array of aromatic dishes, curry and naan.

What is Christmas without the sweet treats? So do save your stomach to a full dessert counter with quintessential panettone, chocolate fondue, log cakes, stollen and much more.

SKIRT @ W Singapore - More Than Just A Steakhouse Here

SKIRT at W Singapore is not known only as a steakhouse for its prime cuts of meat but it now offers an expanded menu that includes European dishes with a touch of Asian influences, under the new leadership of Head Chef, Justin Dingle Garciyya. It is moving away from its steakhouse label, with more variety on the menu.

Our dinner started with some warm house-baked Focaccia that is served with duck fat butter and smoked salt. I would have stuffed myself with the fluffy bread if not for the reason that I am saving my stomach for the rest of the new menu.

Sir Lankan Crab & Caviar 4/5

The Sri Lankan Crab & Caviar ($32) comes with luxe shreds of crab meat crowned with caviar. This is served in a creamy shellfish bisque. The bisque has that familiar curry flavour probably from the addition of lemongrass in it.

Truffled Beef Tartare 4.2/5

Having the beef tartare alone can be a bit surfeit for some. Hence I like the idea of the rice crispies that is paired with the Truffled Beef Tartare ($28). It gives the dish an enjoyable texture, so that one will not feel heavy eating it.

Veal Sweetbread & Foie Gras 4.2/5

I didn't thought I would enjoy the Veal Sweetbread & Foie Gras ($38) with mushroom which has been cooked in a red wine jus but I just could not help going back for more. Besides the fatty foie gras, the red wine jus definitely plays a part in elevating the taste of the the veal sweetbread and mushroom.

These Bone Marrow ($45) is a two-in-one dish with plump escargot inside the bone marrow, oven roasted with cafe de skirt butter.

A visit to Skirt is not complete without trying the steak. We had the Cape Grim Sirloin that is grilled to medium rare and dressed in sun choke foam. The beautiful pink piece of meat is tender and juicy, while the sauce did not steal the limelight from the beef, instead complementing it.

You can also order a number of sides such as the Brocollini, Beets & Blunts, Lobster Mac & Cheese and Pommes Anna to go with the steak. I like the pickled roots from the beets & blunts which helps to cut the richness.

I would recommend going for the Lobster Mac & Cheese which is a luxurious upgrade from the classic with pieces of lobster meat. The Pommes Anna with thin layers of potato slices in melted butter, will get you savouring for more.

I would strongly recommend you to save a space for the Banana Pizza ($18). The combination of the sweetness of the banana and nutty caramelized pistachios, topped with a scoop of vanilla bean ice cream gives an enjoyable contrast that will delight the sweet tooth.
