Ku De Ta @ Marina Bay Sands

In a blink of an eye, the towering and iconic Marina Bay Sands has been around for 3 years. At the top of the building at the Sky Park on the 57th floor is where Ku De Ta is located. Celebrating its third anniversary this year, the restaurant also welcomes aboard new Executive Chef Frederic Faucheux who brings his wealth of experience from his time at the award winning Nobu restaurant in Cape Town.

I visited Ku De Ta on a weekend to enjoy their Weekend Brunch ($88) from 11am to 330pm which includes free flow of juices, teas, smoothies, milkshakes and soft drinks. At Ku De Ta, you can have the best from both world. You can enjoy the food at the buffet line as well as unlimited order from the ala carte menu. One may also top up a bit to enjoy the Cocktail Brunch ($148) or Champagne Brunch ($198). The cocktail brunch comes with free flow of Ku De Ta cocktails, sangria and draught beers while the champagne brunch includes Louis Roederer Brut Premier, selection of white, red and rose wines.

Stepping into the restaurant, patron is welcome by the brightly lighted restaurant using the natural lighting from floor to ceiling windows around the restaurant. This also allows patron to sit back, dine and enjoy the beautiful panoramic view of Singapore. A eclectic buffet spread of appertiser, starter and dessert awaits to whet your appetite while the kitchen prepares you ala carte dishes.

Crab Benedict 4.5/5

From the ala carte menu, I tried a number of items on the extensive selection. Starting off the brunch with Crab Benedict of a different. Topped with an oozing low temperature egg and chilli hollandaise sauce, the crab cake is beautiful spiced with urry flavour accompanied with mizuna salad.

Classic Benedict 4/5

Love to start my day with eggs and so I could helping having the Classic Benedict that comes with toasted English muffins, low temperature eggs, honey baked ham and hollandaise sauce. Classic it was but hearty to start my day.

Nicoise Salad 4/5

Nicoise Salad is a dish popularized by The French Chef, Julia Child. The beautiful garden of greens comes with delectable seared tuna loin, marinated tomato, french beans, roasted baby gem lettuce, confit potato, black olives seasoned anchovies.

Steak and Eggs 4/5

For something filling, the Steak and Eggs probably will satisfy the hungry stomach. Cooked beautifully is the 125gram grass fed sirloin that comes with thyme flavoured rosti potato and scrambled eggs.

Quarter Dozen Jet Fresh Oysters on Ice 4.2/5

I usually don't take oyster early in the day as I am worry that my stomach has not warmed up to the freshness. However I just could not resist having the Quarter Dozen Jet Fresh Oysters on Ice. The freshness of the oysters was further enhanced by topping of ikura, lemon emulsion, cucumber jello and micro herbs.

Arrabbiata 4.5/5

Our host raved about the pasta at Ku De Ta and I just need to confirm it with my own palate. The good thing about the ala carte dishes come in a smaller tasting like portion which means I can basically taste every item on the huge ala carte menu. The Arrabbiata was cooked perfectly al dente. The penne pasta is tossed in a spicy tomato sauce, pitted olives and herb scented oil with all the flavours working together in harmony.

Laksa 4/5

To cater for the tourist palate wanting to sample the local flavours, the kitchen at Ku De Ta has created the Laksa linguine with laksa essence and tiger prawn. It was an enjoyable dish with fresh tiger prawn. The flavours were spot on but nothing close to the lemak laksa our local palate is more familiar with.

Carbonara 4.2/5

I was singing in joy when the Carbonara is served with a poached egg yolk. The flavours of the pancetta lardons, white wine confit shallot and garlic, parmesan cheese worked harmoniously with the ala dente linguine pasta. I concurred the pasta at Ku De Ta is a must try. I even made the remark that it is better than the so called Italian Kitchen newly opened at Vivocity.

Hong Kong Style Egg Noodle 4.2/5

Mentioned earlier Ku De Ta has dishes on their menu to cater for the foreigners who are interested to try Asian cusine. Another such dish on the menu is the Hong Kong Style Egg Noodle with Chicken Char Siew and wok fried capsicum. I was impressed the kitchen's flavourful interpretation with springy noodles and tender chicken char siew.

Strawberry Yogurt Pot 4.2/5

Moving on to dessert, I discovered a pot of treasure in the Strawberry Yogurt Pot. The blend of Greek yogurt, fresh strawberries, honey and vanilla worked beautifully teasing my palate to go for more.

Amercian Style Pancakes 3.5/5

The classic Amercian Style Pancake with blueberry, caramelized almond and white chocolate cream was thick, buttery and fluffy.

Focaccia French Toast 3/5

The Focaccia French Toast with the sour cherry compote and vanilla whipped cream was pretty good. I enjoyed having the eggy bread with the light and airy vanilla whipped cream lending a bit of sweetness to the savoury dish.

Cake of the day - Strawberry Fruit Cake 4/5

The cake of the day was the Strawberry Fruit Cake. Every weekend there will be a different flavour made with the freshest ingredients. The cake was very light and moist. I also like the fact that it is not too sweet and creamy.

Inspired Waffle 4/5

Inspired Waffle is another item on the menu that showcases the Chef's inspiration from the day's ingredients. The waffles has crispy on the outside and fluff inside. The way that a lot of Singaporean loves it. Sandwiched with a delish raspberry cream and paired with maple syrup and bacon, the inspired waffle really made by day.

Overall I enjoyed the dining experience at Ku De Ta. Price can be on the high side but it comes with a magnificent view of Singapore on top of Marina Bay Sands. Food is excellent and of the highest quality which you will not feel short changed. Furthermore, you get to enjoy the buffet brunch with unlimited ala carte items cooked to order as well as the wide selection of appertiser, starter and dessert at the buffet line. I think I will plan a staycation at MBS soon and dine at Ku De Ta.
